  1. I've been getting mildly sick and I don't know why. For a bit I thought maybe it was dairy so I switched to non dairy substitutes. I still got sick. The few times I've felt really sick was when I used Xanthan Gum. I really don't know if that could be it. Not to be gross, but I've been getting some bad issues, and this is distressing. It's the only thing...
  2. Before I took gluten out of my diet I couldn't digest raw veggies at all. I'd get really sick just from lettuce. I was so scared to eat anything at one point because everything was making me sick. After I took out gluten I eased in cooked veggies (about a month ago), and the only thing raw I eat right now is lettuce. I was so happy that I could tolerate...
  3. My GI told me that the bloodtests are wrong 30% of the time. I've had negative test results, but I'm still gluten intolerant. I know because the diet works for me. After all your tests are done and even if you show to be negative, if a gluten free diet works for you, I say keep with it.
  4. I miss it, but I don't cheat. Mainly because I don't want to deal with the physical ramifications of eating (like getting sick to my stomach). That's totally not worth it lol. I am sure it would be more tempting for someone with gluten intolerance who doesn't show any outward symptoms really. I do think about gluten foods sometimes, though. I don't think...
  5. The only time I've had (so far) a reaction at home from cc was with an older skillet that I no longer use except if I'm preparing something for my kids. I have my own dedicated one. My other pots are stainless steel. Other than that we share the same dishes, and I wash them all in the dishwasher together. (It's just my 2 kids and I). I do make sure the...
  6. I just wanted to add that yesterday I took a chance and tried a different McDonald's than the one where I felt like I kept getting glutening from the fries and I had no reaction whatsoever. I think for me it's just this one particular McDonald's. I wonder if they're not contaminating me. I swear there was this one day where they looked kind of dark and...
  7. Well I can't prove that I have a disablity because I haven't been diagnosed with celiac just gluten intolerance. I don't want to take it that far anyway. Even if we had another microwave that I could use I don't really trust my coworkers to not use it. There were a lot of good suggestions in the topic so thanks everyone
  8. Well I'm no expert and these folks know a lot more than I do. I've only started this whole gluten free thing for a month now. I doubt my villi were very damaged honestly since they couldn't find much though I had mucosal changes to my duodenum. The Dr. even told me it was possible they caught it at the beginning or maybe that I am just gluten intolerant...
  9. I've had bad experiences too. I didn't really like the texture of the finished product. I see that a lot of people recommend Tinkyada, but I bought De Boles at Kroger, and it just didn't taste very good I hope you have better luck. The advice given so far sounds pretty good.
  10. I tried out the gluten-free diet just like you then back to gluten, but I got so sick that I turned right around and went back off of gluten thinking that if I had enough damage then it would still show two weeks later at my endoscopy. Plus I was so sick I could barely go to work. Well all of my biopsies were negative except one that was iffy in their...
  11. Well I'd be lying if I say I haven't been tempted or if I don't still drool over things. I don't cheat, though. Mainly because I get a very physical reaction almost immediately and it's not worth it. Lately I've been trying to find good tasting alternatives. I have been reading Gluten Free Girl's blog and Karina's Kitchen for yummy recipes. Hang...
  12. That's a great idea
  13. lol the skull and crossbones is a great idea. We also had people in the past stealing lunches. If someone steals my carefully prepared gluten-free lunch I may well just freak out lol
  14. That is how mine goes too. I can't drink milk or eat icecream, but I am ok with butter or sour cream. I found this on a site about lactose intolerance: LACTOSE CONTENT OF COMMON DAIRY FOODS (The amounts shown for lactose vary because ingredients in products can vary, affecting the lactose content.) PRODUCT ...
  15. Ok a little backstory: I work in an area with a very small breakroom that has 1 microwave, 1 fridge, and 1 table for 3 small depts to share (about 15 or so people coming and going on my workshift at various break times). That microwave is filthy and covered with spagetti sauce and all sorts of other disgusting things. I simply cannot bring myself to use...
  16. It's different for everyone like others have said. Since I went on the gluten-free diet about a month ago I've accidentally glutened myself a few times. I react within 15 min, sometimes sooner, but I don't get as sick as I used to if I ate whole pieces of bread/crackers/etc. Thankfully it's much more mild for me now, but I still get the gas/bloating/loud...
  17. That's why I want to know too. I guess I'm afraid of having the beginning stages of celiac and if I reintroduce gluten thinking that I can because I think it's just an intolerance. I may be asymptomatic at that time, but really doing dmg inside. Also before my blood test I was barely eating too. I was pretty much scraping by on crackers and a few other...
  18. Well I'm pretty limited to where I can go within my insurance plan. Thank you for your replies. My GI Dr. did ask me about my diet and if I found it too restrictive. I said sometimes, but not so much since I don't eat a lot of packaged stuff anyway. I told him I mainly shopped the perimeter of the store and that I went to whole foods for some of the...
  19. I had my post-endoscopy appt today and I was told that all my biopsies were negative except one that took longer to come back and it was iffy. He didn't use that word exactly, but I mean I guess I am disappointed. I do believe I have Celiac Disease. I had every classic symptom: chronic D, stomach pains, gas, bloating, food coma after eating gluten, exhaustion...
  20. I'm O+.
