I am kind of glad I didn't get an official diagnosis mainly because insurance can't turn me down if there's nothing stating that I have Celiac Disease in writing. I think the only benefit is if you are able to get support from an official diagnosis. I think in some countries they give financial aid. -

I went through withdrawal from gluten shortly after I cut it out my diet. I craved it. I dreamt about it. I got headaches and dizzy spells. It eventually let up. Try not to give in. -

I freeze brownies and cupcakes in single sandwich bags and then put them in 1 big ziplock bag and take out and thaw whenever I want one. -

If I were you I'd probably try to see a different GI. My Dr. told me that 30% of patients with bloodtest tested negative though they still had celiac disease. -
So far I've only made brownies and pancakes, but my kids loved both. I know it does have some buttermilk in it and also almond flour.

I live in Lexington I've only been gluten free since May, though, and don't have an official celiac diagnosis, but I am gluten intolerant. I don't have much experience eating out, though, and the places you mentioned in this topic so far are the only places I know of that have gluten free menus around here.

The day of my endoscopy my GI Dr. got on me about why I waited so long to have it done. It had been three months since my appt. I looked at him and said, "I took the first appt. your office gave me." He got red, apologized for "forgetting" about me and walked out. I never saw him again until my follow up.

I replaced my toothbrush and made sure my toothpaste was safe, checked my lotions, etc. I made sure I had at least 1 saucepan and 1 skillet to start with that were purely for gluten free. I have my own plastic spoons and my own bread/baking pans and cutting board. I never owned a toaster so I didn't have to replace that, but you may have to. Just don... -

I buy their milk too. It's really good, but it has a bit of a "nutty" taste, but it's so creamy and I love it. -

I had an eating disorder (anorexia) up until I became pregnant with my first child nine years ago. Coincidentally it was that pregnancy that I think triggered my whole gluten intolerance problem that I have. I gained a lot of weight and I think it was pretty traumatic on my body which had been struggling with nutrients. -

Thanks for the suggestions. I will go to whole foods and look up the dairy free butter. That's mainly the one thing I feel like I can't live without, but if there's a good alternative I'll be fine. -

I react to dairy, that's all I know. It's an extremely violent intestinal reaction too which is terrible that takes a few days to get over. It's been going on for a couple years now, but lately it has gotten worse or maybe I just think it's worse because I'm no longer reacting to other things now that they're out of my diet. This might sound crazy...

I've heard that people can still react to gluten free oats. I really want to make granola. I've missed it so much and these are kind of pricey in my area (8-9$ a bag) so I don't want to waste them. I buy Rumford baking powder or Clabber Girl. They state gluten free on the container. -
It's pretty good. I like the chicken bol. The cost is around 5.50-6.00 I think.

It does get expensive. I bought a whole bunch when I first started, determined to make myself something/anything. It was a lot of trial and error really with many products and recipes so the cost just added up. Xanthan Gum is 10.00 for this little dinky bag, but the good thing is it goes far. I agree to call the Dr. asap and tell him/her what you're going through. Even after going back on gluten there's no guarantee that your biopsy will be positive unfortunately even if you do have Celiac. -

lol oh man I couldn't stop laughing out loud while reading that because it's all true. I wish I had known what to really expect from that nasty jug before I went through it all. I think they only give you a half hour to recoup maybe and then they send you home. I don't remember getting dressed or anything so I don't think you'd be ok with driving home. I was just so groggy. I went home and pretty much went to sleep. I had both tests done on the same day.
