I am a Celiac and have been gluten-free since mid-February 2003. Prior to my diagnosis, I suffered from a whole host of ailments and both my husband and I believe that had I not been diagnosed, I would have died within a few years. I was a sick puppy!

I believe that I was exhibiting symptoms back in childhood but it took my pregnancy 17 years ago to push me into full-blown celiac disease. I was ill for 11 years before diagnosis - that's a long time when you're slowly slipping downward.

When I first was diagnosed, I was thrilled. Finally! A reason for the dozens of things wrong w/me. It took a few months before I realized just how long "gluten-free for life" would be. I wasn't terribly impressed with the gluten-free foods I could find (when I was able to find them) and a long life bereft of anything even remotely satisfying and yummy stretched out before me.

Happily, I discovered that I'm quite a good gluten-free baker and after several years of trial and error, I hit on the perfect rice flour blend and started selling the mixes that I was using for my family (I'm the only celiac amongst us).

That's me in a nutshell! I'm in the process of moving from the rented commercial kitchen I'm currently using to my own facility and will be offering ready-to-eat baked goods like cookies and cupcakes via my website, http://glutenada.com

In addition, I'm starting out the new year with nearly 6 new mixes to add and am going to try to add a minimum of 1-2 mixes per month to the lineup. There are so many great things that a gluten-free person can make - it doesn't *have* to be gritty, flat, heavy, and unappealing. My own mixes are so good I regularly feed friends and family and things are gobbled up :)

  3. The Honey Kix made me pretty sick. Bloating, terrible upset stomach, and other intestinal issues. That was after 1 bowl - I won't be eating them again. Strawberry Rice Chex made me slightly nauseous so I think I'll be staying clear of that as well. I'll be sticking with the designated gluten-free cereals... Sorry it didn't agree with you either
  4. I've not had this problem with our son - he always ate what was put before him. But I go through a food-aversion cycle a few times each year. The last one I had lasted 3+ months. Nothing sounded good and I ended up just eating whatever so I wouldn't pass out. Not one solitary food in the entire world appeal to me during these times. And I end up nearly...
  5. We're a bit behind in our town here. I was only able to find the Honey Kix - the others are still old packaging/old ingredients. So I got a box of my usual Rice Chex and those Honey Kix. They made me horribly ill. One small bowl and I'm done with them. Not sure if it was cross-contamination or what but I spent the remainder of the day running to the bathroom...
  6. We eat eggs/bacon/potatoes in one form or another every morning. I have a problem with most grains so cereal is out. Typically it's scrambled eggs, slices of bacon, and some breakfast potatoes.   10. I am the one with the celiac disease, but my entire house is gluten-free (husband and 16 yo son). When the diagnosis came in, hubby said that we were not going to monkey around with it and was the main proponent of removing everything w/gluten from our home.   12. Being a full-blood Norwegian, I grew up in a family that was always making Norwegian favorites. Klub, Krumkake, Julekake, Lefse.   14. Unfortunately, I cannot have onions, garlic, peppers or beans or tomatoes. These cause a variety of issues from oral allergies to an inability to be able to digest. Tomatoes just cause me a whole host of problems :/ Because of this, I can eat very few soups. I'm also allergic to shellfish so clam chowder is out. Last night I was trying to find...
