  1. yup-i love to experiment with my limited ingredients, being gluten/casein/dairy intolerant. i made yummy pancakes today without any eggs, gums, or gelatin! i had no idea how they'd turn out, but they are soooooooooo delish. i mixed Gluten free flour (half cup) baking powder (1 1/2 tsp) splenda soy milk (eyeballed it) peanut butter (1...
  2. HA! adding gluten back into my diet....that's funny! well, perhaps i'll just cancel my appointment if it's likely all tests would be negative. i'm 99.9% sure i'm gluten intolerant, so i really don't need a doctor to confirm or diagnose it. I guess I was also curious to see if it may be something besides gluten intolerance or something along with it...
  3. Stumped me on that one. I'm completely opposite. The only dairy I can tolerate is yogurt, because of the bacteria that "eats" the lactose. I hope you find some answers!
  4. I made an appointment with a GI doctor and will be going in April. Anyway, I've been gluten free since February, so any type of bloodwork done would show a negative result for Celiac, right? What are the other basic tests done to confirm/refute I have Celiac? endoscopy? colonoscopy? Is there anything else they should be looking for specifically...
  5. First of all I felt better IMMEDIATELY. The very first day I felt like a new woman. IBS-not really that, more like bloating and severe cramping: 1 day ACID REFLUX-N/A SLEEP PROBLEMS:1 day ENERGY: on and off, but first day was very energetic HEADACHES: N/A MEMORY FOG: 1 day
  6. there doesn't seem to be any offending ingredients in it, but i want to make 100 % sure. I'm really craving it. So, can someone verify it's safe based on experience perhaps? thanks.
  7. what a shame! it's so easy to avoid an ingredient in the recipe that so many people could react to, and yet they keep it. that is the real kicker about so many products!
  8. Just yesterday I had rotisserie chicken from the local grocery store, and pretty sure that it's the culprit to my symptoms today. Could it have been the seasonings?
  9. I was born in Oconomowoc, too. Wisconsin is a great state, despite the extremes in weather!
  10. sounds great! one thing-i wouldn't suggest putting it on wax paper in the oven, the wax will melt! go with the parchment paper!
  11. wow, that store looks awesome! .....just wish it wasn't 60 miles away! guess i'll have to shop online. thanks for posting the link.
  12. I've heard and read conflicting things about when someone actually becomes gluten intolerant. Some say you are from birth, others say you develop it over the years. For me, I didn't start having noticeable symptoms until about 3 years ago. I am very in tune with my body and know when something is not right. I know that lactose intolerance is something...
  13. 33 years old. But, I've only had noticeable physical symptoms for 3. I just thought my symptoms were "normal" for me, like that's just how my body is.
  14. I've eaten the same thing for breakfast for the past 5 years.....oatmeal (gluten free) and peanut butter. I could eat it for all 3 meals, but that's not a very healthy idea!
  15. Do you take digestive enzymes? If so, what brand and type? How often do you take them and how well do they help?
  16. I had a major craving for chocolate cupcakes this weekend, so I decided to break down and make my own. I didn't have any Xanthan or Guar gum or any "egg replacer," and didn't want to buy such an expensive product on my meager budget. So, I used flavor less gelatin instead, as the egg replacer. It worked so well! I even made the frosting. I took...
  17. Here in Wisconsin there is a popular brand of coffee called "Berres Brothers" with lots of great flavors. I called them and they verified there is no gluten in their coffee. So, for anyone who enjoys Berres bros. coffee-no worries!
  18. A new company opened up in a warehouse a half mile from my house called "Oskri Organics." This is a big deal to me because this is a very small town, about 5,000 people, and finding anything gluten free is nearly miraculous. Anyway, I stopped in today and found some great things for GREAT prices! The bars remind me of Lara bars, but are about half...
  19. good idea about using chex cereal, too!
  20. just found the Bob's Red Mill oats at my local wal mart today in the new gluten free section!
  21. no prob! Open Original Shared Link
  22. I'm so sorry to hear about your GI distress. I went through a lot of that (without diarhhea) for many years. it's is a helpless feeling and I'm sorry. Have you had your gall bladder checked? Chronic cholecystitis (biliary colic) This is a long-term inflammation of the gall bladder and causes: sporadic pains in the middle of the upper abdomen, or...
  23. The only thing I've eaten out of the ordinary today is a Cruz brand corn tortilla, ingredients: ground corn, treated with lime, water, cellulose gum, propionic acid benzoic acid phosphoric acid dextrose guar gum amylase now i feel like crap-bloated, gassy, irritable, nauseous-basically like i did before i went gluten-free.
  24. Yes, these are gluten and casein free, but they are NOT dairy, oat, or peanut free. Mix the following in a pan and boil for a couple minutes-not too long 2 cups sugar 1/2 cup butter (or margarine) 1/2 cup milk (cow, soy, or rice) 3 Tb unsweetened cocoa powder Remove from heat and add 3 cups gluten-free oats 1/2 cup peanut butter 1 tsp vanlla MIX...
