Hi Miss Emily,
Can you get your meats from the slaughter house? I'm also from a small town in Michigan, on the Lake Huron side. I buy my meats at a fruit market that has a butcher counter but if I didn't have that trusted resource I would call around and find a slaughter house. We have several small ones in our area. One in Standish and another in Pinconning but I'm sure you'll find something closer to your home.

I'm still not convinced that there is a difference between gluten intolerance and celiacs. If you notice your intolerance early enough to prevent damage to the villi you are not a celiac. But once off gluten the villi heal and you are still a celiac!
My problem with this whole thing is that my Aunt Susan died of intestinal cancer at age 39. She was a wonderful Aunt. She took us to the Detroit Zoo, Henry Ford Museum and to Disney movies. As a teen when my Mom was "totally stupid" I lived with my Aunt. She died when I was 19. She was not diagnosed as celiac.
My Mom has IBS, dairy and soy intolerance, and fibro. She insists that she does not have celiacs.
I do have celiacs. No test needed. The villi damage caused sudden dairy and soy intolerance, I have DH scars and the gluten challenge has been conclusive.
The list of friends, family, co-workers who have conditions that are indicative of gluten intolerance is forever long. They are sick and some like my Aunt are going to die far to early because of this failure to diagnose celiacs.
Sorry to go on and on. I just don't think it's wise to insist on the "golden standard" dog trophy diagnosis. That way of thinking is hurting people. Not eating gluten is harmless.

Brothers errrrrr! He's going to tease you about something, when biscuits become boring he'll choose something else. He's doing it to get everyone's attention. He'll grow out of it at about the same time he gets his first girlfriend or driver's license. Until then he's just gonna be a pain.
Maybe if you give him the biscuits .......... Thank him for getting those away from you so you're not tempted...... that would take all the fun out of it for him and he might feel important.

I also had to stop eating all processed foods even the ones labeled gluten free. Out of pure frustration I limited myself to
homemade chicken or beef broth (meat, sea salt, pepper, onion cooked in the slow cooker all day)
lemon juice concentrate
cherry juice concentrate
pure maple syrup (used to sweeten the juice)
eggs
bananas
Using this as my safe base food list, I started bringing in other foods one at a time. I tested each food twice. Brought it in, took it out, brought it in again. If I reacted the same way twice it was out. I'm still testing some foods but have a pretty long list of single ingredient foods I know are safe for me now. I haven't been glutened in awhile. My family is OK with the whole "more freshly cooked meats, fruits and veggies" thing. It's easier for them than "no gluten".
Also I was able to distinguish between gluten and other reactions like.....oily foods like potato chips make me gassy but it has nothing to do with celiacs. Corn slows down my motility but is not really part of my celiacs either. Even my dog doesn't do well with corn in his food. Two weeks after my last two glutenings I experienced pain in my left ankle and left wrist. That was celiacs. The off brand chili spice that made me sick ...... that was celiacs. Gas after eating homemade baked beans was not celiacs. It was just the beans!

Most of the stuff will start to improve within a couple of days. The muscles aches take longer for me. I was using tart cherry juice to help reduce the inflammation and for the other mild aspirin effects. I ran out. Couldn't get more. Didn't need it anymore anyhow. Still taking magnesium for cramps in my feet at night. Skipped it last night. Mild cramping last night. But thats an absorbsion issue. I think I read that that can take a yr or longer to improve.

I try really hard not to buy meat from anyone but the butcher. I like that the meats are locally raised and not processed with a million other animals from all over the world. No plastic wrap, no foam trays.

I didn't notice a reaction to the McCormicks spices we used to make taco seasoning. I had to buy individual spices because the packaged ones have milk in them.
Could you be reacting to the oils in the meal instead of the spices? Vegetable oil (soy) would do it to me.

It's somewhere between twenty minutes and two hours because I get a reaction on my tongue and in my left side.

Same answer. I'm celiac and hypoglycemic. Honestly, if cereal and rice milk were my only options I would just go hungry. The carbs would raise my sugar only to let it drop two hours latter making me hungry and sick. Repeating this process every two hours all day would make me fat and tired. Been there.
The smart thing to do is to eat a good protein source every 6 to 8 hours. Currently I'm eating two eggs at breakfast, peanut butter at lunch, meat with supper and coconut milk before bed. Slowly loosing those extra pounds and feeling pretty good.

It won't be - 60 days no gluten and then a doughnut.
You'll get sick when you were sure there was no gluten in your diet, you'll look back, read the label, look it up on the internet and find that others have had reations to the same item.
After this happens several times and you can't blame it on the flu or your Aunts potato salad, you'll realize you won't be needing that doughnut test.

Just wanted you to know that I'm also reading along and wishing you good health. I've only known about my celiacs since March and my reactions were so straight foreword that my dr. didn't even run any tests other than a food allergy panel. So I don't feel qualified to give you advise other than this...
I've done a little research on the foods I've been asked to give up. Mainly grains, dairy and soy. I found that all of these have long lists of reasons why they sould not be eaten by anyone, celiac or not. I discourage my family from eating these and refuse to feed them to my pets.
Please try an elimination diet and food journal as the other posters have suggested. Even if you never find the name of what is making you ill, good nutrition can't hurt.

I called the Rice Dream 800 number and asked about the soy lecithin in their frozen deserts. I was told that soy lecithin was safe for people with soy protein allergy. I have not been brave enough to test it out yet.
I was not aware when I made the call that there is some controversy over the process used to make Rice Dream and wether it is really gluten free. I have not had a gluten reaction from it but can understand the caution others are taking especially those that are making these very tough decisions for young children.
So having been reassured and then having the accuracy of other information from that source questioned made me unsure as to what to do. I really hate to just let it go because so many gluten free foods include it.
Like you, I would be interested in hearing from others with soy allergy who have tried soy lecithin.

I'm not brave enough to intentionally eat gluten or dairy.
I have been CC'd at least three times and poisoned by a co-worker who thinks I'm a hypocondriac once.
within minutes - my tounge feels scauled in a stright line across the center and my elbows itch
within an hour - my left side hurts like there's a medicine ball in there pressing on everything else, the pressure on my bladder makes me feel like I have to pee but can't
within 24 hours - my elbows are scratched open and the backs of my knees have blisters and burn like I put bleach on them (I did that once when I was young and stupid to get rid of poisin ivy)
for about a week - abdominal swelling, can't pass anything, not even gas without laxatives and suppositories, looks like I'm prego, gas pains under my rib cage. Tired, headachy, grouchy because I don't feel good. Oh, and my daughter says,"don't forget the cleared out the game store at the mall nasty gas!"
Yep, I will never, ever do that on purpose. It was humiliating

I've been dealing with candida on and off for years. I'm allergic to yeast (as in bread) and brewers yeast and vinegar. My last flare up was from the vinegar in ketchup. It's better now. I don't have to take anything for it. I just eliminate the source and drop my carbs to about 10 day for a couple days and it dies off until the next time I'm exposed.

Gluten free is all or nothing. Going gluten free before your testing will cause a negative result. The testing is unreliable anyway so the only way to know if gluten is a problem for you is to go 100% gluten free for a period of time(not sure how long) and then bring it back into your diet. If like the rest of us you get so sick you swear you will never do that to yourself again.....You have celiacs. Many of us didn't need to "bring it back in". We reacted so strongly to accidental glutenings we swore it off then.

Wow, lots of great advise! Did anyone suggest adding coconut milk to your diet? It's pretty safe and easy. I use it in place of butter in recipes or half it with water to use as milk. Much healthier than soy. It also has a good protein level and is easy to find in the ethnic foods section of any grocery store for about $2.00 a can.
Also read up on corn. It sounds like some of your problem foods contain a lot of corn.
The elimination diet is really easy and the safest way to figure this all out.

Why are you worried about fiber? Just curious because fiber was the answer I recieved when I asked about constipation. Fiber was not the problem. I get plenty of fiber. Adding more fiber made it worse. Getting the cc out and the potasium and magnesium in worked.

Find some legal foods that make you feel like you are getting away with something!
When I was a kid, my mom would sometimes look the other way when I fed my hotdog bun to the dog! so eating gluten free brats without bread feels good. Also because we had a large family and fruit was expensive we were only allowed one peice of fruit a day. Now I eat a whole bowl of it... two bananas a day if I want....enjoy life chocolate chips and marshmellows in my coffee! And there are alcoholic beverages that are gluten free. I haven't explored those yet but jello shots come to mind!

Interesting question! Although I agree with Ravenwoodglass in that you would not develop a reaction to something by removing it from your diet there is the question of wether you would lose your tolerance. People definetly build up a tolerance to alcohol and then lose that tolerance if abstinent for a period of time. We also develop a tolerance for the polutants in our environment but react to the polutants in environments we visit (Montazuma's revenge).
I read that in celiacs the inside of the small intestine can coat itself with a protective layer of mucus (sometimes causing a misdiagnosis of cystic fibrosis).
So, it seems very possible to me that a person who was asymtomatic could have unknowningly had a mucus buildup that went away while gluten free.

I've given up on the shared line items for now because I got glutened eating some walnuts that were labeled this way.

altho I'm constipated often, taking laxatives (rx'd by dr, but which don't work so well all the time) - that doesn't sound like celiac from what I'm reading.
Constipation is common in celiacs. Laxatives don't work for me. I use the diet, juices and magnesium supplements.
Can it really be something as seemingly simple as stress or a virus that can trigger this disease?
My first round of celiacs was just after my divorce. I went undiagnosed. I restricted my eating enough that I "got better" for a couple years. The second round started when my oldest son was jailed and diagnosed with bi-polar disorder.
Some things to consider: I have had eating disorder issues on and off for a long time (15+ yrs - binging, purging, restricting) but have not binged purged in yrs.
Many of us have developed weird eating habits while trying to adapt to our symptoms.

Pretzels and beer would make me really sick.
Does this sound like celiac? Could be.
Can you tell me about the testing and/or any other things you may know of that this may be (if not celiac?)
I'm not a fan of the tests. They are expensive and frequently wrong. The only way to know is to go gluten free and see if it helps. .

I just wanted to add that your dr. is wrong! After going gluten free, every celiac I have spoken with has told me that they reacted more strongly to smaller amounts of gluten than before it was taken from thier system. Before going gluten free I would react to a plate of pasta. Now I react to tiny amounts of gluten in the "natural flavor".
You could be doing as much damage with CC now as a sandwich did before going gluten free.
I know this is harsh but half measures aren't going to work.

I haven't had a problem with the varieties that are soy free like Ruffles.
