About Me

My name is Marissa Carter. I am the Kansas City Gluten-Free Food Examiner for Examiner.com. I also publish Gluten Free Product Reviews, articles and recipes.

I love to get to know other people in the gluten free community. It's really cool to see how people help each other out so much!

  1. I owe someone here an apology, I'm not sure who, but I hope they see this. I have apparently been breaking the rules. I thought I was just losing my mind and kept putting my link back in my signature. I was negligent about reading the rules, and received several warnings. I am sorry for not reading the rules as carefully as I should have. The message...
  2. Testing for Celiac in kids really becomes important when they enter the public school system. I eliminated the gluten from my daughter's diet when her symptoms grew to include horrible headaches (sometimes with memory loss). I didn't worry about a diagnoses, just that she felt better. Then, when registering her for school I found out that they will respect...
  3. I'm still pretty new here, and trying to pick up on the rules. What is the time limit for new members and PM's? I received an email telling me I had a message, then couldn't access it. I feel bad that someone will think I am ignoring them, do they get an error message too so they know it is nothing intentional?
  4. Cherie, The period of mourning associated with a new gluten free diet is totally expected. When I went gluten free I cried for days. It made me resentful to hear of other people going to parties and out to eat. It was horrible! I was afraid to eat anything, and lost a ton of weight because I lived on chicken breasts and veggies. My saving grace...
  5. The biggest surprise to me when I went gluten free was that I went through a 2 week "detox" period. I felt worse than ever and almost gave up. At the end of the 2 weeks, though, I was clear headed and felt better than I had in my life. Since then, I still have ups and downs. There are days where I'm sure I've been contaminated but can't figure out...
  6. That is interesting information...but a bit short sighted. It seems that there are a lot more factors that are not being considered.
  7. I feel your pain! Within two weeks of trying a gluten free diet, I realized there was no going back for me. What had started as an experiment became very real when I first "cheated" and got very sick. Apparently I'm one of those people with extreme symptoms. For awhile I got really depressed and bitter about what I saw as a forced lifestyle change....
  8. I'm new to the forum and I'm really glad to see this post! I've been gluten free since September and the fatigue has still not gone away. I was afraid it was just me.
