  1. For pasta, we've found a compromise with the Quinoa pasta but I do keep some shells around for easy mac & cheese. He's staying away from my baked goods entirely, which is okay with me. I've taken to freezing them in single serve portions to maintain freshness, etc. Guess it is working out. I'm feeling much better - over 3 months now gluten-free! Yea!...

  4. Risotto is also a wonderful way to change up rice! It is easier to make than you might think - check out recipes on foodnetwork - lots of Risotto variations are possible & I haven't found one that I didn't like yet.

  10. I had my first gluten dream last week - I was eating graham crackers! LOL! In my dream, at first I thought they were gluten-free and then realized that they tasted "normal" and then I was trying to throw them up - I thought it was funny that it took 2 months to dream about it.
  11. Try going back to the basics - for me, that would be organic chicken or beef broth with Glutino rice crackers. Maybe add a couple of eggs into the broth - if you tolerate eggs.
