ARCHIVED Gluten-free Foods Give Dh (not Celiac) Digestive Issues?Jana315 replied to Jana315's topic in Parents, Friends and Loved Ones of Celiacs For pasta, we've found a compromise with the Quinoa pasta but I do keep some shells around for easy mac & cheese. He's staying away from my baked goods entirely, which is okay with me. I've taken to freezing them in single serve portions to maintain freshness, etc. Guess it is working out. I'm feeling much better - over 3 months now gluten-free! Yea!...

ARCHIVED High Altitude Keep It Simple Stupid Bread RecipeJana315 replied to roxi's topic in Gluten-Free Recipes & Cooking Tips I'm at altitude but don't have a bread maker. Do you think I can do it with the same ingredients or would I need to change it up? I'm in need of an edible gluten-free bread in a bad, bad way!

I ran across a nice looking pita recipe but haven't tried it - Open Original Shared Link

Risotto is also a wonderful way to change up rice! It is easier to make than you might think - check out recipes on foodnetwork - lots of Risotto variations are possible & I haven't found one that I didn't like yet.

ARCHIVED Nightshade Free Recipes?Jana315 replied to GlutenGalAZ's topic in Gluten-Free Recipes & Cooking Tips Nightshade free is pretty challenging when it comes to my favorite classics...pizza & spaghetti! I second the option of using pesto - YUM! Also, you can use Alfredo as a sauce for your pizza. Rachel Ray carmelized some onions the other day for her white pizza - just added cheese on top of the onions. I made the beets/carrot home-made nomato sauce the...

ARCHIVED Accurate Testing?Jana315 replied to Mamaof5's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms Ravenwoodglass - How do you know about the marker that you have? I'm getting the results of my genetic test today, but on the phone Dr said it was negative - now I'm wondering about other genes involved. Jana

ARCHIVED My Brother Makes Fun Of Me By...!Jana315 replied to Gluten-free-for-me's topic in Parents, Friends and Loved Ones of Celiacs I'm really sorry that he's doing that and it certainly is unfair, but he's doing it to get a rise out of you & if he can't get the rise, he'll stop doing it. I'm sure it is hard, but just turn around and walk the other way, ie pretend you don't see him or just show him that his taunting isn't bothering you....maybe he will eventually stop and realize...

ARCHIVED "Super Sensitive" Celiacs.....Jana315 replied to jerseyangel's topic in Super Sensitive People I've seen several mentions here of legume sensitivities....well, would that explain why I had stomach cramps, D & vomiting for about an hour apprx. 2 hours after I ate an entire (oopps) can of black beans the other night?? I know that was a stupid thing to do, but I was hungry.... Jana

Wow! Sounds like you've had quite an ordeal. It is good to know that you're now pinning it down. How was your appt? My recommendation would be to have your Dr (or another Celiac knowledgeable Dr) order the Celiac blood panel and get a biopsy - given your history, it will be good to get a base-line on the damage in your intestine now so you can monitor your...

ARCHIVED Gluten DreamsJana315 replied to yogamommytrainer99's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I had my first gluten dream last week - I was eating graham crackers! LOL! In my dream, at first I thought they were gluten-free and then realized that they tasted "normal" and then I was trying to throw them up - I thought it was funny that it took 2 months to dream about it.

Try going back to the basics - for me, that would be organic chicken or beef broth with Glutino rice crackers. Maybe add a couple of eggs into the broth - if you tolerate eggs. I can have cheese too, so I'll have some cheese on those days & just try to keep it simple, like that and then add back other foods one at a time that you deem safe & see how...

Yes! Saturday. She has office hours - pretty cool 1st step, eh? She is the first & only Dr. so far that I've discussed Celiac/gluten intolerance with to date. I made the appointment with her to discuss family history and to ask her to order the genetic testing for me. I already had the Kimball Genetics kit, but I needed a Dr's recommendation for testing...

ARCHIVED Does Anyone Take Rainbow Light's Advanced Enzyme System?Jana315 replied to Jana315's topic in Gluten-Free Foods, Products, Shopping & Medications It may or may not be a mistake, but I've been taking them - seems to have really helped with more normal BM's... and I haven't had a gluten reaction to them. Perhaps the chemical is derived from barley (hard to say), but doesn't contain gluten. I'll keep taking them for a few more days to see if I react - I usually have very marked, noticeable reactions to...

ARCHIVED Does Anyone Take Rainbow Light's Advanced Enzyme System?Jana315 posted a topic in Gluten-Free Foods, Products, Shopping & Medications Spent Lord know how much on this supplement yesterday just to realize today that they contain Malt Diastase (which may or may not contain gluten?). I've done a lot of googling and can't get a conclusive answer. Does anyone here take them without a reaction? thanks! Jana

Babysteps - don't mean to hijack - but I was just exhausting myself looking for red/pink peppercorns that aren't in a mix...can't find any, so maybe powdered sumac will be easier to come by! YEA!!! I love Turkish foods, esp. the kebabs! thanks for the tip.

Karrin, If you do have an intolerance to nightshades, that would cut Lawry's and anything with paprika out of your diet...sad for me too! I react to the paprika that's in Lawry's & most pre-packaged gluten-free sausages & hotdogs. Just add it to the list - don't know about you, but my list is getting really long. I'm looking into the GAPS diet, but...

ARCHIVED How Long To Expose Child That Has Not Been ExposedJana315 replied to marmar's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I'm not a DR. but I'm gonna guess that antibody results often give false negatives in little ones because, basically, their immune system is very immature. For instance, if you speak to a seasoned allergist or Dr., they will tell you that babies less than 12 months of age, very, very rarely can have true allergies to any trigger - their bodies just don't...

Oh - this was a good & pretty darn fast dinner. Gluten-Free & very delicious. Raw Zucchini Salad (don't let the name scare you - the lemon juice marinates the squash & makes it delicsh) Chicken/Sausage Kebabs with lemon & bay leaves Lemon Sabayon with Fresh Wild Berries Carpaccio of Raw Zucchini Ingredients * 2 zucchini ...

ARCHIVED Please Help Me Decide Whether To Have Gene Test...Jana315 replied to glutenmommy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms Mother of Jibril - Where did you get your testing done & how much was it? I'm thinking of testing, but want to get the most for my money. Thanks, Jana

ARCHIVED Ot - Singulair - Bad Reaction!Jana315 posted a topic in Gluten-Free Foods, Products, Shopping & Medications Sunday night & Monday night, I woke up with horrible coughing fits - I am having allergies right now to something in the air... On Monday night, it was so bad that I couldn't stop coughing, tried lots of things. Finally, in my sleepy stupor, I grabbed a Singulair pill that I had from a trial pack. I did get back to sleep & stopped coughing, but I...

ARCHIVED Diagnosed While Breast FeedingJana315 replied to Sulevismom's topic in Coping with Celiac Disease Hi Jess, Sorry - I just saw your question! I've not really noticed a difference regarding carbs (except for feeling better, generally without the gluten) - guess I've been successful with keeping them in my diet which may or may not be a good thing, ha, ha. My carbs consist primarily of Quaker Instant Grits (almost every morning - with or without...

ARCHIVED Problem Telling Wait StaffJana315 replied to jasonD2's topic in Coping with Celiac Disease I hear you too! I have a really hard time explaining it to waitstaff, and thus far (only eaten out 5 times since going gluten-free), I've only explained it to one really nice waitress. I just ordered really carefully the other 4 times, and so far, so good. I haven't gotten sick from eating out. I did print out some of the pre-made allergy cards (though I...

My breakfast staple has been Quaker Instant Grits - I know that Quaker has a bad rep for cc, but I've had great luck with the instant grits. I like this thread, though, because I need to branch out. They are starting to get old... Jana gluten free since 5/13/09 nightshade free since 5/15/09 or so

ARCHIVED Gluten-free Foods Give Dh (not Celiac) Digestive Issues?Jana315 replied to Jana315's topic in Parents, Friends and Loved Ones of Celiacs I love all these suggestions/ideas! It really helps. DH has now re-qualified his statement that the brown rice pasta bothers him somewhat, but doesn't give him the s***s like the baked goods do....SO, now we are trying to get away from xantham gums for baked goods - seems easy enough and are trying out some new flours - like coconut, almond, arrowroot &...

ARCHIVED Gluten-free Foods Give Dh (not Celiac) Digestive Issues?Jana315 replied to Jana315's topic in Parents, Friends and Loved Ones of Celiacs Thanks for the suggestions - we are narrowing it down. For example, he can eat the brown rice pasta - maybe it is the xanthan gum when we make baked goods - it is definitely more with the baked goods. Is there a substitute for xanthan gum? Yikes.... Jana
