  1. Tie-breaker! I wouldn't start a gluten free diet until after the biopsy yet either. Many Celiacs don't test positive via a biopsy. You have HUGE GI surface area. They just take a few little samples so unless your villi are really damage, you may not get a positive biopsy and you may even get an inconclusive one. So I would eat as much gluten as possible...

  6. The butterball turkey says it is soaked in a solution that contains modified food starch, which I've been assuming is not gluten-free although I'm well aware that they all are not made from wheat. So why doesn't butterball list it as modified corn starch?
  7. Ok, they all mean you can't digest gluten well, but does that mean that all levels of sensitivity will cause villi disruption or is that just celiac. That is why I'm kind of confused but because I find this diet really hard to follow. Thank you.

  9. I have a Sucky Whole Foods here in Fort Collins. They don't even have Ener-G breads at all even though their list said they did. I've had 3 people try to help me find stuff. I would really like to get some muffins though . (and not have to order expensive ones in addition to paying shipping and handling)

  11. I don't have a recipe but I've toyed with the idea of making stuffing using gluten free bread crumbs to substitute for regular bread crumbs. Or else I think you just need spices and butter to make stuffing. You could probably just find a regular stuffing recipe and adjust it. Good luck!

  14. Yes, I've been tested for hypothyroidism many many times. Thank you for mentioning because it is a real common problem and I think a lot more people need to be tested for it. My TSH is always between 1 and 1.5 which is really good.

If you have any other symptoms of PCOS like excess hair, you might want to get your Obgyn to test you (hair loss can be from celiacs too especially if it is overall loss).
