I didn't have the twitching when glutened, but started getting it after going gluten-free. However, it's been almost 2 months now since I went gluten-free, and the twitching is far far reduced over what it was before. In fact, it's like 80% gone. Since one of my symptoms is becoming hungry from it, what I did was I'd grab other food. I noticed that certain food tended to reduce the symptoms faster than other food. That would not explain it. In fact, many of these symptoms are said to be similar to low magnesium. How I could have had low magnesium in high school but not afterwards, but suffer from it now (well, the gluten intolerance I supposed, combined with the increased hunger afterwards making my body want more? I dunno), is something I don't get. -

Could it be sodium/potassium problems? I had also been eating gluten-free Chex, which is high in sodium, and I'd been eating a lot of it (it's high in many nutrients too). I didn't have any yesterday, and the symptoms got better. You think I might have too much sodium/not enough potassium in me?
