  1. I had to eat gluten for a while and now I'm able to eat mostly gluten-free but even though I've been feeling better, I can't seem to get enough sleep now. I slept for 10 hours straight today and 5 hours later I really want to to sleep again. I can't figure it out besides that I'm not getting enough vitamins (which I cannot afford to buy right now either...

  7. I usually never get good sleep even though I'm asleep for 8 hours or more sometimes. I rarely get that perfect kind of sleep that there's no dreams and it's peaceful.   8. I tried the recipe again last night with less xanthan, & a mix of flours. It wasn't as rubbery and a little less thick this time. So I guess I just have to keep experimenting with it for it to turn out right.

Here it is, 2 eggs 1/2 cup milk 1 1/2 tbs. butter 1/2 rice flour 1 tsp. xanthan gum 1/4 tsp. salt 1 1/2 tbs. cornstarch Put butter in a cold cake or pie pan in the oven and turn it on to 400 degrees. While oven is heating, beat eggs & add milk. combine dry ingredients in a separate container, mixing well, then set aside....
  11. So I tried out my recipe for a german pancake and the dough (as usual with all the pancake recipes I've tried) came out really thick and stiff. I baked it anyways just to see and it didn't fully bake in the middle. (as usual) I can't figure this out! if I add more liquid it gets all rubbery. Anyone know what to do?? Thanks!
  12. I'm looking for a good gingerbread and sugar cookie recipes, the roll out kind. And the question; When ever I bake sugar cookies (non roll out kind) or chocolate chip cookies they're perfect right out of the oven & cooled. Nice and soft with a slight crisp to them. But the next day whether or not they've been under plastic wrap they're really soft...

  14. Why is it that one day I can eat like, two chocolate chip cookies and not get sick and the next day I do? That also goes for oatmeal, powdered milk, coffee, milk, cheese, bread, pancakes, waffles, etc. So I said enough of this and went gluten-free completely.   15. If I put less water in it it would be extremely dry and crumbly (that's what it looks like before I add the water, even then it takes the full 1 1/2 cups to make it more pourable).   16. This recipe is so easy I cannot for the life of me figure out why it never works! Here's what happens, it rises well, and looks like it bakes well until you cut it open. It's like it bakes most of the way and then stops. It's not exactly gooey it's just..wet like, spongy, and tastes not done. It also sinks in on itself if I let it cool. I have tried this...
  17. I can see how it would irritate the gut because it's healing. But, how would the dairy affect it when you mix it in the coffee? And how could I drink it before I went gluten-free? What if I ground my own coffee, would that make a difference? About milk, most kinds of milk you buy like in Walmart (for a universal example) makes me sick. I'm guessing...
  18. I haven't been drinking coffee for the past few months because I felt sick from it. It's not flavored or anything, just regular cheap coffee, with milk and sugar. Lately I've tried drinking it again and I get EXTREMELY bad gas pains to the point where I can't move or breathe and I still have that sick feeling in the pit of my stomach. Is this gluten related...
