  1. I have found a link to 504 plan Open Original Shared Link, this is a diabetic website of coarse but I am sure the 504s are pretty similiar in wording. I didn't see anything about severe disability. Hope this helps.
  2. In our case the diabetes came first. My daughter had typical symptoms that I unfortunatly didn't realize were typical. She was thirsty all the time (I thought this was because it was the beginning of summer), always going to the bathroom (because of all the drinking), and then major flu like symptoms (but she was in daycare so I figuired she had the flu...
  3. Wow! Who knew how controversial a 504 could be? My daughter is not in school yet, she will be in Kindergarden next year. My understanding of the 504 is to have everyone on the same page, not to sue the school or be an in your face kinda parent. I hope to be able to communicate with the teachers, but I would think that having it in writing makes it easier...
  4. Speaking of dipping things, sometimes I let my daughter dip whatever it is in ketchup or mustard, or whatever is the "dip" of the week/day. I know this sounds gross and might not be the healthiest, but I have gotten her to eat broccolli, brussel sprouts and carrots by letting her dip them in ketchup. I can't watch and it looks strange but sometimes desperate...
  5. My 4 year old bragged last night to her sister, who is six and was at school, I have my own pizza now. And it is good. I can't wait to try the other things it does. I think I might try hot dog rolls and I do want to try the little rolls like it calls for on the package. Thanks again
  6. Donna, I take all my ends, crumbles from when I tried to get it out of the toaster and even my bread that didn't rise quite right and crumble it on a cookie sheet, Cook at 200- 250F for 1-2 hours, stirring every 15-30 minutes then I turn the oven off and leave them in for 2 hours or up to overnight. Then I freeze. I crumble it first because I have trouble...
  7. celiac3270, Thanks for the Chebe pizza crust idea. I found some at the local health food store so I wouldn't have to order so much before I tried it. I followed the directions and my 4 year old is happily eating Pizza. She told me this is much better than your other tries Mom. (I have tried many many recipes with no success) One question I have for you though...
  8. Dr.Pepper, Hawain Punch and Kool-aid are also gluten-free.
  9. Smith, What about Tacos- Corn tortillas naturally gluten free- and if you don't buy the already made ones like Old El Paso, you can get like 20 for $1.29 ( in my area). Just moisten some paper towels put the tortillas in, I do up to 4 at a time, and microwave for 20-30 s depending on your microwave. The meat is easy, brown ground meat, if you don't want...
  10. If you add a can of Ro-tel it cuts down on glueness and adds a nice zing. You could use salsa if you don't like Ro-tel. Also you can cut hte thickness with milk.
  11. Debbie, I don't know about nestle quick being gluten-free, but Hersheys syrup is. We have found EnerG brand cracker and like it best ( my daughter is 4). Also instead of crackers we use gluten-free corn or rice cakes( don't remeber the brand, but get at regular store) as a vehicle for peanut butter. Breyers vanilla seems to be gluten-free, I have checked...
  12. There is a big difference between flour and corn. Some corn tortillas are better than others, but if your kids are used to quesidias with flour it will be a shock to their taste buds to go to corn tortillas. Mission isn't a bad brand. I like Pepito better and if you are further south you can find even better. My parents live in Texas and the have some great...
  13. Oh here is another: Corn tortilla pizza's: Either fry or bake corn tortilla until crisp. Put pizza sauce or doctored tomatoe sauce on it, mozzerella cheese, and pepperonni. Or whatever toppings your child likes. It is more like an Italian chalupa than pizza, but my 4 year old liked them the 1st couple times I made them. You can also do a traditional...
  14. I don't know if this will help, but here is a recipe. This is one recipe where I eyeball and use my families tastes vs measurements. gluten-free Chicken Parmesian: About 2 c gluten-free dried bread crumbs- I make my own from scraps of leftover bread or you can buy them. Add to the bread crumbs-1/3-1/2 c Kraft Parmesian cheese. (You could probably...
  15. The Hummus sounds great. Thanks
  16. Thanks for the great sounding recipe- with so many options too. Can't wait to get settled into our new house so I can try these. The candy bar idea sounds great or I might just drizzle a little over the top, to entice the little one. Laura
  17. Karen, Thanks for the list, even though I am not in Canada it gave me some ideas of similar products to check out in the US. I have been so thrilled with Kraft and their products since I discovered their labeling policy. Laura
  18. Terri-Anne, It is hard enough to get them to eat and then to have an allergy on top of it. My daughter is 4 and I feel your pain. There is a spice company that makes a ranch dressing mix-kinda like the packets in the store. I use their other spices and my daughter hasn't had an issue. It is Penzeys they have a web site www.penzeys.com. You just have to add...
  19. Traci, I have never tried them because my daughter is 4 and not into soups, but Amy's is a brand that has gluten free soups and my Parent's can find it in TX, so maybe you can find it. Laura
  20. I called. They were very nice. The lady I spoke with said the changes might not be made until Winter of 2005 and the products have a year shelf life. They are adding wheat starch as the last ingredient. For ease of getting in contact with them I will include their link. www.malt-o-meal.com Their phone number 1-800-743-3029. Laura
  21. Thanks Bridget, I will call and ask what the carmel color is made from. I initially asked if it was gluten free and got the legaleze- we can't say for sure because of.... Sounds like I was asking the wrong question. Laura
  22. Hi, The pasta that is the most popular at our house is a rice, potato and soy called Bionaturae Gluten Free Pasta. My picky 6 year old said she couldn't even tell the difference from the gluten pasta as she calls it. Just be careful this brand also makes a wheat pasta.
  23. Sorry with as long as my last post was you'ld think I would be done. The pasta my kids like the best is Bionaturae Gluten Free Pasta, be careful they have reg too. Some bigger grocery stores carry it and our health food store does too. I can't remember the brand but I think it is Van's has a gluten free Waffle that goes in the toaster. With Carys low carb...
  24. Hi, My daughter is 4 and has both Celiac and Diabetes. As I don't have a 9 year old I am not sure what they eat, but I have found some things that work for us. Hormel Pepporonni is gluten free and low if not no carbs. My daughter loves those pull cheese sticks- again gluten-free and low/no carb. I have found two types of crackers that she will eat peanut...
  25. Hi, My daughter is 4. She was diagnosed with diabetes at 22 months (that was June of 2002) and then we found out she has Celiacs in Feb 2004. It is very overwhelming at first, but it is very managable. Even though some days I want to pull my hair out, but other days I know we have it under control. I have been fortunate enough to find a great Health Food...
