ARCHIVED Family Members With Celiac?
sa1937 replied to foodiegurl's topic in Coping with Celiac Disease
I'm convinced my Mom had it (undiagnosed) but her problems were very different than mine. She was so constipated (had her to ER on more than one occasion) and very bloated. She was a tiny woman and weighed 90 lbs. dripping wet and could not gain an ounce regardless of how she tried. She actually looked 6 months pregnant. She died in 1997 and prior to... -
ARCHIVED Only Digestive Problems?
sa1937 replied to LisaaaNoel's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
As far as I know, this has been my only problem...the Big D. If I have other problems, I'm not yet aware of them. This is the one-month mark for me being gluten-free. I had my EGD/biopsy on April 9 and have yet to have my follow-up appt. with my GI doc (appt. on May 20 as he's been out of town on a family emergency so my appt. had to be rescheduled)... -

ARCHIVED Buying A Stand Mixer
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the clarification! Maybe the water wasn't warm enough...I do have an instant read thermometer so will use it next time. Yes, we need our new toys...ain't it fun! I did turn on the oven briefly to warm it before putting the bread in to rise. Hmmm...spatula. Do you mean the rubber scraper/silicone type? Or the kind we'd use to ice a... -

Mushroom, your French Bread is da bomb!!! I can't believe how incredibly good it is. I already ate more than I care to confess. I never ate that much bread before Celiac but this is the absolute best gluten free bread I've tried yet!!! And I love my new mixer as it makes it so much easier. I do remember years ago when I made bread that it took awhile... -

ARCHIVED Completely Paranoid About Gluten Now
sa1937 replied to srfjeld's topic in Coping with Celiac Disease
While I don't have any, I've read on the forum that people have put cast iron pans in their self-cleaning ovens to get the gluten out of them. Of course, they'd have to be seasoned again. Also, Easy-Off makes a BBQ grill cleaner so I would think it or even regular oven cleaner would effectively clean the grates. Obviously that's not to be used on other... -

ARCHIVED I Can't Commit To Gluten Free Without Some Sweets!
sa1937 replied to ohitsonlynicole's topic in Gluten-Free Foods, Products, Shopping & Medications
I love Reese's Peanut Butter Cups (the originals). Check the ingredients as not all Reese's products are gluten free. Loved them before diagnosis and can still eat them with no problem now. I need to add Snicker's to my grocery list today. I've always liked them, too. Since going gluten free I find that my 9 o'clock munchies have all but disappeared... -
ARCHIVED Buying A Stand Mixer

Good thing I didn't start anything as my daughter from Denver called and is surviving finals week in grad school. After the brick I baked the other day , I wouldn't want to screw up another recipe. -

ARCHIVED Buying A Stand Mixer

Holy cow! I got my mixer today! I ordered it Sun. afternoon and it was shipped from a distribution center near York, PA so it blew me away when I found out it would be delivered so quickly. So now it's all washed and ready to go. Yeast is on my shopping list for tomorrow! Woo hoo!!! -
ARCHIVED How Long Until Symptoms Disappear?
sa1937 replied to Eliza82's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I went gluten free following my endo/biopsy on April 9 and was surprised that I saw some positive results in only three days. Not that I'm completely there yet but it was so encouraging as I was hoping to feel somewhat better in a couple of weeks or so. I know everyone is different. The day after I cleaned out my gluteny pantry the following week, I... -
ARCHIVED Cleaning My Waffle Iron
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
I have a Vitantonio, too, and I know they are no longer in business. It was quite expensive back then from Chef's Catalog (sometime in the 90's). The last thing I need is another honking big appliance taking up room (exception is the new KitchenAid mixer I just ordered). I'm going to take my chances of just thoroughly cleaning it. Surprisingly the Vitantonio... -
ARCHIVED Buying A Stand Mixer
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the tips, mushroom! After my first bread baking disaster, I am determined to figure this out. I have the quick acting yeast on my grocery list and this will be the first recipe I try with my new mixer. Now I am more anxious than ever to get it. I know bread baking takes practice and I used to use my Mom's recipe all the time (like 40 years... -
ARCHIVED Buying A Stand Mixer
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
Thanks so much!!! It sounds absolutely delish! Surprisingly I have all ingredients except the egg substitute but then you don't always use it or the egg yolk, right? Does it make any difference in flavor if you leave it out? And I need to buy fresh yeast but I'll have it before I receive the mixer. I don't have French bread pans YET but that may... -
ARCHIVED Buying A Stand Mixer
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
Well, mushroom, my decision was easy...the white one was $248 compared to around $300 for colors. No brainer. Mine has to sit on the counter and I have to make room for it. Cool idea for the leverage thingie. I was originally holding off thinking that I didn't need one and now I know it'll make it so much easier. I may need to ask you more about the... -
ARCHIVED Buying A Stand Mixer
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
Thanks, mushroom! I bit the bullet and ordered the Artisan today. Prices are all over the ballpark (up to $300) with this being the least expensive I could find online. I ordered the white one..I'm though with ordering things in every color of the rainbow. This decision was made considerably easier after I baked my first loaf of gluten free bread... -
ARCHIVED Cleaning My Waffle Iron
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
I'm in the same boat only my Belgian waffle iron has never been used much. I plan to use a new toothbrush and scrub the dickens out of it. It cost too much to donate to Goodwill. -
ARCHIVED Buying A Stand Mixer
sa1937 replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
I've been following this thread with great interest as I'm sure I need something other than my KitchenAid hand-held mixer, which has basically only been used for cookies, cakes and mashed potatoes as I've never been that much of a baker. After the Ener-G Brown Rice Loaf I can see baking bread is definitely in my future!!! lol The hand-held is probably... -
ARCHIVED Gluten-Free Symptoms - Is This Normal Recovery?
sa1937 replied to CantWeight's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
A book I would highly recommend is Celiac Disease: A Hidden Epidemic by Dr. Peter Green, Director of the Celiac Disease Center at Columbia University (newly updated early this year). It covers a lot of info from a very knowledgeable doctor. -
I did replace both of mine but they were ancient (think 1960's) and figured I'd never get them clean. I was also on a roll buying a few more new kitchen things to start my gluten free life. Are you having any problems using your older colander and sieve? If not, I would think 2-1/2 months of using them give you your answer.

ARCHIVED Looking For Some Help For My Son....
sa1937 replied to Nolan'smom's topic in Coping with Celiac Disease
I just looked at my package of Reese's peanut butter cups and there is nothing in them that would suggest they are not safe, even though "gluten free" does not appear on the label. Like anything else, that does not mean that all Reese's products are safe nor does it mean that even if something is fine for me that they are safe for everyone due to allergies...
