I have never seen a mayo that was unsafe for celiacs. I guess some brands *might* have malt vinegar but it would have to be labeled in the ingredients. Most mayos these days do have soy in them. Update: I had a second appointment today to discuss my blood tests. My husband was not invited to come along. As it turns out she did NOT do the celiac panel testing. My husband requested it but she did not run it. She agreed with me that if I didn't want a diagnosis and my symptoms resolved gluten free then I should just keep doing what I'm doing... -

Thanks those are all good ideas! I never made a lot of mayo-based salads so I guess I was having a mental block trying to think of things to make. I will do a search and see if I can find one that I like. My mom always made tuna casserole and I didn't really like it but I might try it again now with gluten-free pasta. Thta's strange. I'm no expert on the tests but I thought it was either positive or negative (with a high incidence of false negatives and very rare false positives). There is not really a test for gluten sensitivity unless you are doing the controversial stool testing that Enterolab offers. If you want a clear diagnosis I think you need to go back to a... -

Oh I agree they are very good toasted and good heated up but they don't work well for packed cold sandwiches. I eat lots of simple meals--meat, veggie, rice or potato. Sometiems fruit for a snack. Thanks I have not yet seen Daiya in stores where I live but I DO have a local pizza place (Zpizza) that has Daiya as an option AND they have gluten-free crusts. So far I have not wanted to try it. Thank you for the suggestion but I just looked up the ingredients and it has Soy protein in it. I cannot have soy. I was looking more for recipes for the mayo I already have in my fridge. -

I have been to a few weddings since gluten free. Fortuantely they were all cake and punch or appetizer type weddings and not sit down catered dinners. I just ate before I went, took my own snacks in my purse and planned a special treat for afterward if neccessary. Sounds like a delayed reaction to me. Everyone's different but reactions can be delayed up to 3 days. I usually get my neuro symptoms right away (headaches, blurred vision, naseaua, balance issues, brain fog, etc, etc) but my digestive symtpoms are more subtle--I have C for a two-three days followed by several days of D. It takes me a good week to 10 days... -

I actually think I may be both. I am gluten intolerant/celiac for sure. I have not had allergy testing for wheat but when I use lotiona that has wheat germ oil in it I break out in a rash of hives. Are you allowed any salt or oil at all? Most of those ingredients would tear up my insides if I ate them raw but they won't have much flavor if cooked without any seasoning and without an aromatic veggie like garlic, onions or carrots. I think "good" glutne free bread really depends on how long you have been gluten free and also what you liked prior to going gluten free. I have yet to find or make a gluten free bread that is soft and squishy like Wonderbread but I have found many that taste like very good multigrain breads. Thanks. Just curious is there some reason you need to "prove" it? It sounds like your body has given you all the proof you need. You could look into Enterolab if you really need the piece of paper with a positive test result. They do not diagnose celiac, they only tell you if you are gluten intolerant based on stool samples and they do genetic testing... -

This sounds more like a wheat allergy. Celiac disease or gluten intolerance is not an allergy, it is an autoimmune disease. Have you had IgE testing done for wheat alllergy?
