The What's For Dinner Tonight Chat
love2travel replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Tonight is the first time posting since moving to Croatia. Wow - it sounds great even saying that! No more winter!!!!!!!!! We are settling in (finally, after a very busy few weeks). The new kitchen will be installed soon. Until then, I have been using a small outdoor oven and a hot plate. There is an outdoor wood-burning oven but it has been too... -

ARCHIVED Cold Snowy Winter Comin'............ Git Ready
love2travel replied to Candy's topic in Introduce Yourself / Share Stuff
Snowed again last night - this is sickening! We have had snow on the ground continuously since November 1. However, it has reached -1C this afternoon and the sun is shining. It could be worse! -
ARCHIVED Stopping In To Say Hello!
love2travel replied to love2travel's topic in Introduce Yourself / Share Stuff
Thanks for your lovely comments! Yes, it is actually a little rough at this point, trying to get things accomplished while under the emotional stress of leaving family behind. But we both know Croatia is where we belong, where we feel the most at home and the healthiest. I look forward to settling in and cooking with astonishingly fresh and local ingredients... -

ARCHIVED Going To Paris - Need Your Best Tips
love2travel replied to Nikki2777's topic in Traveling with Celiac Disease
Paris is relatively easy compared to North America I find. Try the macaons, too (not macaroons). We stumbled across a few wondrous bakery treats and fabulous Parisian restaurants. We did breakfasts on our own (groceries and markets). I second David Lebowitz's blog. He has excellent suggestions, including where to find those unctuous eclairs! You will... -
ARCHIVED What's For Dessert Tonight?
love2travel replied to sora's topic in Gluten-Free Recipes & Cooking Tips
My birthday was Sunday so we have a smidgen of cake left. I am doing low carb so I made an almond and coconut cake with a light drizzle of maple glaze. It is actually quite good but would be better with some of that homemade strawberry ice cream! -
ARCHIVED Happy Spring, Fellow Gardeners!
love2travel replied to notme's topic in Gluten-Free Recipes & Cooking Tips
Ummm...you are already planting stuff? We still have a ton of snow on the ground and will for at least about six more weeks. I am not in the least envious or anything! However, this is my last winter on the Canadian prairies, hopefully forever, as we are soon moving to Croatia!! Next year I will be bragging and gloating along with the rest of you... -

I am alive and well - just very busy. We are preparing for our gigantic move to Croatia in May which means listing and selling our house, vehicles, trying to decide what to take along (we are very restricted with space) and what to leave behind; what to sell and what to donate. We have no idea how many years we will be there but we are planning on many....

Tsk, tsk. You girls and your crushes! Not that I don't have a few one or two myself. Roast chicken tonight with a lovely chipotle lime garlic rub. Cheesy cauliflower bake and roasted asparagus drizzled with delicious Croatian olive oil and sprinkled with pine nuts. Oh. And individual flourless chocolate cakes with peanuts and peanut butter filling... -
ARCHIVED Need Moral Support For Travel
love2travel replied to C-Girl's topic in Coping with Celiac Disease
IH's #1 is also mine. I used to allow my health conditions control my life. How liberating to have taken back that control! I would do it without question. We travel regularly to Europe and find it easier there than here to deal with celiac disease. You may have serious regrets if you do not do it and wonder why later on. You can and you must do... -

We are still low-carbing it (we probably will forever!) so I am making a luscious cream of celery soup with cumin-roasted pepitas and finishing it with a drizzle of pumpkinseed oil. -

ARCHIVED Silent Celiac No More!
love2travel replied to txgal748's topic in Coping with Celiac Disease
I was diagnosed as a silent celiac also. In retrospect, this was not true (but there was no association at the time) as I had weak tooth enamel and nails, several miscarriages, eczema - all these can be attributed to the disease. Since my diagnosis nearly three years ago, I have been glutened only a few times as well (that I know of!) but twice in... -

Isn't Downton great? Pity Matthew left such a gaping hole. Though O'Brien was not full of love and kindness, her character was interesting and added to the atmosphere. Do you not just love what Bates and Anna did for Moseley? Got me all verklempt. Your knees and hips have improved? How grand! Yay, hips 'n knees! -
ARCHIVED Advice Re Low Carb, Moderate Protein, High Fat Diet?
love2travel replied to love2travel's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thanks for the encouragement! My patience is growing thin (ha) as I have read about loads of people who see improvements quickly. But mine is a body ravaged by celiac which makes me even more...uh...special. Happy to hear you are no longer hungry. That gives me hope as well. There. Focus is officially shifting from this stuff to several unread... -
ARCHIVED Advice Re Low Carb, Moderate Protein, High Fat Diet?
love2travel replied to love2travel's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
OK. It has been ten days and I have no more energy than before, nor do I feel better otherwise. Have not lost an ounce but trying to be patient about that one. I would have thought that results from rapidly and seriously decreasing carbs would be in evidence but perhaps it is a bit like the gluten thing where resolution can take ages. Is that the case... -
