  2. 6 cm of snow in the forecast for tonight. So done with this winter. Where is spring?
  3. Snowed again last night - this is sickening! We have had snow on the ground continuously since November 1. However, it has reached -1C this afternoon and the sun is shining. It could be worse!
  4. Thanks for your lovely comments! Yes, it is actually a little rough at this point, trying to get things accomplished while under the emotional stress of leaving family behind. But we both know Croatia is where we belong, where we feel the most at home and the healthiest. I look forward to settling in and cooking with astonishingly fresh and local ingredients...
  5. Yesterday I made grain-free herbed bread that I ate simply with butter and flaked Maldon sea salt this morning.

  7. My birthday was Sunday so we have a smidgen of cake left. I am doing low carb so I made an almond and coconut cake with a light drizzle of maple glaze. It is actually quite good but would be better with some of that homemade strawberry ice cream!
  8. Ummm...you are already planting stuff? We still have a ton of snow on the ground and will for at least about six more weeks. I am not in the least envious or anything! However, this is my last winter on the Canadian prairies, hopefully forever, as we are soon moving to Croatia!! Next year I will be bragging and gloating along with the rest of you...

  10. I am alive and well - just very busy. We are preparing for our gigantic move to Croatia in May which means listing and selling our house, vehicles, trying to decide what to take along (we are very restricted with space) and what to leave behind; what to sell and what to donate. We have no idea how many years we will be there but we are planning on many....

  14. IH's #1 is also mine. I used to allow my health conditions control my life. How liberating to have taken back that control! I would do it without question. We travel regularly to Europe and find it easier there than here to deal with celiac disease. You may have serious regrets if you do not do it and wonder why later on. You can and you must do...
  15. We are still low-carbing it (we probably will forever!) so I am making a luscious cream of celery soup with cumin-roasted pepitas and finishing it with a drizzle of pumpkinseed oil.

  24. OK. It has been ten days and I have no more energy than before, nor do I feel better otherwise. Have not lost an ounce but trying to be patient about that one. I would have thought that results from rapidly and seriously decreasing carbs would be in evidence but perhaps it is a bit like the gluten thing where resolution can take ages. Is that the case...
