  1. My apologies for not being very clear on this. I feel like I'm asking something completely different than others are reading and that is I'm sure totally my fault. I'm not tempted by gluten on a realistic level. Even the minor reaction I had to cookies isn't worth and the long term effects definitely aren't. I want to be gluten-free and stay that way....
  2. This is precisely why I'm trying to sort out what an acceptable level of contamination is. The cookies were very purposeful to see what my reaction was and see if I was actually going to have a reaction. That was a one time thing only. I don't purposefully eat gluten, ever. I'd go with the proposed US guidelines of 20ppm if I had a clue what that meant in...
  3. How do you all conclude what is an acceptable level of gluten for someone with celiac? I know the celiac foundation says the only treatment is a lifetime of gluten free but that's quite vague (especially for someone who needs very specific precise details to function). I've seen various sources saying that eating gluten with celiac causes all sorts of long...
  4. I asked a lab tech friend to take a look and she read it as saying there was severe damage. I'm leaning towards that as well because he first says the mucosa is flattened.
  5. I asked both of my doctors about this since we'd started trying before I was diagnosed and both agree there's nothing to be concerned about other than the usual need for prenatals, etc. If you have no known fertility problems, just carry on as normal. I use Rainbow Lite Prenatal minitabs since they are the most complete prenatal vitamins I could find (and...
  6. I made Impossible Cheeseburger pie. It was really fabulous comfort and a good test of gluten-free bisquick.
  7. I cook up meatloaf and taco meat for my husband. The meatloaf is generally done in a muffin pan so he can grab one and eat. For me, fajita stuff is always in the freezer, sometimes fried rice, rissotto, refried beans with onions, seasoning, peppers, sometimes chicken all cooked up and then frozen in single serving size chunks (i fold the bag up usually to...
  8. I'm new to this as well. Biopsy was last week so now I'm eating gluten free full time. It is a big pain but it's not the end of the world. Depending on your diet, going with a whole foods diet might be really helpful. It wasn't for me at all and I've found some of the endless suggestions for it from various sources kind of condescending since there is nothing...
  9. Thank you, that's extremely helpful. It sounded both like it was severe and also like it was mild in that the only damage was a few blunted villi so more experienced interpretations are helpful. I'm okay with having celiac (and honestly, I was kind of hoping for a very clear biopsy to avoid any ambivilence). Where do you get the peptic ulcer from?
  10. I got my lab results emailed to me today from my biopsy but I'm not quite sure what they mean. Clearly, there is damage but I'm wondering whether it confirms the drs guess of mild celiac based on my blood results of 83 on the ttg or whether the damage is more severe. Any thoughts? FINAL DIAGNOSIS DUODENUM BIOPSY: FLATTENED MUCOSA WITH CHRONIC INFLAMMATION...
  11. As I understand it from the reading I've done, each person has a threshold of damage but that threshold may not always be where the symptoms starts. Every molecule of gluten pushes the person closer and closer to the threshold so it's in your husband's best interest to avoid as much as he reasonably can to keep inflammation and thus damage to a minimum.
  12. Oh I know, I don't ever eat anything with oats and that's why i'm not concerned with adding it. Do you think the washing instructions are okay?
  13. Thanks, I'll check that out.
  14. I'd appreciate such a list if you wouldn't mind pointing me to one.
  15. I haven't tried Better Batter yet but it's on my list. I'll also be ordering a small box of Domata flour to try. My local store has Pamela's so i'll try that eventually as well. The Arrowhead Mills mix i tried last week was pretty awful tastewise. The biscuits were easy and had a pretty good texture and look though so I'll be trying brownies or something...
  16. I'm not concerned with oats for now but I'll keep that in mind for the future. The exceptions are US only as I recall. The site didn't have specific sources though.
  17. I've been wanting to make a reference card for people when they ask what I can't eat or most especially, for use in restaurants. I think I've finally got things narrowed down enough to cover everything but would really appreciate opinions from people who've got experience (i'm not gluten free quite yet, still waiting on the biopsy). The exceptions list came...
  18. At this point, absolutely! Not sure about later when I've been completely gluten free and feel better though.
  19. I'm in a similar situation. Sliced bread isn't something I eat generally so I've been making a point to find the gluteny things I like and have what seems like an equivalent amount of those instead of bread. Ikea meatballs and maybe Ihop biscuits and gravy are the last things on my list. There's stuff I make at home of course but I'm satisfied with just being...
  20. What a frustrating experience! It was really rude to tell you that you ordered the wrong thing. I've never had any sort of service issue with Red Robin so I'm hopeful for my local one but we'll see how well that holds up.
  21. Sadly, no chipotle around here. Reducing fast food as we eat out way too much anyway is definitely part of my plan but I like to have options for days when I don't feel like cooking, when we're out and about and most especially for events with friends though those are mainly at places like applebees.
  22. I can't speak for the OP but I intend to keep a mixed kitchen for my husband and probably our children as well. It's going to be a bit of a pain but I don't see the need to take his favorite foods from him. Nothing I make from scratch will have gluten in it and he's happily agreed to that (it was his idea even) so it's just prepared frozen foods and in the...
  23. I used to work at subway and had a regular with very specific needs. Don't recall them ever explaining why but they wanted new gloves, new containers, etc. They never came in during a super busy rush so i was more than happy to do it but I wouldn't trust them now unless it was a desperate situation. It helps that I can't stand subway anymore and neither can...
  24. Thanks, I'll keep that salad in mine. I'm collecting menus since I'm indecisive anyway. My stack is currently sitting under my laptop. So far it looks like for quick food for my area, Taco Time is the best. My favorite salad there is naturally lacking in gluten so I don't even have to change orders which is really nice for someone who despises change. They...
  25. That's more or less what I imagined, just didn't want to be the only one ever to do that!
