  1. As of today I am 8 weeks gluten free and am enjoying the fact that my abdominal pain issues (which were almost debilitating) are drastically improved, my energy levels are increasing and my brain fog is clearing. All this means I can function at an almost 'normal' level of activity...going to the grocery store or walking the dog no longer kills me for the...
  2. Thanks everyone! I've been a Penzey's fan for years...am glad I can continue to use them.
  3. I'm relatively new to the gluten-free diet...diagnosed almost 8 weeks ago and still on a simple bland diet while I heal. I have a cabinet full of Penzeys spices and when I called the company they stated that all spices and blends were gluten-free. In fact, the rep said the only item they have that is not gluten-free was the soup bases which are produced by...
  4. We'd planned a trip to Greece prior to my diagnosis...we don't want to cancel it but the thought of travel somewhat terrifies me at this point. I'm almost 8 weeks into the gluten-free diet, and I have just started to feel much much better (the last week has been amazing -- less pain, fatigue, brain fog, etc.) We'd be staying in an apartment in Athens...
  5. Thanks for that info. Do you have a pro-biotic you'd recommend?
  6. Thanks. Nice to know if I give it time, it should get better!
  7. I was diagnosed with Celiac Disease 7 weeks ago today. I'm still working on the diet issues as I am an American living in Poland and working with food labels in a foreign language! It has been an adventure. I'm mostly sticking to simple meals of chicken, turkey, cooked veggies, rice, potatoes, some fruits (bananas, pears, cooked apples)...100% apple juice...
  8. I've just finished week #4 of being gluten-free. It has been overwhelming and at times I feel like I'm never going to get the hang of it. Then I realize I need to give myself more time...there is a very steep learning curve with all of this and I expect it to get easier as I get used to shopping and cooking. I'm trying to stick to simple natural meals (turkey...
  9. Wow! Thanks so much for that information. I'm not fluent in Polish but I've got a good Polish friend who has decided her mission is to help me through this adjustment to a gluten-free lifestyle. She helped clean out my kitchen, has been helping me read any food labels I wasn't sure about, is doing research. She's a gem! I know I'm lucky to have her and other...
  10. Thanks for your message. I am trying to not eat too many processed foods even if they say 'Gluten-Free" on the package. I'm starting with natural (and organic) foods and making all my own meals. So far, it seems to be working. I'm just lucky that I'm someplace where food is less processed overall compared to the United States.
  11. Thanks for the warm welcome. Krakow is a lovely city...I highly recommend a visit if you have a chance. We're here for one more year and by that time I expect to be much better at the whole gluten-free lifestyle. I've actually found a restaurant here that advertises as the first "Gluten Free Restaurant" in Krakow. I might just have to try it out in a few...
  12. Hi. I'm newly diagnosed (3 weeks ago!) and an American living in Krakow, Poland (my husband's job brought us here.) I have my doubts about other Krakovians being active here but I can hope, right? 8-) I've cleaned out my kitchen, given away loads of food, been reading as much as possible to educate myself and my family. I'm also lucky because going gluten...
