  1. Congratulations on your first anniversary! May your health continue to improve on all levels. Stories like this gives us 'newbies' hope.
  2. I was diagnosed almost 6 months ago. I immediately told my sister to tell her doctor that I was confirmed Celiac and to request the bloodwork for herself. She's been less than enthusiastic about this. What is killing me is that she's been suffering from an "unspecified auto-immune disease" (her doctors' words) for 10+ years. I don't think she's EVER been...
  3. Congrats! I go in next week for my 6 month blood test...and I think I need to make a list of all the overall improvements going gluten-free has resulted in for me. I'm still boggling at my fingernails which used to rip and tear easily and took forever to grow out. I'm now trimming them every week because they are growing great guns and are stronger then...
  4. I felt wretched for the first couple of weeks after going gluten-free -- I blame it on a combination of withdrawal AND doing a major clean out of my kitchen. Hello flour dust and crumbs! Thinking back, I should have had someone else do it... Everyone heals differently and depending on the extent of the damage to your body and accidental glutenings (they...
  5. I came across this updated listing on About.com. It includes a link to an article about specific Valentine's Day candies. Open Original Shared Link
  6. Sorry, I don't have any specific recs (last time I was in the LA are was prior to diagnosis) but places in SoCal are usually good about ordering "off menu" -- and the West Coast in general seems better informed about food allergies and intolerances. The small town where my mother lives in OR has several places with gluten-free menus and they are serious about...
  7. I had neither C or D but loosing 20+ lbs in less than a month is what finally got my doctors worried and got them to move away from the "it's all in her head" diagnosis!
  8. I can't remember where I found this recipe...it was via a link on twitter to someone's blog that linked to another blog...you know how it is sometimes. Anyway, I made them yesterday -- they are seriously good and it didn't take much time to throw them together. I didn't have green onion so left it out and I had to use dried cilantro because I wasn't going...
  9. I have a history of "functional" cysts -- the ones that are related to your cycle and come and go. I've had them since long before being diagnosed with Celiac Disease so have no idea if they are related. My doctors just watch them since I don't usually have any problems or symptoms, and if I have pain issues they check via ultrasound to see what is up --...
  10. Yep, we are old pros with Ryanair, Easyjet, etc. I always pay the extra for priority boarding since fighting a rugby scrum of other passengers to get seats on a place is not a fun way to start a trip. We found our apartment through a site called oh-rome.com -- they had a lot of choices in different price ranges. We found one about a 10 minute walk from...
  11. I went to Posana while visiting in-laws who live in Asheville and was impressed with the menu choices and the waitstaff. Going back will be a highlight of our next trip there!
  12. A former work colleague passed along the following recipe to me when I was diagnosed (her brother grew up with a Celiac Diagnosis -- this was a favorite from a time when there weren't many gluten-free options in the stores!) I haven't tried them yet since I can't easily find rice flour where I am currently living (Poland.) Buttermilk Rice Flour Pancakes...
  13. We've never done a Disney vacation with our daughter but the more I read, the more inclined I am to do so!
  14. Healing takes time...and unfortunately a week isn't a lot of time. It all depends on how long you've been sick prior to diagnosis, how fast your body heals, how strict you can be on the diet (I was accidentally and unknowingly glutened more than once...the learning curve is steep!) I am more than 5 months in to the process and have only noticed a decrease...
  15. We'll be in Rome for 4.5 days due to the vagaries of Ryanair flight schedules...I don't drink coffee so that won't be a problem. I know someone who's in Florence and she told me that she's been amazed at all the gluten-free options she's seen marked in stores and restaurants -- she's the one who told me about the gluten-free gelato option. I'm glad to hear...
  16. The OP has me now thinking...my knives are ancient (20+ years old), have wooden handles and reside in a wooden block. The knives aren't great quality but work fine for me. Now I'm wondering if I should replace them. There's minor sentimental value since they were a gift from my father (who has since passed away) but he'd be the first to tell me to chuck them...
  17. I booked our tickets today -- we go at the end of February! We're staying in a flat with a kitchen so I'll be making some of our meals but if anyone has suggestions of restaurants I'd love to hear them. From everything I read I should be able to eat better than I do where I'm currently living (Poland...the land of wheat in all recipes!) Also, gluten-free...
  18. If you eat meat, don't forget about jerky (beef, turkey, buffalo -- yes I found buffalo jerky online and it was really expensive but really really tasty!) Jerky is my new portable "go to" snack -- I'm honestly sick of nuts and Kind bars (cannot stand Larabars...)
  19. When I was first diagnosed it seemed like everything set me off and I felt like I was having a reaction. I remember reacting to a mixture of red wine vinegar and olive oil that had been drizzled over a salad -- it was agony. You might just want to go very simple and natural in terms of meals for a few weeks and then slowly add foods back in. This has been...
  20. Do you have symptoms of GERD along with the hernia? Could those be causing the pain issues? Well prior to my Celiac diagnosis I was found to have a medium-sized sliding hiatus hernia. It was causing me all sorts of problems with GERD because my esophageal sphincter couldn't close properly and PPIs did not solve the problem of pain and damage from the acid...
  21. I had a history of GERD due to a sliding hiatus hernia which I finally had repaired surgically -- and the GERD miraculously went away. No pills, I could eat anything without a problem, yay! Fast forward to me developing GERD symptoms that would not go away...not with any PPIs, going on the GERD diet, etc. After a few months of that and lots of tests they...
  22. Thanks for the replies. I don't have easy access to a Trader Joe's right now (*sniff*) but will once we move this summer. I'll track down Old Wisconsin. While poking around online I found one brand called Golden Valley -- I saw it on a couple of gluten-free blogs but I emailed the company to see if the products were still gluten-free and they replied almost...
  23. Anyone have any beef or turkey jerky recommendations? I'm not a huge fan of jerky but I've found I feel better the more protein I eat and jerky would be a great option to throw in my purse so I have an easy option when I'm out and about. Thanks.
  24. Your house in Istria sounds amazing. So jealous. I think Croatia will have to wait until our next posting in Europe...Looks like Rome is up next for us vacation-wise and I can't wait! Then Scotland in late April as our daughter has never been and it is one of my husband's and mine favorite places in the world. Then we're out of time since we return to the...
