  1. Our family eats a lot of brown rice (and even more since my daughter's diagnosis). Do I need to be seeking out certified gluten-free rice, or is just a bag of regular rice OK? (I know it's not safe from the bulk bins.) What about quinoa, or corn tortillas?

  6. Our grocery store doesn't sell the gluten-free Rice Krispies -- I bought some natural-foods brand "crispy brown rice puffs" at Whole Foods and was going to try making treats with them, but I don't have high hopes. I might wind up making Fruity Pebble treats too!
  7. Before her celiac diagnosis, my 6yr old daughter would not eat any snack bars other than Zone bars (mostly chocolate/peanut butter, though she would eat fudge graham in an emergency). This morning at breakfast my husband saw that I was giving the kids their vitamins by dumping a bunch of vitamins into my hand, having each kid pick one, then dumping the rest back in the bottle.   14. I'm not a big baker, but both my kids like muffins, so I bake them fairly regularly. So far the only gluten-free recipe I've tried is the banana bread on the package of BRM all-purpose baking flour. I just put it in muffin cups and bake until the tops brown (about 18 minutes).   15. Coincidentally, my husband just sent me her pathology report, which said "moderate to severe villus atrophy (modified Marsh type 3B)" in one spot and "severe to complete villus atrophy (modified Marsh type 3B-3C)" in another. So I guess it could be kind of a long road.

  25. So, I used the pancake mix, but it was a little weird because it has leavener in it. They tasted OK, but were strangely puffy for crepes, and a little mushy on the inside. (The mix also includes sugar, which I don't normally add.) Next time I will plan in advance and buy some millet flour!
