  1. Thanks -- I'll try the Mama's pancake mix, with the proportions in the recipe Janet linked to. One of my daughters just likes jam on hers -- the other one (the one with celiac) eats them plain. DH and I eat them with ham/turkey and cheese.
  2. I have a very simple crepe recipe (just eggs, milk, flour, pinch of salt, and a little oil -- I don't remember the proportions off the top of my head) that I've used for years.     I'm confused by what seems like a more relaxed standard for restaurants than for our own home kitchens. I keep reading that to make your kitchen gluten-free, you need to replace all your plastic/wooden items and nonstick pans, rigidly segregate all gluten-containing foods, etc. I'm not an expert in restaurant kitchens, but I'd assume that even those that...
  8. I make a couple of vegetarian stews/chilis (we're not vegetarian but I cook a lot of veggie things) that use bulgur to give them some body. What kind of non-gluten grain would be good for this? I was thinking quinoa, but wondered if there were other options. It needs to be something fairly sturdy. Rice would obviously work too, but one gets sick of rice....

  10. In your situation, I'd probably skip the scope if the doctor is willing to diagnose without it. But there is the "baseline" rationale (the second thing pricklypear mentioned). I don't use the timer function often, but it was quite intuitive (which was good since I had lost the instructions by then) when I did try it.   13. I tried the 1-minute muffin today. Amy and I both tried it and agreed that it had no flavor except for the banana, but we have some improvements to try next time.   15. The diagnosis is pretty certain, but the specialist's office said she should stay on gluten until we see him, in case he wants to do a biopsy.   16. Poor Sarah, who is 6, found out she had celiac over a month ago. After her bloodwork, we waited a month to see a pediatric GI close to us, but I was underwhelmed -- then we got a referral from a doctor friend to a pediatric celiac specialist at Children's in Denver, but still couldn't get in till June 1. So she can't go gluten-free for at least another month...
