  1. OMG...YUM! Such a good idea! I'm gonna try it. Quinoa spaghetti is my favorite!!! I posted a yummy recipe for it on the "great dinner" thread. As far as Tinkyada goes, I prefer to eat it only with creamy sauces instead of tomato-based sauces. I use quinoa for tomato-based dishes. Just a personal preference I guess?? Ooooh...new idea with Tinkyada Penne...
  2. I think you're right about it having been the steak that made you sick - I had this same thing happen with beef from our grocery store. They inject it with flavor enhancers or something??? I dread vacations. The first thing I do is scope out all the health food stores, McDonalds and Chi-Fil-As! Sorry to hear you had a rough time though. But welcome back...

  4. Who says you can't eat great gluten-free?!?!??! Some ideas for you: Breakfast *scrambled eggs, sausage or bacon, cheese, onions, peppers & salsa wrapped in corn tortillas (You can put anything in these really) *Breakfast casserole - scrambled eggs, cheese, bacon - put in a casserole dish, top with sour cream and salsa - hashbrowns...
  5. I tried the Gluten Free Pantry's Sandwich Bread and it wasn't bad. It's MUCH better than their French Bread. My aunt made a loaf of this in her bread machine, hollowed out the inside, filled with ham, turkey, roast beef, swiss, tomatoes, onions, peppers and Italian dressing, put the top back on, wrapped it up and we took it on a picnic when our hubbys went...
  6. This is a richer version that is great for an appetizer - just mix chicken, chopped red apples, chopped celery and cream cheese. I put this atop homemade crackers - I roll out Pamela's Biscuit Mix pretty thin and bake on 425 until they're brown, turning once. Mmmmmm... For crackers and sandwiches, we do: chicken, chopped celery, green onions, red peppers...

Oh, as for flour - I didn't want to put a specific kind, b/c I know everyone has their own thing they like to use...I usually use a mix of tapioca, potato & brown rice flours.   8. I felt a little sick when I first tried Tinkyada. My tummy wasn't quite sure what to think. Never did have a problem with Quinoa tho. Now that I've been gluten-free a little longer, neither is a problem. I eat Tinyada at least once a week now. This lady I used to work with made me a chocolate cake my last day on the job - she had to accomodate me (gluten-free) as well as another co-worker who is a vegan.   10. I bought a case of this stuff a while back and it's just been sitting in my pantry. It is the most awful stuff to make sweets with. I've tried chocolate cookies - even a chocolate cake that was so covered in frosting you could hardly see the cake - but it's still GROSS! I can't get over the garbanzo bean taste. So I got to thinking - maybe it will be better...
  11. LOL! I tried to go to a raw diet when I found out about Celiac. I thought I was going to die if I had to eat like that forever. I was constantly hungry and found it really difficult to get all the nutrition I needed. I eat TONS of veggies now, but not raw. My tummy thanks me for it. I usually drink lots of water and take ibuprofen & acidophilus (I have these b/c of candida and they help with tummy aches, but I'm not sure if I should be taking them when I get glutened or if it even matters? Anyone know?) And I really need to be taking less <MUCH LESS> ibuprofen. I definitely don't need...

  15. I had trouble sticking to the diet too at first. I thought well I'll just have a little bit - so what if I feel bad. It must be REALLY hard for you since you don't have any symptoms. I know I wouldn't care as much if I didn't feel the pain of it. It's like someone telling you that something is loaded with fat - SO WHAT - it tastes good and I can work it off...

  17. I absolutely love quinoa spaghetti! (Is that considered corn??) It's a little more tempermental than Tinkyada tho. I just haven't had any luck on the quinoa shells - they are always crunchy. I will try your recommendation tho!
  18. LOL! I've heard that before!! I eat at Cracker Barrel quite a bit and haven't gotten sick (yet). I eat the chicken tenderloins and vegetables. I've had salads (minus croutons) and haven't gotten sick either. It probably depends on the individual restaruants. I eat at Chic-Fil-A here ALOT, but when I was in Atlanta this past weekend, we ate at one there...

    I get sick almost every time I eat at our Wendys...and it used to be my favorite place. It's got to be cross contamination b/c I have their gluten-free menu memorized.

I was even hospitalized at one point b/c I kept having reoccuring sinus infections and the dr didn't know what else to do. I was on heavy antibiotics - IV for 6 weeks at home!!   22. Hubby and I made tacos with the Low Sodium Old El Paso Taco Seasoning Mix and I got sick as a dog. (Pretty sure it was the seasoning b/c I tried eating just the meat again and sure enough - sick for a second day.) !!! I had checked their website and some reviews of the product and everyone said it was gluten free. Tho when I searched *this* site, someone...

  24. I KNOW! I was so excited that they had roasted chicken until I realized it was breaded! Why oh why wold you want to ruin perfectly yummy chicken with breading? FYI...I've been addicted to Chic-fil-A grilled chicken lately. Good food on the go that's actually gluten-free - it doesn't get any better than that. Hang in there!
