  4. No he can't estimate something that cannot be estimated. He has no idea how much damage your body has already incurred and he has no idea whether you already have Celiac's or not. No not 'anything' is possible...an allergy cannot turn into celiac's if you don't have the gene for it, that is an IMPOSSIBILITY. So that's some research you did....People here...
  5. I went dairy free just after I went gluten-free almost 2 years ago, however I never cut out soy. I have had multiple blood tests and most recently (October) I had another gastroscopy to make sure that I was confirmed gluten-free. My biopsies came back and my GI said that they looked "better than normal". If what this doctor says is true, that soy triggers...

Apparently you still haven't taken it upon yourself to do the PROPER research on Celiac's to find out what causes it, how it can affect you, how it's diagnosed and how it's treated.   8. Even way back in the beginning when I had no clue about any of this I knew it was aspartame in the gum causing the reaction. I never ate anything with aspartame other then the gum (which I didnt eat ) but I think the aspartame coupled with the MSG intensified everything.     Don't forget a cutting board, use your own butter and any other food item that your family may feel like putting their own cutlery into after it's touched a piece of bread or other non gluten-free item (ex. jam, peanut butter, pickles, mayo, cheese etc....) I used to mark all my food but we found it just easier for me to take a door pocket in the fridge...

  13. Yeah, no kidding he's not a doctor. That is definitely why you need to go to a real doctor and have him do the proper testing on you. THERE IS ABSOLUTELY NO WAY this guy could know whether or not you have celiac disease without running the PROPER tests and he should NOT EVEN pretend to know it!! How does he know you'll end up with celiac disease in 5 years...

  15. As I said my cooler is soft sided and collapsable too with a shoulder strap. We offered to take the wheels off it because they can be removed and the people at the security gate said no, that only coolers large enough to hold 6 drinks were permitted in the park! But that is my point exactly, if you are eating in a restaurant that is not dedicated gluten-free then you must realize that their food MIGHT contain gluten so they should not be able to say in any way shape or form that they offer gluten-free items.
