  1. I am newly diagnosed. Two months now. I have been Glutened twice since my original diagnosis. Well, today I did it again. This time it was my own fault. I read the back of the label, but it was early in the morning and I was not quite awake. I totally skipped over the ingredient wheat starch. And that's not even one of the hidden ingredients it clearly states...
  2. I have suffered from sleep paralysis. I don't know if it's connected to celiac. I've only been gluten-free for two months now, but I have not experience sleep paralysis in those two months. However it only happened to me once or twice a year.
  3. That is interesting. I have found quite the opposite. Before going on a gluten-free diet I experience extreme fatigue sometime so bad that I couldn't force myself to get off the couch are out bad for hours in the morning. Then it would get worse as the day progressed. I've been gluten-free for about three months now. And all of the symptoms are gone. In fact...
  4. That's great for Chat. I wish I could say the same for Memphis. In fact, we only have one gluten-free bakery and it is run out of someone's home. Have to preorder. But still it's nice to be able to get bread that I don't make myself.
  5. You could try polenta. The texture is a little softer that grits. I live it with a little pure maple.
