  7. Yeast is a unicellular fungus. We associate it with grains because it is their byproduct of carbon dioxide that allows breads to rise. It does not contain gluten.

  9. I have read that Teflon pans are unsafe. Why? If you clean them in super hot water and soap, wouldn't that remove gluten?

    I believe I received some poor advice from my doctor, like so many of you have. Areas of concern: 1) despite Marsh 1 lesions and weak positive blood results, my doctor said I don't have celiac disease yet, but probably will be "full blown" within five years. 2) recommends I have another blood panel done in six weeks.   16. Oh - it is a powder sold in a box. I just read the ingredients - it doesn't say "soy-free" on it, but I also don't see any soy listed in the ingredients. I don't have to follow a soy -free diet; are there any "hidden" sources of soy?   20. Hi Brenda: I'm new to this celiac disease thing, so my experience is limited. I'm in the process of making pasta (mixer is on as I type this) that is composed of Garfava bean flour, tapioca flour and cornstarch (1:1 ratio for all flours) - first time making it - I'll let you know how it ends up.   23. Laurie mentioned that lack of iron-fortified gluten-free foods - is a multi-vitamin a must for individuals with celiac disease? What other vitamins/minerals are "lacking" from our foods? I've always tried to maintain proper vitamin/mineral intake by diet alone - should I be changing my ways? Michele
