  1. I just recently returned from Ixtapa and was not glutened at all. I had brought some of my own food, but I never used it. Now we were staying at a resort, but I kept to simple foods. When we went out to eat I was still able to find something to eat. I had thought about not going on this trip because of my diet and now I am ready to go again. In Mexico...
  2. I have a few things that I really miss. We have a restaurant near us called DJays and they make the best pizza, unfortunately not gluten-free. The other things I miss are: Subway sandwiches, Big Mac, onion rings, and MIni Wheats cereal. No wonder I was so sice, I used to eat Mini Wheats everyday.

    ARCHIVED Sleep

    I am the complete opposite. All my body wants to do is sleep. As I sit here I wish I could be having a nap, but I have to start teaching again in 10 minutes. Some nights I sleep as long as 12 hours. Cindy
  4. Yesterday I made shortbread cookies for the first time and I was in heaven. To me they tasted like cookies with regular flour. I don't have the recipe with me at work but I will post it later. I even phoned my mom to tell her how great the cookies tasted. They rolled beautifully. Cindy
  5. I bought gluten-free ginger snap cookies and made the crust with them and some butter. It tasted great with my regular pumpkin pie recipe.
  6. HI I have enjoyed reading your postings. I have tried to be gluten-free since August, but I too still feel awlful. Getting through the day sometimes is just tough. I count down until I can get home and to my couch. I am cooking gluten-free for both me and my son. My husband is really careful with his foods with gluten. I like the system with the colours...
  7. That must be so frustrating. The dietician my son and I went to didn't know a lot but what she did say supported what I had read. The dietician my brother went to has celiac disease so she was extremely helpful. This forum is more helpful than any dietician appointment.
