  1. I'm not sure of the price difference, but Trader Joe's has both rice and tapioca pudding (both tasty) as well. (And, of course, gluten-free. Quite frankly, I'd think oddly of rice pudding that was NOT gluten-free, given that it's RICE pudding. ;-) )
  2. (btw, I love your knickname, MySuicidalTurtle) I'm 25, and wasn't diagnosed until I was out of college, so I'm not a huge help there. (Well, I can tell you what I did in my attempts to eat healthier and lose weight - I bought myself an electric skillet for my dorm room. They're not cheap, and I used it outside, of course, but between the little fridge...
  3. you know, that exactly the boat I'm in. Do you know the _numbers_ on your tests? I only have a "negative" on the tTg (where <20 counts as negative, but I don't know HOW less than 20 I am) and 1.4 on the gliandin IgG (where ... 1.2 is normal). My doc told me that she interpretted the test as inconclusive, and advised me to do a dietary challenge and...
  4. My reactions are subtle, but very quick. Dizziness within about 15 minutes, followed by two days of looser stools, three or four days of abdominal cramping, and up to a week of tiredness, fogginess, and irritability.
  5. While others may be more useful, my limited gluten-free baking experience says "no". Because there's no flour that has the protein content or fat content properties that wheat does. Because no gluten-free flour has gluten, which makes wheat act the way it does - texture wise and performance wise. Bette Hageman's cookbooks have the best discussion about...
  6. well, after checking with both the spice companies and the calcium manufacturer, it could just be the calcium. it can be hard on your stomach - particularly if you take it on an empty one. you don't say which end of the spectrum the "worst bathroom issue ever" was, but even in healthy individuals, calcium supplements can be constipating. (ironically, magnesium...
  7. I'm sorry, I guess I wasn't clear. I have been on the gluten-free diet for a number of months now (6 or so). And unless I decide to get a biopsy, I won't go off it. It's hard to say how much better I'm doing because the symptoms are so vague. I do think I'm doing better, but I can't rule out that it's something else, like wheat, not gluten in general...
  8. I do FAM, so I chart, and know when I ovulate. Honestly, if I accidentally ingest much gluten in the few days before I ovulate, my body goes "hey, there, I don't like poison" and holds off on the ovulation - thus delaying my period. (Kinda annoying... really...) Tiffany
  9. I should have added that, since this would be mostly for doctors to believe in the diagnosis, and my choice to go gluten-free, I'm not willing to go the EnteroLabs route. I understand that many people are happy with them, but until I see some peer-reviewed and replicated science on the methodology, I won't be. (That's what I get for getting a degree in...
  10. I'll lend my sympathy. I'm considering doing a biopsy as well, and, frankly, scared to go back on gluten. Good luck getting through the last of it. :-) Hang in there, and you can lend me some sympathy if I follow your footsteps. :-) Tiffany
  11. I'm 25, and had blood tests for gluten intolerance back in May. (It was a panel of five tests, four of which were "negative" (no numeric value on the lab report), and one which was high (antireticulin IgG - only 20% specific).) My doc called this "inconclusive" given that I had been gluten-free for three weeks before the blood test (I know, I know), and...
  12. just a quick note on the pasta maker - I haven't tried mine on gluten-free flours yet (used to make my own wheat pasta all the time before going gluten-free), but I understand that it's much better to roll out gluten-free pastas on a table. Without the gluten, the dough isn't "sticky" enough to hold together, and hence will fall apart when you try to feed...
  13. hmm.... I'm not 6, but I do pack a lunch to work, so I thought I'd add what I do sometimes... rice cakes with peanut butter (well, I use almond butter, but that's me) - Lundberg farms has sooo many good rice cakes tuna salad - tuna (gluten-free, of course) with sour cream and yogurt (instead of mayo, 'cause I can't stand the stuff), chopped red onion...
  14. I haven't gotten one myself yet, but is there enough moisture and/or fat in the tortilla? Just a thought. Have the 'griddle' sides been sprayed with a bit of oil to make them not stick? Or, if the temperature is adjustable, is it hot enough to "sear" the surface - like when making pancakes? Tiffany
