ARCHIVED Help Me "read" Enterolab Results
tarnalberry replied to VAGuy's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
just a clarification - lactose intolerance IS a "everyone has their own level" sort of thing. it means that the body has difficulty producing lactase, the enzyme that breaks down the milk sugar lactose. in some people, this could be a mild difficulty, so that hard cheeses and milk in very limited quantities aren't a problem; in others it could be a great... -
ARCHIVED Watching Diet And Still Getting Sick
tarnalberry replied to Aightball's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Kel, I know it can be work, but your best bet is to stop with the packaged foods. No boxed cereals, no cookies, and no premade patties (if they were, you didn't say). Fresh produce and meats, and spices. There are still plenty of things that don't take too much cooking (depending on your tastes), but it's the easiest way to eliminate the variables you... -
ARCHIVED Egg Substitutes
tarnalberry replied to plantime's topic in Gluten-Free Recipes & Cooking Tips
Ener-G makes an egg replacer. It comes in a box. -
Canned tuna, dried fruit, dried veggies, seeds and nuts. You could make your own muffins for the first couple days, your own trail mix, your own gluten-free granola, and gluten-free beef/chicken/salmon jerky.

There's a whole sun-lit valley fully of food at the end of the tunnel. Once you get the hang of it, you'll find it really isn't that hard and - if you're willing to stop relying on prepackaged goods and do some cooking - doesn't have to be much more expensive. (Easiest tip on that one: we don't actually need bread! :-) ) Please, give yourself some...

ARCHIVED Who Wants To Cook?
tarnalberry replied to travelthomas's topic in Gluten-Free Recipes & Cooking Tips
Lots of stir fries and other things made in a skillet or on our grill. I cook all the time, and usually don't spend more than half an hour at it... Just takes practice. (And experimenting.) -
ARCHIVED Celiac And Hypoglycemia
tarnalberry replied to Rick1254's topic in Related Issues & Disorders
seeking_wholeness... isn't it amazing, after the hypoglycemic responses, to actually feel what hunger feels like to normal people?! It perplexed me when I first felt it, and - being in the car - I turned to my husband and said, in a most shocked and surprised voice, "I'm hungry!". He asked if I had any food with me or if we needed to get home, and I said... -

oooo.... yes, sweet potato fries kick ass! I made some last night! :-) -
ARCHIVED Mayonnaise
tarnalberry replied to S-EBarr's topic in Gluten-Free Foods, Products, Shopping & Medications
You can also use sour cream in place of mayonnaise for most things. (Particularly organic sour cream, which tends to be less solid than the "regular store brand".) I like it better than mayo for tuma. (I use a yogurt/sour cream mixture for tuna, and it adds just a touch of tang that's all good. :-) ) -
ARCHIVED Enriched Rice?
tarnalberry replied to lauradawn's topic in Gluten-Free Foods, Products, Shopping & Medications
You'll want to do further research on your own (calling companies and whatnot), but what I have heard from rice producers in California is that it has always been a myth (well, in at least the past decade) that any gluten was a part of their enrichment formula. I haven't had any problem with CA rice myself. -
If you watch your total calorie count, and get exercise, a diet for hypoglycemia should still allow you to lose weight....

ARCHIVED Celiac And Hypoglycemia
tarnalberry replied to Rick1254's topic in Related Issues & Disorders
I wasn't formally diagnosed with hypoglycemia, but my doctor did note that many of the symptoms I mentioned did fall in line with being borderline hypoglycemic. I'd get a headache, nausea, crankiness, and just really felt like crap. As long as I make sure I don't each a bunch of carbs, and balance things out with enough fat and protein, though, I'm fine... -
If you're just talking about dizziness... that's the first symptom I have if I've had something with gluten. A dizzy, disorientation in the head that makes things feel like they're moving (usually rotationally) when they're not. For me, it only lasts 15-30 minutes, and happens 15-30 minutes after I first ingest the offending substance, but it sure ain't...

ARCHIVED Kidney Infection...maybe Stones?
tarnalberry replied to angel-jd1's topic in Related Issues & Disorders
If the pain is very bad, I would suggest getting to your doctor, or even the emergency room quickly. I had what was suspected to be either kidney stones or gall stones my freshman year of college, and the pain was excrutiating. It was a challenge to remain conscious. But you want to make sure it's nothing else that's gone wrong too. Good luck, and I hope... -
ARCHIVED Is Cd Forever?
tarnalberry replied to nicolespeanut's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
have you had the "skin blisters" biopsied to find out if it's DH? that'd be an easy, definitive diagnosis... -
ARCHIVED Going To The Dentist
tarnalberry replied to judy04's topic in Gluten-Free Foods, Products, Shopping & Medications
I went to the dentist last week and while I called about it, they didn't think there would be a problem, and I had no trouble from the cleaning or x-rays. Could just be my dentist, I don't know... -
ARCHIVED Durum Semolina
tarnalberry replied to nicolespeanut's topic in Gluten-Free Foods, Products, Shopping & Medications
durum semolina is regular wheat. it just refers to the exact sub species and way in which it is milled. -
per your last question... the way I've come to think of it in order to relate to the doctors is the following: celiac disease and gluten intolerance are NOT the same. gluten intolerance (the body's predisposed, static state with respect to gluten - that is, a state of really really not liking it) leads to celiac disease (an abnormal, dynamic state of...

One of the other threads mentioned the 1k/5k Walk/Run that a number of ROCK organizations are putting on in a few cities in the country. I'm seriously thinking about doing the 5k in San Diego. (I've wanted to run a 5k, but between bad knees and needing to train, I never had a good enough reason...) Is anyone else thinking of doing this? There's _just...

ARCHIVED Found Some Great Gf Cakes And Cookies!
tarnalberry replied to Debbierb's topic in Gluten-Free Foods, Products, Shopping & Medications
Where in Tustin was it? (I'm in OC myself...) -
definitely throw out the N-9. the stuff irritates a lot of people. to the best of my knowledge (and I ain't no expert on the matter), the process by which semen is produced would suggest that no gluten would become a part of it. you might consider looking into FAM (fertility awareness) as an ancillary method. it takes a non-trivial amount of work, but...

ARCHIVED Im Bummed, I Need A Change!
tarnalberry replied to SadiesMomma's topic in Gluten-Free Recipes & Cooking Tips
Sometimes, if I'm feeling lazy, I just take a can of black beans, drain them, dump them in a bowl, and heat them up in the microwave. I usually top them with sour cream for fun, but avocado would be a good substitute, or just eating them plain. (Though some seasoning, like Spice Hunter's Fajita Seasoning works very well.) You can do ALL sorts of things... -
ARCHIVED Im Bummed, I Need A Change!
tarnalberry replied to SadiesMomma's topic in Gluten-Free Recipes & Cooking Tips
Tuna: YES! I usually get mine from Wild Oats, but Ralph's (one of our local major chains) has safe tuna as well - made by StarKist! :-) Read the labels, as I forget the exact "type", but it's tuna, water, and salt. That's it. ooopss... should have read the whole thread first. :-) also, you could make hummus (garbanzo beans, olive oil, tahini (ground... -
ARCHIVED Foods Eaten Most Often (gluten Free)
tarnalberry replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
Yeah, I don't know what it is about putting food in a box, but ... One of the things I'm thinking about doing, because avoiding preprocessed foods is certainly less convenient, is getting a good dehydrator. My yoga teacher loves having one, and it could make it easier to make some "homemade convenience foods". -
ARCHIVED Burbles
tarnalberry replied to mario's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
bourbourigmi (the technical, if a bit funny sounding, term for that noise you're hearing) is on the list of symptoms for celiac. it can just happen to anyone sometimes too.
