  1. And now that summer is getting started, don't forget to get out in the sunshine (sans sunblock) for a few minutes a day for additional vit D production.
  2. Muffins freeze well, in general.
  3. Well, there are two issues... 1. If his IgA was that low, he may have been IgA deficient, in which case a low IgA reading wouldn't be able to tell you if he was celiac or not. (Did he have the full panel of blood tests, including tTg?) 2. He had been gluten free for three weeks. There may not have been any further antibodies in his system to show...
  4. Was the soy milk gluten-free? Some brands are not...
  5. lol... there's something to chalk up to "different perspective". I would never have thought of making homemade soup as "adapting". I did it before I was gluten-free too. But if you've lived your whole life buying soup, I could see how making it might seem like a big thing. (I thought enchilada sauce was a kinda big thing to make at home until I did it...
  6. I was torn about whether or not to reply to this ... 'cause I'm not particularly angry about it. I'm far more "angry" about my knees being not-so-good, and the fact that I can never run as much as I'd like to. There are so many ways around wheat. Maybe if I didn't cook and couldn't learn, I would feel more angry, but I CAN learn, so things can always...
  7. I don't know exactly what it was, but since going gluten-free last September, I've put on 8 pounds. I think that if you are underweight now, chances are going gluten-free will help you put weight on. (I can't even say the 8 pounds in 8 months is from going gluten-free... I wasn't getting enough exercise...)
  8. eh... I ate out too much as a kid, so I don't really WANT to eat out. I don't let celiac disease stop me from going out to restaurants - but if it's a place I'm not sure of, I just eat ahead, and go for the company. Eating's a social event, and while I might not join in with the mechanics of eating, I can join in with the socializing. My husband goes out...
  9. I'm sorry to hear that. I do hope you're talking to him about how you feel, and so forth. My husband's been very supportive, though he wasn't so sure at first. (I've got lots of things wrong with me - but they're all little. Honestly, I'd think I was a hypochondriac for asking the doc about all sorts of little things wrong with me so often if it wasnt...
  10. In the first of what may be many posts from me asking for help finding gluten-free resources in various cities (gotta love business travel!)... Anyone here from Huntsville? I'm going there for a business workshop the first week of May. I'm able to get a hotel room with a kitchen, but I know that my co-workers and husband (who works with me and is going...
  11. I'd give him the benefit of the doubt, since he does seem so knowledgeable. It may have been he was trying to emphasize that it is your choice, and not an _immediate_, _catostrophic_ danger to your health. (I don't dispute it's a danger to your health, I just mean that - if in your case the symptoms are not severe - you're VERY unlikely to die the day after...
  12. Well, it hasn't really changed much. I still stick almost exclusively to the produce section and butcher's. I don't bother with bread for myself - I take leftovers for lunch, or open-faced (and open-bottomed) sandwiches. I get rice or beans like I alwasy did, and just don't get any wheat bulgar. I also expanded what I'll get - like lentils, and split...
  13. I had thought about going vegetarian - before I found out I was celiac. Between the gluten intolerance and the tendency towards hypoglycemia, I found I just need too much protein in my diet to allow me to go vegetarian. Based on that, I suggest taking a minute to reconsider if you want to remain completely vegetarian. Now that you've done that, and...
  14. It's not a fast food option, but you can also keep food with you. I plan to get a dehydrator, and often keep dried fruits and nuts, and any other non-perishables I come across, with me. (I'm a food snob, and don't want to worry about contamination either. But I tend to get hypoglycemic sometimes and need to know I've got safe food around.)
  15. As a self-described food snob, I agree LaChoy soy sauce is ... well, hardly soy sauce at all. I get San-J Tamari at Wild Oats, but I've seen it at Ralph's (Kroger) as well.
  16. I caved in and bought "store bought cookies". I'm a total food snob, so buying something prepackaged that I can make on my own... I almost feel guilty. I picked up a box of Pamela's cookies. They're gluten-free and tasty! :-) I got the ginger cookies, which were quite good. You can see the other cookies they have at <A href = Open Original...
  17. In the freezer section at Wild Oats, I picked up a "new" fruit. It's acai - packed by Sambazon - prefrozen as a pulp. (It had a very small amount of guarana (a plant that contains a caffeine-like molecule) added to it.) Combined with some soy milk, a banana, some frozen strawberries, frozen pineapple, and a tablespoon of ground flax seed, it makes...
  18. But a skin test cannot prove gluten intolerance. I think that's the issue that people are referring to here. Gluten intolerance is NOT an allergy, and even true food allergies are difficult to diagnose through skin tests. Doing the skin test will not say anything about whether or not you're gluten intolerant. (I'm glad, however, that your doctor has...
  19. I had a similar problem - mostly because my celiac panel (and it was the full blood test, though not done by Prometheus) came back inconclusive. But I had already started a gluten-free diet, and didn't really want a biopsy. I've discovered, by dietary test, that I react to gluten. That's a good enough answer for me. No, I don't have a formal diagnosis...
  20. Amaranth pancakes are tasty! The recipe on the Bob's Red Mill package calls for: 1 egg (so you'd want to find the egg replacer the other person mentioned) 1/4 cup apple juice 1 tsp oil 1/4 cup amaranth flour 1/4 tapioca flour 3 tbsp arrowroot powder 1/4 tsp cinnamon 1/4 tsp baking powder 1/8 tsp salt Add a little honey on top - or even better...
  21. I'm not sure where it is, but I have read that the majority of Jelly Bellys are gluten free, but a few flavors are not.
  22. I think an awful lot of celiacs would disagree with that doc. There are peer-reviewed published studies of the opiate effects of gluten that is not completely broken down in the intestines, as well as other effects. The gluten ITSELF doesn't directly cause most of the symptoms - that's true. But that's because it's just the first thing on the list of...
  23. I concur. Buy fresh foods, avoid the packaged stuff, and cook, and it doesn't have to be a lot more expensive. Of course, you want to plan reasonably... Minimizing high-ticket items (out of season fruits and vegetables, meats, speciality grains) is important, but there's still a lot to be had even when doing that. If she doesn't bother with most of the...
  24. a skin prick test relies on an IgE response to form a wheal on the skin. it will NOT detect a gluten intolerance. BUT, your symptoms MAY be consistent with a wheat allergy. (to clarify, gluten intolerance is a IgA and IgG response to gluten, while a wheat allergy is an IgE response to wheat protein.) call it what you want, celiac disease, celiac sprue...
  25. this is for snapturtle in particular, but also for everyone else... there are a number of conditions that cause pain during sex - the type of pain you describe that may be related to muscle tone and is more at the opening of the vagina than deep inside towards the cervix. (you might try looking up the term "dyspareunia" on google as well.) and some of...
