  1. Oh....My insane hunger went away after being gluten free too. I used to get "episodes" where I thought I had low blood sugar. It was awful.
  2. I tested positive for celiac and still have issues. One thing I've read a lot about is intestinal yeast overgrowth. I read some tips for minimizing this and am going to try. I too had polyps visible in my endoscopy, but in my stomach. They came back totally benign, but consistent with inflammation from celiac.

I've knocked out reflux (had it several times per day) with organic ginger root tea w/honey, daily apple cider vinegar tablet, low acid coffee, low FODMAPS, and chewing gum. However, reflux indicates inflammation so there could be another source or food? His diet sounds plain...He could have an upset of gut bacteria...yeast...
  4. I can't remember all of your questions, but I'll address a few. You may gain weight naturally. I too lost weight and always felt "shakey-hungry" as I'd say. After about 6 weeks 100% gluten free it stopped and I'm back up to my normal weight. You may not need to "try" to gain it. My entire family still eats gluten, but I've slowly substituted.   5. I'm the only one in my fam and I've learned where I can eat and what. I always pack a snack just on case. A road trip would be tough because I don't know the places, but I'd still try. I just might have to live off Kind bars and gluten free protein shakes for a few days. Or, I'll hit a grocery store and pick up carrots and hummus, cheese, etc. Snacks stuff...
  6. Costco has a brand that my son loves! I'm not sure the name, but you could inquire when there. I also like the Udi's (not to be confused with Rudi's). I try not to eat too much because even gluten free breads have a lot of added sugar is seems. I don't think the Costco one does.
