  1. I can not stress enough the importance of educating and communicating this critical issue to the school staff.   2. I understand your frustration, it is obvious that part of the issue is unawareness about celiac disease as well as food allergies in general. It is easy to say, but we need to be very patient... I would like to suggest sharing with school members information on celiac and how critical is for anyone with this condition to adhere to a gluten-free diet...

  5. My son was diagnosed with Celiac disease at age 2. He is 30 months old now, and his is at the five percentile for height and 10% for weight. Most gluten free products are "Fat-Free", he is also restricted from dairy, eggs and peanuts. His Dr. believes the problem is his "fat=free" diet...I do not know what else to do. My son has an appt. with a nutritionist...
