  1. I'm allergic to molds and dust...I'm on allegra, nasonex and atrovent..unfortunately, I've had no improvement since going gluten-free. (my other medical problems have greatly improved though) I keep hoping that the allergies will get better too...
  2. don't forget that peanut butter may have bread crumbs in it if the the jar is shared with others in your family who are not gluten-free. (this also goes for butter and jellies). I have separate jars with a big "gluten-free only" mark on the top.
  3. Hi Mariann - happy late birthday! My challah recipe is totally dairy free, and you can use any kind of oil - I usually use safflower oil. the mandelbrot and other cookies I make I usually use butter or margerine - but try the shortening - I think it would work OK. There might be some adjustment of amount to use - I got this chart off of the crisco web site...
  4. Jean - I had tears in my eyes when I read your post! I'm so glad to have been able to come up with that recipe (I spent alot of time researching baking chemistry and reading online recipes and gluten-free cookbooks, and I threw out alot of duds though before I got to that version of it). Today I made french toast with the leftover bread from Friday (5...
  5. Hi - you want a success story...here's mine: At the age of 40 I've had chronic arthritis (sacroiliac joint) for 15+ years and severe acid reflux (I was on 2 prescription drugs)...Six months ago I found out I have celiac disease and went strict gluten-free. My arthritis hasn't flared AT ALL (except one minor twinge...and I thought I had eated gluten by...
  6. I have had problems with SI joint arthritis for 15+ years! I had seen orthopedic surgeons, sports medicine specialists, chiropractors, physical therapists (oh, and my husband is a spine doctor!) I have had cortisone shots, exercise programs, etc, etc.... Bottom line....I haven't had ANY pain in the last six months since going gluten-free! I found an article...
  7. Why don't you just wear a disposable plastic glove on your hand while you scoop out the dog food? It's a lot easier than trying to find gluten-free dog food!
  8. Granola Bars (granola ingredients) 2 cups whole oats 1 cup gluten-free puffed rice cereal 1/2 cup slivered almonds 1/2 cup sunflower seeds (roasted and salted) 1/2 cup ground oats (I use cuisinart to grind them) 1/2 cup brown sugar (syrup ingredients) 1/2 cup brown sugar 1/4 cup dark corn syrup 1/4 cup sweetened condensed milk 2 T butter...
  9. Hi Lucy - I'd try the recipe with the corn starch as substitute..I know some recipes for gluten-free pastas use corn. Do you have any Kosher products in your local grocery? If so, you may find potato starch there...especially this time of year (before the Passover holiday). Potato flour is definately harder to find. good luck!
  10. Thanks Erica! I'm so glad to have found you on the board...I hope you had a happy Purim ( and ate lots of gluten-free Hamentaschen)! Let me know if you come up with any good new recipes. Have a good Pesach - it's coming up fast! I'm already cooking...I've got 25 guests for dinner on the first night...yikes! My briskets and soup are made and in the freezer...
  11. Hi - my experience is ....it depends! If you are using a small amount (like tablespoons) for a thickener, then it's probably fine....but if you are using it as a main ingredient (by the cupful) you may notice a different taste to the final product. Try it out and see! Also, as you may notice, most of the recipes call for a mixture of different flours...so...
  12. Hi - there is a gluten-free store about 25 minutes from my house that carries rice spagetti and sauce in a can by Orgran...I've never tasted it though...the store's web site is Open Original Shared Link Look under the online store section, under entrees...they also have meals in a cup that you could try by Gluten Free Pantry. Good Luck!
  13. Chocolate Chip Mandelbrot Mandelbrot (or mandelbread) is German for almond bread. It is very similar to biscotti. This recipe is adapted from my Grandmother's original recipe. I altered it to make it softer. It's a cross between a chocolate chip cookie and a bar cookie. My kids adore these (me too!) 1 1/2 sticks butter 1 cup sugar 3 eggs 2 1/2 cups...
  14. Hi- first of all, what you posted on your message is the reference values for the gliadin antibody tests...these are not YOUR results! Somewhere on the page nearby those values should read your own results. Secondly, antigliadin antibodies are not the best or most accurate way to detect Celiac Disease (celiac disease) anymore. A more specific test that needs...
  15. Kathleen - are you planning on having some ethnic recipes? Since going gluten-free, I really miss going out to ethnic restaurants...I've been worried that the language barrier isssue would be a problem. (I've only gone once... to an Indian restaurant where the manager spoke English well enough). I'd love to learn to make my own Thai/Indian/ etc. foods. ...
  16. I hope I'm not the only one on the board who's looking for kosher recipes! gluten-free "Matzoh" I don't know if this is considered "kosher" for the actual seder...but I'm not inviting the Lebbavitcher Rebbe to my house anyway! It tastes better with a combo of rice flour and potato starch, but rice is only considered kosher le pesach if you are a...
  17. gluten-free Matzo Balls This recipe uses ground oats - but I would try it with other gluten-free flour if you cannot tolerate oats. ***To make Kosher for Passover, don't use ground oats...I used ground up gluten-free matzos made with potato starch (see next recipe) 4 TBSP rendered chicken fat (*you can use plain oil, but it's not nearly as good...
  18. GLUTEN FREE MATZO! I found a website that makes and sells gluten-free Kosher for passover matzo. Open Original Shared Link I'm going to get a box ASAP...
  19. Challah (Egg Bread) (parve) 1 1/2 cups cornstarch 3/4 cup white rice flour 1/2 cup brown rice flour 1/4 cup tapioca flour 3 T almond meal 1 T xanthan gum 1 package red star quickrise yeast 1 t salt 1 cup warm water (120 degrees) 2 T dry potato flakes 1/4 cup oil 1/4 cup honey 3 eggs + 1 egg yolk Directions: 1. Mix dry ingredients...
  20. Phil - I also had alot of trouble with bread caving in immediately after coming out of the oven....they looked so tall and beautiful in the oven, then like a balloon popping - they deflated! Anyway, i've just figured out my problem, I think ...I tried Kathleen's suggestion to lower the oven temp and bake for longer...but that didn't work...I tried altering...
  21. Hamantaschen Purim is next week, and I was determined to make gluten-free hamantaschen. These worked pretty well! This makes a cookie-style hamentaschen, not the cake-like ones. 1 stick butter or margerine 1 cup sugar 1 egg 2 T orange juice (or lemon juice) 1 t vanilla 2 t baking powder 3/4 t xanthan gum 3/4 cup corn starch * 1/2 cup white...

ARCHIVED Great Line For The Doctor..

If he knows so much about celiac disease, you'd think he'd know not to do the biopsy while the child is on a gluten-free diet! (remind him of this at your next visit-not that he should've known better, but that perhaps the results were inaccurate...) What are you asking for him to do next? another biopsy? or the blood work? neither will work well unless...
  23. Being diagnosed with a chronic disease that requires a major lifestyle change is very difficult. I think we all have our ups and downs. I think it is helpful to hold on to your faith...it can get you through alot. In Judaism, we are taught that you can break a law (ie Kosher rules, etc. ) if it is for medical reasons....A life is held as the most important...
  24. Mariann, elsewhere on this board (I think under cold cereals section?) there are several reports of people having reactions to Puffins cereal - they are puffed in a factory where nonGF stuff is also puffed and there's tons of wheat "dust" in the air - a probable contaminant...so it may not be the oats...it may be the contamination in the factory....(check...
  25. Kelly, I've been eating a combo of maple and brown sugar and plain Quaker oatmeal daily for the last month or so, and I've been just fine! It makes me happy, and no bad reactions. Sara
