  1. Hi Lindsey - hang in there honey...I know you can do it! This is your chance to show the world (and your parents) how grown-up you are- you have been given a chance to change your health for the better, and you know that it's important and will make you feel better. Start by taking control of what you eat - don't depend on your parents or others to prepare...
  2. Thanks Jessica - I have been unsure of some of their products (baked beans, for example) since I have seen different gluten-free lists with conflicting info. It's great to get the info direct from the company in writing. (and I guess I won't eat the beans anymore....) Sara
  3. Nita B. - if you had an endoscopy done that showed flattened villi - that is the definition of Celiac Disease! Please ask your doctor to contact the University of Chicago Celiac Program at (773)702-7593, or the University of Maryland program to get more information about celiac disease. It's best for the doctor to get information from the top sources- not...
  4. Dessa - positive scratch testing to grasses does not mean you are allergic to all grains - allergists typically only do the tests for varieties of grasses that grow in your geographic area and produce pollen. Most allergists are looking for allergens (ie triggers that cause a reaction) that are inhaled (ie pollens). Food allergies are not typically diagnosed...
  5. Jessica - I bought my pin at the Univ. of Chicago celiac disease Program (UCCDP) fundraising benefit last month. I don't know that they are still selling them....I'll email the program director and ask, then report back.
  6. I have one - and wear it all the time!
  7. I had great cheese ravioli from dietary specialties - find them at www.dietspec.com Open Original Shared Link they are pricey but tasted great!
  8. Hi Kim and Renee - I've made lots of changes to those recipes (matza balls and challah) since I first posted them. The matza balls I served for seder were fantastic (and no one knew they were gluten-free until my mom told) I skipped the ground oats and used ground gluten-free matza (made with potato starch only). When I tried to make them with the potato...
  9. Christina - Your 4 year old son should most definately be tested. He could be small due to family genetics, or could be small because he has celiac disease and is malnourished from poor intestinal absorbtion! Ask your doctor to send off the following tests (and make sure he is not gluten free until the tests are done): 1. IgA quantitative (to make sure...
  10. Gillian - I was advised by the Univ. of Chicago Celiac Program that it can take a full year for the antibodies to drop after going gluten-free. Also make sure that your docs are checking the correct followup tests (they should be using the antigliadin antibodies for monitoring response to the diet). Don't panic, and don't give up!
  11. maybe your doc meant cold agglutinins - a test used to look for certain viral infections (especially mycoplasma, mononucleosis, and some others). Has nothing to do with gluten/celiac
  12. Great topic - I hope to get some new ideas myself! This is how I started...since I didn't know what I liked, and what I didn't , I kept a piece of paper taped to my pantry door, and as I tasted new products (mixes, pastas, cereals, etc.) I would write down if they were good or not (so I wouldn't by mistake buy them again) Then, I keep a runnning list of...
  13. Kathleen- pierogies are the Polish version of a potsticker, ravioli, etc. It's a pasta like dough pocket, usually crescent shaped, and often filled with potatoes and cheese...(I'm not Polish, but I live in Chicago - lots of Polish people here)
  14. Try this recipe - I've had lots of success with it - but I think it tastes best on the first day - otherwise, slice and freeze, reheat in toaster. Challah (Egg Bread) (parve) 1 1/2 cups cornstarch 3/4 cup white rice flour 1/2 cup brown rice flour 1/4 cup tapioca flour 3 T almond meal 1 T xanthan gum 1 package red star quickrise yeast 1 t salt...
  15. Whole Foods has it, and I've seen it online (at various gluten-free sites). It tastes almost exactly like regular soy sauce (unlike LaChoy, which I also dislike). Be sure to get the correct one, as San J make gluten containing soy sauce as well.
  16. Dessa- please find yourself another doctor who is more skilled at diagnosing Celiac...from your comments, I can tell that this doc is not up on his/her skills in this area. Also, food allergies are not typically diagnosed accurately by skin prick tests. Sara (I'm a pediatrician )
  17. Hi Ellen- I totally agree with you...I know that it's a possibility that my kids will develop celiac disease - I haven't discussed it with them at length, a little bit with my 11 year old. They DO know that I've found good tasting foods, and that I feel better, health-wise. I always share my gluten-free foods (the treats especially) with them so they can...
  18. Kelly - the genetics tests (for HLA DQB-02 and HLA DBB-03) will only tell you if you don't need to worry about developing celiac disease in the future. If you do have either of those genes, and you have a first degree relative with celiac disease (ie parent, sibling, kids) then you need to be monitored regularly for development of celiac disease (by watching...

    ARCHIVED Genetics

Hi lisa- I am positive for celiac disease, but my parents, 3 brothers, 3 kids and some 1 st cousins have all tested negative. I heard somewhere that the risk is about 1 in 10 for a first degree relative to have it (parent, siblings, kids).
  20. Hey Kelly - hang in there, it'll be no fun for a short time, but then it'll be over. It's the anticipation of the unknown that makes the kids so crazy before blood tests and shots...they know it's going to hurt, but can't imagine how much, or how long...then their imaginations let loose and it makes things worse. A nervous parent only feeds into the anxiety...
  21. Passover Rolls (these are like a popover - crusty outside, soft and moist inside - can also be used for a small sandwich) 1 cup water 1/2 cup oil 3/4 tsp salt 2 tsp sugar 1 cup dry potato flakes 1/2 cup potato starch 4 eggs 1. Boil water, oil, salt and sugar 2. Dump in potato flakes and potato starch all at once. Mix. Let cool 3. Beat in...
  22. Happy Passover! My favorite holiday is now even better since it's pretty much gluten-free anyway, I'll hardly notice a change in eating habits. Does anyone else think that it's wierd that the five grains prohibited on Passover are the same ones we can't have for celiac disease?
  23. Hi Jo Ann - try my Challah (egg bread) recipe - it's soft and great for sandwiches. It uses rice flour, almond meal, tapioca and cornstarch. Look for it in the Kosher and gluten-free section of this recipe forum.
  24. go to the Kosher and gluten-free section under baking tips and recipes, and you will find a recipe for making your own gluten-free matzah (and matza balls and other jewish holiday recipes). There is also a link there for commercially made gluten-free Kosher Oat Matzot (from England) I bought some this week (at $20 a box) - there is only one store in all...
  25. If you look on page 2 of this forum on recipes, you'll see a section on cookie recipes... I posted a great oatmeal cookie recipes there! sorry, I'm not sure how to link to other pages on this site!
