ARCHIVED Great Line For The Doctor..

I have another thought on how to get your doctor to listen to your concerns re: celiac disease. Next time you have an appt with the doctor, bring copies of doctor-written articles on celiac disease from respected journals. Stuff written by non professionals has very little influence on most docs. Here is a link to a good article: Open Original...

ARCHIVED Great Line For The Doctor..

As a physician, I can sadly tell you that you may still have trouble...alot depends on what type of insurance you have! For patients with HMO type insurance, doctors get penalized for ordering expensive tests - we have to show justification for doing so...and in many cases, it is hard to do. Some doctors are good at writing letters with a good "spin" to...
  3. I have been really happy with "My Own Meal" prepackaged meals - they are individual servings, fully cooked, don't need to be frozen or refrigerated. All you need to do is zap in microwave to heat. I bought some from a local store, but then bought a case direct from company Open Original Shared Link (click on name for link)There are not too many choices on...
  4. Tammy - My sources at the Univ. Of Chicago Celiac Program told me oats are OK for people with Celiac. There are people with Celiac who say that oats make them ill - maybe they are super sensitive or have additional food intolerances. I've seen people on the Board say McCann's Oatmeal is gluten-free, I use Quaker Oats (when I called the company I was satisfied...
  5. DebMidge - Is your husband able to tolerate oats? the newer research says that pure oats are OK for most people. I eat a big bowl of oatmeal each morning, and that gives me a good amount of fiber. Try ground up seeds/nuts in flour (such as almond flour). I eat my burgers bunless (don't need the extra calories), but maybe you could try the sandwich rolls that...
  6. 1. Female 2. Caucasian 3. I did not know that I was sick - my symptoms were not clearly related to celiac disease. (acid reflux, lactose intolerance, sacroiliac arthritis, frequent canker sores). I was diagnosed at age 40 4. My weight hasn't changed since diagnosis ( it's only been 5 months) 5. Doctor diagnosed (he was looking for something else, not...
  7. Thanks! I went to the site you mentioned above and sent off my email letters! So easy to do, with the letters preprinted all you have to do is put in your name and press send. I hope I'm not too late....Sara
  8. Wow thanks for the info...I was eating sugar pops daily when I was first diagnosed ( i miss my old cheerios) Now I usually eat oatmeal...I guess I stop the corn pops (no great loss - I might add- the stuff is not exactly healthy!) Maybe we need to organize ourselves and all write to our congressmen and women! Sara

  10. 11. gluten-free Matzo Balls Matzo balls are like a dumpling, traditionally served in chicken soup. The non gluten-free version is made with matzo meal - which is wheat based. This recipe uses ground oats - but I would try it with other gluten-free flour if you cannot tolerate oats. 4 TBSP rendered chicken fat (*you can use plain oil, but it's not nearly...
  12. Chocolate Chip Mandelbrot Mandelbrot (or mandelbread) is German for almond bread. It is very similar to biscotti. This recipe is adapted from my Grandmother's original recipe. I altered it to make it softer. It's a cross between a chocolate chip cookie and a bar cookie. My kids adore these (me too!) 1 1/2 sticks butter 1 cup sugar 3 eggs 2 1/2...
  13. gluten-free Oatmeal Raisin/Chocolate Chip Cookies 1 cup butter (2 sticks) 1 cup packed brown sugar 1/2 cup sugar 1 tsp. vanilla 2 eggs 1 cup plus 2 TBSP rice flour 1/2 cup oatmeal flour (*I grind my own in Cuisinart) 1 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 3 cups medium oats 1 shy cup raisins 1 cup chocolate chips Directions: ...
  14. I modified this recipe from one I used during our Passover holiday (when we don't eat anything with flour). They aren't pretty to look at, but they're yummy! They are similar to a popover. gluten-free Sandwich Rolls 1 1/2 cups gluten-free flour (I use 1 cup ground oats, 1/2 cup whatever else I have) 1 cup water 4 eggs 1/2 cup oil 1/2 tsp salt...
  15. FYI- Calcium needs for kids are different than for adults: 1 - 3 year olds need 500mg calcium per day 4 - 8 year olds need 800 mg per day 9 - 18 year old need 1300 mg per day My kids also had positive anti-gliadin antibodies, but were negative on the EMA test... I was told by the University of Chicago Celiac Disease Program people that this...
  16. Oh, and I forgot...Tahini mixed with mashed chickpeas and a little lemon and garlic makes Hummus - a wonderful dip for raw veggies or falafel. ( you can get gluten-free falafel mix from authentic foods). I can get you the recipes if you want...Sara
  17. Hi Mariann- I use store brand calcium supplements from walgreens and magnesium from CVS. (Do you have those pharmacies where you are?) I found Citrical to give me stomach upset too, but I do better with calcium carbonate type of calcium (read the labels carefully). I take 1200 mg of calcium per day (600 in the morning, 600 at night) - I probably should...
  18. Thanks for the tip Kathleen - I tried lowering the temp - and the bread did not fall in, HOWEVER, i t did not rise well either....I'm now trying a new version with 2 eggs and 2 egg whites - at 350 degrees and 45 minutes, it still fell in, but I'll try it again at the lower temp and let you know....I'm going through dozens and dozens of eggs! I am determined...
  19. Can anyone help me? I've been trying to make a loaf of Challah (egg-bread) by hand. (My pre-gluten-free challah is out of this world...but no more for me ) I've made about 15 different loaves using a variety of ingredients, but my loaf always caves in after it comes out of the oven. I tried Bette Hageman's challah recipes in her books but I was unhappy...
  20. I'm new to this message board system, but it does seem strange to have to scroll thru many pages of info to get to the most recent entries.... Administrators, is there a reason for the order? Sara
  21. Hi - this is in reply to corryne. There are lots of great gluten-free mixes you can get (try Gluten Free Pantry's brownie mix - I make up a batch, cut into squares and freeze - they are addictive and AMAZINGLY good! in fact, I serve them to nonceliacs, who compliment them) You should learn to bake on your own - the mixes are really good, but if you want to...

    ARCHIVED Grieving

Hi - I was diagnosed in 9/03 and I definately went through a typical grieving period! When I went to the grocery store the first time I was also in tears. I was grieving for my old way of life where I could eat whenever and whatever I wanted. My neighbor, who saw me at the bus stop with my kids, told me to "get over it - at least you don't have cancer" -...
