  1. the more i read, the more worried i get. i don't know if it will be possible to keep my kids from getting glutened in my own house!! with so many kids around, someone is always leaving a mess in the kitchen---plus, we have a great room (if you can call it that) so the kitchen and family room are basically one room, so crumbs are dragged everywhere---even...
  2. thanks, nini, for posting the menu ideas again, and thanks everyone for all the ideas. it is so much easier to know what you can eat rather than worrying about what you can't eat. knowing specific brand names that are gluten-free is pretty helpful, too. christine
  3. i am really starting to worry about the cost of feeding my kids gluten-free. we have such a large family, and it already seems like i barely have enough money to feed them. i am thinking i should get a new grain mill for gluten free grinding. i ground bean flour once a few years ago and it was so bitter. is this the way bean flour tastes, or should i be...
  4. anyone have a suggestion as to a good gluten free baking recipe for me to start out with----something that is more likely to work out for a first-time gluten free baker? i hate to discourage myself right off the bat with a baking failure.LOL!! i have "the gluten free gourmet bakes bread" and "the gluten free gourmet cooks fast and healthy" and my sister...
  5. we have just gone from a normal family----to 3 children with celiac....ok, we probably have had celiac for awhile, just undiagnosed. our ped gi had been leaning towards thinking tianna did not have celiac and that her esophagitis was causing the blood results we got----until he got the blood results from the rest of us that have been tested. i tested negative...
  6. we can't go gluten free yet because she will be having more blood work----we've got to make sure that the damage in her esophagus is cleared up so that it is not changing the results of the blood work. tissue transglutaminase shows damage, but it doesn't tell what is causing the damage. we know from biopsy that her esophagus is damaged. the doc wants to...
  7. i have been looking up the things that our ped gi talked to us about---especially the increase in intrepithelial lymphocytes. i found an article that said someone that is predisposed to celiac can prolong the latent phase of celiac by consuming a diet restricted in gluten---thus making the blood tests inconclusive. a prolonged latent phase may raise the...
  8. thanks---it sure makes it easier when you are given suggestions of what you CAN eat rather than what you CAN'T eat. christine
  9. i got a call from the doctor about my daughter's biopsy results. her esophagus looked great during the endo---but microscopically, she has a pretty good case of esophagitis--this was a surprise, he said she must be refluxing alot. (she rarely complains of heartburn) he said her small intestine shows no villous atrophy, but in one area it does show raised...
  10. so----if a product says mono and diglycerides or modified food starch, do i have to call the company to be sure, even though it is rare that these things use wheat? christine
  11. i was just looking at the site of a company that makes gravy mixes, etc. they said that they have to list this (FDA) but that their products are tested and are gluten free. is this possible, and is it safe? christine
  12. hi all! i'm just wondering where you buy your gluten-free baking ingredients? locally, we have a kroger's that carries some of bob's red mill products, also the local health food store carries a variety of flours. i have been told that a town about 45 miles away has a fred myer's with gluten free products---and my daughter happens to be going to college...
  13. thanks kelly, that should work in the crockpot. christine
  14. i would love some menu suggestions! christine
  15. thanks everyone!! kevin and i have talked about this some more, and i think he is understanding more. i think that the stress of our surgeries illnesses and bills is just harder for him to deal with. this weekend we had one with tonisllitis, one with the runs, and one with tonsillitis and vomiting----never a dull moment around here!LOL! i have a friend...
  16. one of our favorite sunday meals is pork roast cooked in the crock pot with mushroom soup and onion soup mix. is there a substitute for the cream of mushroom soup that i can use in the crockpot? christine
  17. i love the baking soda idea---i think i will show that to the whole family. christine
  18. first of all, i want to say that my husband is a great guy and i love him dearly----i wouldn't want anyone to think negataively about him, but he just doesn't seem to understand this disease. i am becoming very aware of all the gluten that surrounds us and how flour can float in the air, land on surfaces, crumbs can stay in the toaster, wheat grinders aren...
  19. How old are your girls? my twins are 14 1/2 years old and in the 9th grade. i have 8 children still at home-----my 10 year old daughter, molly, is also very thin and has alot of rashes. i have a friend that has celiac, so i have been familiar with the disease---she has actually been trying to talk me into getting myself tested, long before we suspected...
  20. my daughter had her biopsies done 2 days ago. the doctor let me stay in and watch the whole procedure. i stood right next to the doctor and held on to tiann's hands so that they wouldn't (reflex actions) go up to her mouth. i found the whole procedure very interesting and tianna did not remember a thing afterwards. christine
  21. hi all, i am totally new at this--- i didn't realize my daughter, tianna, was sick-----she has probably been sick for over 2 years. she is painfully thin, covered in rashes, and doesn't smile very often. she is an identical twin, and has always been quiter than her sister. in the last couple of years her sister, kassie, has grown considerably more than...
