  1. hi----i am not going to take any chances with my wheat grinder-----i am ordering a new one to use strictly for gluten free grinding. we have been using bette hagman's featherlight flour mix in most of our baking and have had some pretty good success. you can use plain corn starch for thickening a white sauce----i have been doing this for years, long before...

  8. how many family members in your family have celiac. my identical twin 14 year old girls have it, and my 10 year old daughter also. as far as we know, no one on either side of dh's or my family have it. christine
  9. since celiac is related or connected to other autoimmune diseases, i was just wondering how many different ones you all have in your families? in my line, my grandfather had MS, my brother has type1 diabetes, my sister has PSC, and my niece has sjogren's syndrome. in my dh's line, his grandmother had rheumatoid arthritis and his aunt has diabetes. i think...
  10. i thought most autoimmune diseases were more common in women, but i guess that could go back to the men won't go to the doctor thing. christine

  14. i don't remember the amounts, only the main ingredients. the cabbage needs to be shredded, we used to run it through the shredder twice to get it small enough. i put it in my food processor now, a cheese shredder works pretty good too. the sauce is made with mayonaise, sugar, and red wine vinegar. don't put in too much vinegar to begin with, or you...
  15. we used to own a KFC----i still make my coleslaw like i did back then---only we used red wine vinegar. i'm going to check this site out, sound fun! christine
  16. we're still pretty new at this, but we've made some pretty good muffins and cookies. my daughter has also made 2 loaves of bread that were pretty good. we have been using bette hagman's featherlight mix. we have ordered her four flour blend to try and if we like it, we will start mixing our own. christine
  17. the biggest problem i run in to when reading labels are the terms "spices" and "natural flavorings" how likely is it that oats, barley or rye are used in these ingredients? if it is usually wheat in theses ingredients, the new laws would help tremendously. i'm wondering why it is still so hard to get a diagnosis if people are becoming more and more aware...

    ARCHIVED Reflux?

hi all, 2 of my celiac kids have reflux. we have been treating one for a few years, the other one we just discovered had reflux when they did her biospies for celiac. she had esiogagitis, but no symptoms. i was wondering if there is any connection between celiac and reflux? has anyone been able to go off of reflux meds once they were on the gluten free...
  19. thank, gals---this is good info to know, i was always under the impression that ELISA was just another food allergy test (i think i even asked the allergist about it's accuracy and he said immunocap was the best) but i'm thinking he doesn't know everything after he was saying he would test me for celiac if i showed allergies to some gluten grains. i visit...
  20. our ped gi mentioned inflamation of the small bowel as one of the things you would see with celiac. christine
  21. i have a friend that has celiac---been diagnosed for 8 years---and she has been trying to get me to be tested for it for a couple of years. from talking with her, i actually knew quite a bit about the disease when my children were diagnosed with it------and i test negative. it seems like either people know someone with it, or they don't know what it is...
  22. we've seen thrush (candida) alot at our house---2 of my kids even had it in their esophagus. i have never seen it only on the tongue without also seeing patches of it on the inside of the cheeks----however, i'm beginning to think that basing your suspicion of an illness on whether or not there are "normal" symptoms is leaving a lot of room for error! (my...
  23. kim, my daughter had blood testing done for food allergies. her type of test was called immunocap testing, it is supposed to be the most current and reliable testing at this time. she came back negative for food allergies. we ran the celiac screen because she had some suspicious rashes, and it came back positive. funny thing is, as the doctor debated...
  24. arial, immunocap testing is the most current and reliable test that can be done, however, immunocap and ELISA test only for food allergies, they will tell you nothing about food intolerances. my first child that tested positive for celiac, had all of her food allergies come back negative----but obviously she has a gluten intollerance if she has celiac....
  25. dallas, i'm pretty knew here, but i just thought i'd tell you what we have learned about our family. we have 11 children (2 his 2 mine 7 ours) after one of ours had a positive blood test, we tested 3 more of ours (and me) we discovered 2 more of our children have celiac and one is IgA deficient, so we will be doing other blood work to find out his status...
