I don't think this has been mentioned yet, but I asked a panelist at a Celiac conference about the changing of reactions in Celiac disease over time and he explained that it is actually like a roller coaster. Just like those of us who have psoriasis, eczema, etc--sometimes these go into remission and we don't react to things the way we did at other times... -
