  1. good advice..and I might add popcorn is not good either..Good Lord..no pain, but way too frickin much ruffage at the mo.. :blink: so far it has just been the peanuts that have given me any pain...

    Oh good to know about the mold in peanuts, we only use natural peanuts butter too, I have the feeling that as soon as I get healed up, I'll be able to go back to everything but gluten or course. I use to have an iron stomach so to speak until this cropped up.. :angry:

    Peanuts are very hard to digest and I found that out on thanksgiving. Its was the only snack I could have and ate to many. I can have about a tablespoon in a peanut butter sandwich with no problems but I can't eat much more. I was also making cookies made with almond flour awhile back. It was the only sweet I had in awhile so I ate like 6 of them. Well I should of learned from that because the next day I was miserable. Their just to high in fat and heavy.

  2. My sister went to some quack chiropractor and talked to him about me and my family having celiac disease. This guy claimed he could cure allergies, including celiac. From all that I have read, it can't be cured and it isn't even an allergy! I pointed that out to her, but I don't think she believed me.

    So is finding ppl like this common?? I am just wondering how often I will have to hear this stuff for the rest of my life!?!

    My husband being a Chiro and most of our friends being Chiro's and going to conventions year after year you soon realize the profession has its quacks. There's one guy who practices in our city that would say something like this because he thinks he can cure anything. The sad thing is he's all personality and has a radio show on sat. mornings. He has a hugh practice and people love him. I think thats why he gets away with it. People still want to believe in something and you usually do feel better after an adjustment. It's the same deal with certain church leaders and you see the devastating results after one falls. But people are forgiving and life goes on.

  3. I LOVE Maggiano's! They don't have a gluten-free menu, but are set up to deal with food allergies. The chef comes to your table and discusses your order, they use clean utensils, pots and pans, the whole experience is great! They have gluten-free pasta, too. I don't know if all of them have it, but ours also has gluten-free brownies and blondies. I don't know why they don't have a gluten-free menu, maybe so they can accomodate all food allergies and intolerances, not just gluten. The manager of our Maggiano's says they get 6 gluten-free people per night!!! Considering that not many eat alone and the gluten-free person picks the restaurant, I think that is significant. They hosted our celiac support group for dinner, and the meal was wonderful.

    Carla oooo this makes me happy!!! They should diffentely advertise it or put a note about it in the yellow pages ad. How else would you know. I only hope it just not the Maggie's in your area but I'll call ahead.

    I have been doing extensive research on yeast candida for a year now. I cannot honestly tell you how many books I have read on it. I have it. In my research, it has been noted that alcohol dependency is likely caused by an overgrowth of candida. This is usually a result of being on numerous antibiotics (this can be early in life, or later) birth control, and steroids. Candida can cause cravings in people. Sugar is mine. Alcohol is another notable craving among people with candida. Though I do not crave alcohol, there are times I would kill for a candy bar! Perhaps you should check this out.     P.S. Candida is often the cause of food allergies or related to them, and could be related to your gluten intolerance.

    Thanks NoGluGirl I have taken your advice as a confirmation that yes my yeast problem is out of control again. I've had problems in the past confirmed by a a very good doctor and he has seen me through a pretty tough recovery process but that was 15 years ago. My digestion has been real poor lately and its not just gluten that giving me the problems. I just have to buckle up and start taking this serious again.

  5. I've been on the gluten-free diet for 2 1/2 years, mostly with good success. But yesterday, I ate lunch at an Olive Garden, ordering about the only thing on the menu which appeared to be gluten-free -- the chicken caesar salad. About half-way through my meal, I began to experience mild celiac disease symptoms and have been dealing with them ever since (about 20 hrs later). I am quite suspicious that the caesar salad dressing they used had gluten. The only other thing it could have been was the Sweet and Low that slipped into my iced tea -- be careful, Olive Garden now disguises their sugar packets so that the Sweet & Low, Equal, Splenda and sugar all look alike!!!!!!!!!!!

    My experience with Olive Garden is that there is NOTHING on the menu for a celiac disease sufferer. That said, I had dinner at an Olive Garden (we selected it because we were travelling and it was the only restaurant we could find near our stop for the night). They had risotto on the menu -- hurrah!! And I ordered it with no ill-effects!

    I wonder what speaking with a manager does? If they have a special gluten-free menu, it would certainly be worth it to speak with the manager, and perhaps do a little advertising to that effect. Usually, when I tell a wait-person that I can't have gluten, it sets off a series of running back-and-forth from our table to the kitchen, several times, thus delaying our ordering. It's also embarrassing if we're eating with others. So I usually end up ordering based on the ingredients mentioned on the menu. A mistake, I know, so I deserve every stomach pain and run to the bathroom that I get!!

    We lived in the Chicago area until recently, and so many restaurants there were becoming savvy about celiac disease -- some even offered a special gluten-free menu. Maybe such awareness will trickle down . . . ?

    Does Maggiano's have a gluten free menu? I love that resturant. If they do did you try it? I go to Chicago about once or twice a year. In the magazine Living Without they list a few resturants that are gluten free.

    They list Adobo Grill, Ben Pao, Bistro 110, Chicago Diner, Frontera Grill , and Weber Grill and Restarant. They didn't like Maggiano's however.

  6. This is one of my symptoms also. The mornings are the worse and I have to be careful to choose the right foods and I'll get better as the day goes on. The thing is I don't want to eat after a glutening. Or I'll crave salty or sweet foods probably because I'm not hungry.

    I'm wondering if this is a B vitamin deficiency. I've had these feelings come and go all my life and never knew it was gluten that was doing it to me. This feeling also caused a alcohol dependency for many years. Which causes more problems with B vitamin deficiencies. It was so hard to give up the one thing that made me feel normal for just a brief time (but I wasn't it just the feeling that comes with alcohol and that doesn't last.)

    I wonder how many alcoholics are celiacs or gluten intolerants. :huh: Makes you wonder.

Well, you see, I am intolerant to all grains, including rice, and potatoes (no rice flour) and legumes (bean flour), and really, the only starch I can sort of tolerate occasionally is light buckwheat flour (the dark gives me a stomach ache). Tomatoes give me a migraine. Meaning, really, I better not even go there, I might like it too much. It would be too great a temptation! :rolleyes:

    Pizza is a must in my boring diet. I don't like a lot of gluten free breads and crusts either but I found a great tortilla called Healthy Hemp tortillas from French Meadow bakery located in Minnesota. They do have a web site that you can order these. The ingredients in these are mostly seeds. Organic sunflower, flaxseed, pumpkin seed, hemp flour amaranth ect. Its real high in fiber and very low in carbs.

    I don't use tomato. I whiz up olive oil and basil with a little Parmesan in my Cuisinart. Spread that down then some pine nuts, olives, a little cooked spinach and goat cheese. Its just fabulous. A very good for you.

    Just a suggestion and keep trying I know when I find something that agrees with me and it has flavor like that I get all excited.

  8. It's going to be hard for me to give up dairy. But I am going to try it. Does anyone eat the soy cheese? If so which brand is the best? I love cheese and it's basically all I eat to get in extra calories.

    Is Ensure okay? It says lactose and gluten free, but contains milk and soy.

    I'm with you clhsc I want to give up dairy because it gives me problems but it has only become annoying recently. I notice on days where I have cheese and put milk in my cereal I'll get the phlegm(sp) in my throat early in the morning and sometimes just start sneezing like crazy. When I go without it those symptoms go away. I was wondering about soy cheese to. Actually the only thing I'll miss is what to put on my pizza I have every sunday when we watch football. And I just got used to eating gluten free crust too. How do you have a pizza without cheese. !!!!!???????

    I don't mind almond milk for my cereal.

    I'll figure it out but would enjoy any suggestions.

  9. I've been through the strict diet your talking about and the nystitin along with other antifungals. This was when I was younger and could survive on 5 hrs of sleep. Thats all I would sleep. I can't do that anymore. I didn't like feeling like i had the flu 24 hrs aday either.

    It depends what you want to do but when I feel like its getting out of balance I just remove high carbs and go down to a basic low carb diet maybe allowing 10 to 20 carbs a meal. I try to make those carbs fruit for breakfast otherwise where are you going to get your vit. C. I buy those low carb gluten free tortillas and have that if I want a sandwich type meal. And for supper lots of veggies and meat.

    I think its important to have a good pro-biotic or eat alot of yogurt (plain). Make sure you eat enough or you'll dip to low in blood sugar levels which you probably have too. I have to eat something before going to bed and I'll sleep better and longer.

    For fruit I always have berrries.

  10. yep I'll have digestive problems like gas along with the pains but I don't get D I just feel like it. I got glutened this thanksgiving and my worse symptoms are joint pain especially in my neck because I sit at a lap top which kills my shoulders being that the key board is too high. I also get very depressed which will turn to anxiety if I have to go into public places. So I have to lay low until it goes away and this time its taking about a week. I've been having tummy upsets not because of the gluten but since my appetite is low I've been eating planters peanuts which worsened instead of help getting my system in the right tract.

    So I figured that out about 4 days ago and on day 4 of prilosec feeling better in that regard but I then figured out this morning waking up with the neck and shoulder pain that I was in a hypoglycemic response. I could tell because I get so cranky and there's this overwhelming tiredness that won't go away until I eat then the pain and tiredness will slowly go away.

    So I'm going to be more aware of eating something before I go to bed that will last me through the night. I don't know why one thing leads to another like that but I think its a matter of learning how your body response to gluten and then being careful if you have other allergies or blood sugar problems.

  11. Hi all, shortly after posting about lazy eye earlier this am I remembered something. My symptoms also fit another 'syndrome' called hypermobility syndrome. I have never considered it before but the lazy eye was obviously part of all that. Like I say I'd had it from birth and had adjusted to it so it didn't come to mind until I read the earler posts. Also, in respect of HMS, I'd been too busy focussing on the pain and frequent dislocations in my knees, hips, ankles, jaw etc etc (all gone since gluten-free diet). HMS is a connective tissue disorder, basically the webbing that holds all your bits together are weak and flabby because they lack the collagen protein to strengthen them. It also seems to be accompanied by mood and sleep disorders and by fatigue (hardly surprising). And some on the HMS board are improving on gluten-free diet. Maybe gluten attacks collagen as well as all the rest or maybe the two co-exist in the same genetic types.

    Wow that's interesting. I've always had this and I don't know to much about it. I get out of joint very easily and I'm hyper mobil. Where are the HMS boards? I'd love to know more about this. I'm better on gluten free but I also get relief if I stay away from nightshades. My neck is sore today because I've been handling gluten for two days trying to please everyone with this thanksgiving meal. Its been the hardest holiday yet to handle.

  12. Well, I am going to stop taking these homeopathic drops. I was doing soooo good and had not had diahrea for over 2 months. Now I am back to watery diahrea, pain after I eat, pain if I don't eat, etc etc. I was only doing 3 drops of this stuff a day -- obviously I just can't handle it. I have done a candida detox about 10 years ago (before I knew I was gluten intolerant) and I felt "off" for about a week but nothing like this. I can't deal with this on an emotional level either. I am so depressed. Finally, after months of feeling perfectly awful I was starting to feel half normal again and now I feel like I am back at square one. It's not worth it. Maybe I will try again in 6 months or so.

    Don't feel bad about it Marlene. I won't take any anti fungals anymore because I just can't handle how you feel. I personally feel if you just take a good probionic the good bacteria will start to thrive and beat up the bad ones. I would try to stick to a diet thats very low in carbs too. Thats all I do and it works for me. I also heard from a very good Doctor who started his own line of digestive enzyems say the same thing. He works with my husband to sell his line called enzyme formulations (for Chiropractors to sell.) His web site is enzymeformulations.com.

  13. I agree with alot of what Mike said. Whenever I lower my carbs I start to feel better. I don't have alot of acid type fruits and veggies like tomatoes. I also had to give up wine which was hard and I only had about 5 oz. with my evening meal. I hope I can have that again. I have a hard time eating liquid meals like protein shakes and soup. It just sits and wants to migrate up.

    I'm having about 10 to 15 carbs a meal and 5 carbs a snack. Three meals and three snacks. Try and go complex carbs since you need the fiber and you can subtract the fiber from the carb total to come up with the net carb.

    I have found these great tortillas from french meadow bakery. Here's the ingredient list. Organic sunflower seed, filtered water, organic flaxseed, organic pumpkin seed, organic hemp flour, orgainc hemp seed, organic amaranth flour, organic unrefined sunflower oil, organic sesame seeds, organic arrowroot, unrefined sea salt, guar gum non'aluminum baking powder, organic cayenne.

    It crazy but I love these things, I make alot of pizza's with them and roll up sandwiches or just spread almond butter on them. So the net carb is only 2 grams. That fiber really gives your stomach acids something to wrap around in. I'm feeling so much better eating like this and don't have to take the acid reducers as often.

  14. since you brought up alton brown, he's the one that suggested you should clean out your meat grinder with, you guessed it, bread! I guess I should just use gluten-free bread?!?!

    now, really, I'd LOVE to see Alton do an eposode on gluten-free cooking and the chemistry behind our alternative starches an the advantages of guar gum vs xantham.

    I did watch Altons show earlier this week on how to make the perfect gravey. He says the only way is with FLOUR cough cough. I guess some of the vegetable sources make you gravey clear and not as appealing.

  15. I just wanted to mention last week I was watching Martha Steward and she was demonstrating how to clean your kitchen and appliances. When she came to the coffee grinder she showed how you just put a slice of bread in it and run it for a few seconds and it cleans the inside by sort of wiping it clean. So warning now you can't just go over to the neighbors for coffee thinking your safe.

    I sometimes feel like I'm nosey because I have to ask so many questions. :P

    when I was first dx'ed I spent hours CRYING in the grocery store because everything I picked up (that I was used to eating) had gluten in it, no wonder I was so ill... It's ok to be a little overwhelmed, but no need to be scared. You can do this, one step at a time. Start with meals that are NATURALLY gluten free (you will find a list of those in the newbie kit) and then graduate to mainstream products that are verified safe (still always read labels because ingredients DO change from time to time)

    If you have a Wal Mart near you, their Great Value brand products are clearly labeled gluten free if they are (usually by the ingredient statement somewhere) so you can feel safe with some of their lunchmeats, cheeses, bacon, ketchup, etc... again, just look for the gluten-free statement on the backside of the label by the ingredients

    I've recently discovered that EnerG's LIGHT Tapioca bread (when warmed slightly in the microwave for about 20 seconds) makes a perfect sandwich and tastes the closest to white bread that I have yet to discover) EnerG has a reputation for some of their foods tasting like cardboard, but they've recently reformulated a LOT of their products and now have some really great tasting items.

    again, welcome, don't be afraid, be glad you found out what is wrong and you can do something about it.

    Nini, Would this be a good bread to make stuffing with? I'm still wondering what bread to use since this is my first gluten free thanksgiving. I'm thinking the most ricey type breads would turn out sticky. Not good.

    I went to see my Naturopathic doctor on Saturday and she started me on some homeopathic drops as part of my healing process. Well, I have been feeling awful and all my symptoms have flared up again. At first I was so discouraged since I was trying to figure out how I could have gotten myself glutened. However, after talking with her again, I find out that part of this homepathic remedy consists of a detoxifier. So what is happening is that as my body is healing, old bacteria and candida is dying off. When this happens it releases toxins into my bloodstream and this in turn makes my symptoms of gluten intolerance flare up again. This is called the "Herxheimer reaction" or healing crisis.

    This made me think that sometimes this is what flareups are all about. As our bodies heal and old cells die off, we go through these mini health crisis where symptoms flare up. We might think we are taking one step backwards but actually it is part of the healing process. There is an interesting website which explains this at www.falconblanco.com/health/crisis/htm.

    Meanwhile, it has been a rough week for me and the doctor has had to cut back my dosage of the drops since my symptoms have been so intense. I took 2 days off work but had to drag myself back in here today. This is sooo difficult. I am trying to remind myself that sometimes we gotta feel worse before we can feel better.

    Anyone else ever research or hear of Herxheimer reaction before? What do you think? Does this make sense to you?

    Marlene, I couldn't get your web address to work but I've been through the herxheimer thing. Its not fun and I'm glad she lighten the dose because you shouldn't have to take off work going through this. Take your time healing and go slow. Our bodies are always regenerating but its the candida dieing off that is giving you that nasty feeling. Its bad stuff.

    Your doing a good thing and I just want to encourage you to continue.

  18. I had a friend who was allergic to oregano. Whenever she would have it she wouldn't sleep and be extremely agitated. But thats an herb. I don't know what your using. I would think mold could be a problem in drying certain herbs like sage. It looks and smells like mold to me, but that might just be the nature of the plant.

    I wonder if they use pesticides to grow these. I imagine they do because I remember growing them and bugs just love em.

    Do you get an allergic reaction or a gluten reaction like cramps, gas, D. I would agree with the blends you might run into a formula they use to keep the spices mixed together and flowing nice.
