I'm not sure where you are in upstate NY but if you are near Glens Falls you can try Dr. William Bauer. He's a GI. He's the Dr. who diagnosed me. He's very knowledgable about Celiac.

ARCHIVED I Want Crispy French Fries
popoki321 replied to jennyj's topic in Gluten-Free Recipes & Cooking Tips
I use the Ore Ida shoe string fries. I bake them in a 450 oven... I use a metal cookie sheet lined with parchment paper. That trick seems to make them crispier than usual. Good Luck. -
ARCHIVED Thinking Of A Vegas Trip
popoki321 replied to Moongirl's topic in Traveling with Celiac Disease
As far as the Carnegie Deli goes I was told the pastrami was carved by hand , not on a slicer, so I assume that's where my contamination occured. I can't say for certain, but all signs point to that. I was so afraid to do a buffet....maybe I will try one next time. I'm just so super sensitive and cross contamination seems to be the big problem with... -
ARCHIVED Thinking Of A Vegas Trip

I was in Las Vegas in May for my wedding and had a wondeful gluten free time! We stayed at The Barbary Coast...great little hotel in the center of everything. Not fancey and a little older but I think it's a wonderful value for the money. We had a really nice suite with 1 bedroom, 2 bathrooms , Living room, eating area and a bar with a fridge and a sink... -
ARCHIVED Need Food Ideas For 5 Hr. Flight
popoki321 replied to popoki321's topic in Traveling with Celiac Disease
Thanks! I'm thinking of making gluten free rice crispy marshmallow treats. Definitely some fruit, maybe a Peanut Butter and fluff sandwich. I'm making some homemade salsa and I'll bring some chips. I'm sure my finace and I will be having a way better meal than anyone else on the flight! I was planning on packing a box of cereal and a bowl/spoon... -
I'm going to Las Vegas on Monday( to get married!!!). I have about a 5 1/2 hour flight. I plan on bringing a small soft sided cooler on the plane with me. Any suggestions as to what food travels well? I'm trying to avoid salty food and I can't eat nuts or seeds of any kind ( diverticulitis). I was thinking maybe some cheese, grapes....I 'm stuck after...

I went to my local book store to pick it up and they didn't have it in stock but said they could order it and I'd have it in 7-9 days for the low, low price of $20.00. I went home and promptly ordered it off Amazon! Cheaper and faster. Just from reading the excerpts it seems like a great book. Hmm, it seems I have lots of " for dummies" guides....I...

Has anyone checked out the new Gluten Free for Dummies book? I was wondering if it was worth it to order it from Amazon. I've been gluten free since Feb. and have pretty much figured it out. Just wondering if there is anything worthwhile in this new book. Thanks

I love that I am eloping to Las Vegas in a few months. I love that my fiance says "hey, sexy" when he sees me even though I have 20 lbs to lose. I love that we live on a lake called Lake Desolation. ( I'm really a people person) I love sitting on my deck in the summer watching the sunset over the lake. I love being a Sergeant and more importantly...

I get this too. I always get it when I eat pineapple but only sometimes with other citrus. When I was eating nuts I know that walnuts bothered me too! How interesting to learn it's a symptom of Celiac.

ARCHIVED Gluten Free Alcohol
popoki321 replied to swatson's topic in Gluten-Free Foods, Products, Shopping & Medications
What a fun topic! I like Hard Cider ( even before dx- I never drank beer) I used to love Mikes Hard Lemonade but now I will have to make my own with vodka and lemonde. I like Mojitos..maybe even love them. My favorite summer drink. I really like red wine, right now I am on chianti kick. I also really like Sangria although I haven't had it... -
You have all given me a few really good ways to handle this....I especially like the sneezing one! I had a few good laughs...which I really need right about now. I walked away from the situation because I just couldn't deal. I'm still adjusting to it myself. Maybe it's too soon to go out into a sitaution where I have no control over the food. Had...

Nini Yes, you are correct in your assesment. My doctor is currently having a GI specific pathologist read the biopsy for a 2nd opinion. I guess it makes sense that there could be damage considering my blood test results. I was just hoping to be lucky and not have any damage. I'm going to be vigilant concerning cross contamination. Here comes the...

I had to go to a dinner function last night. Unfortunately, there weren't too many things that I could eat, so I picked a few things here and there and needless to say, I had a very sparse plate. A few people had made jokes about the lack of food on my plate and I explained that I had Celiac Disease and blah..blah..blah... and what I can and can't eat...

Ok... I'm convinced! I think this is finally making sense to me! Thank you everyone for your responses. It helps so much to have such a supportive, informed group to bounce questions off. I think I will see what happens with my next blood test and go from there. I was feeling really good earlier in the week but have had some "bathroom issues" last...

I guess the pregnancy analogy puts it into a perspective I understand a little better. It just still seems so overwhelming and confusing. It's this statement that I can't quite grasp: try doing some reading on the medical journals regarding celiac disease, and how even small bits of gluten have been found to initiate damage in the mucosal lining of...

As a newly diagnosed person I have a few questions regarding the same subject. (Sorry...I don't mean to hijack the thread) I was dignosed from a blood test. I did have a biopsy done and it came back showing no damage. My doctor is sending out the biopsy to another pathologist ( one who has a sub specialty in GI pathology) for a second opinion. ...

ARCHIVED Lots And Lots Of Rice Recipes!
popoki321 replied to penguin's topic in Gluten-Free Recipes & Cooking Tips
Thanks! What great recipes. I'm going to make the Italian Cheese and Rice Torte tonight. -
Thanks everyone I am feeling better, both physically and mentally. I am almost a week gluten free. It gets a little easier everyday. It wasn't so much the pizza that got to me but the fact that I now have 2 diseases that force me to change my diet and watch everything that I eat. What also made me angry was that I read the label of the frozen entree...

Don't forget the cumin. That's my favorite taco seasoning.

Hi Kim (and everyone else) I'm new here, too. I live just outside Saratoga Springs in Greenfield and have just been diagnosed with Celiac Disease. I am also 34. Wow -look how much we have in common already! I use Dr. Bauer. His office is in Wilton and he works out of Glens Falls Hospital. I haven't seen a dietician yet, but that is my next...

Hi, I'm new too and have a million and one questions. I have 4 cats and I didn't even think about getting contaminated from them. I guess I was only thinking in terms of the gluten in food Is it possible that some people are more sensitive than others? I'm just curious if it's possible to have a mild case of Celiac where touching something with gluten...

I'm sorry I can't answer your question. I'm new here too. I would love to know the answer though. I am getting married in June. I was thinking of doing a flourless chocolate cake for us to cut and "regular" cupcakes and pastries for our guests.
