  1. Well, I think you could replace just about anything in these with just about anything. I had to sub a lot and it turned out fine. For example, the original recipe called for oats, and I subbed quinoa flakes, even though they aren't as dense as oats. Still worked perfectly. I don't see why rice flakes or even rice bran wouldn't work :)

    And yes, I think chocolate chips (especially mini ones if you could find them) mixed in by hand after the food processing, would be excellent in these. Well, I would think that if I liked chocolate :P

    I think if you keep the ratio of dry stuff to wet stuff the same, it'll work just fine :D

  2. I'm breaking out into hives also all the time, but I don't know why in my case. My allergist said that for foods, the skin prick tests aren't all that accurate, and that blood tests were better. He also said the best way to figure out a food allergy is by an elimination diet.

    I guess different doctors have different opinions (duh), but if he reacts badly to it, and with hives no less, it looks like an allergy to me!

  3. I modified the heck out of this food network recipe to make it both gluten-free and weight watchers friendly. They are YUMMY!!! I'm so glad I don't have the whole pan in front of me, or I would be eating all of them and blowing my diet :ph34r: I wish I had the fiber breakdown, but it's got to be high. They're really moist, a little chewy, and kind of taste like a pb&j sandwich in spite of there being no pb or j...

    For WW followers, they're 2 points per serving. :D

    By the way, I forgot the rice flour when I made it, and they turned out excellent anyway, so feel free to omit that.

    QUINOA ENERGY BARS

    Makes 20 bars

    1 cup quinoa flakes, packed

    1/2 cup sunflower seeds

    1/2 cup ground flax seed meal

    1/4 cup brown rice flour

    1/2 cup dried apricot halves

    1/2 cup almonds

    1/2 cup golden seedless raisins

    1/2 cup dried dates

    1/2 cup non-fat instant dry powdered milk

    1/2 tsp ground cinnamon

    1/3 cup maple syrup

    1 tsp vanilla

    2 large egg(s)

    Instructions

    Preheat the oven to 350 degrees F. Coat a 9 by 13-inch baking pan with cooking spray.

    Place all ingredients except the syrup and eggs in a food processor and pulse until the mixture is finely chopped. Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste.

    Transfer to the baking pan and spread evenly. Bake until just done, about 20 minutes. Cut into 20 squares.

  5. That is by and large a good list, with some misnomers:

    - Ice cream without any gluten containing ingredients (such as cake or cookies) is usually gluten-free. Of course, always read the label and check, but ice cream is one of the easiest prepared things to find gluten-free.

    - Metamucil (except for the wafers) is gluten-free, it's made from psyllium husks, not gluten related at all.

    - Most ketchups and mustards are gluten-free. Famously, Heinz ketchup and mustard are both gluten-free. The heinz organic ketchup is not gluten-free.

    - The potato chip separating with flour thing is a celiac urban legend, I've never heard of a brand that uses that practice. As of 1/1/2006, any wheat has to be listed, as it is a top 8 allergen.

    - Anything sold in the US has to comply with labelling laws, but yes, you have to be more careful with imports.

    - The majority of spices are fine, and McCormick clearly labels.

  6. Hi Penguin... I'm jumpin' in on your thread.... since I'm having mine on Friday.

    I'm glad to hear it went so well for you. I'm also glad to read that your doctor prescribed a strict gluten-free diet immediately, without waiting for the results. Mine also said the same thing.... he said that if I'm consuming gluten.... Thursday will be the last day I'll eat it, period.

    My baby turns 1 on Thursday.... I was thinking of celebrating with pizza. That's not gonna happen though!!!

    I can't wait to hear your results!!

    Chebe mixes make a fantastic gluten-free pizza :)

  7. Hi Penguin, That's great that the whole procedure is over and you'll have the results soon! Do you mind me asking how much gluten your doctor "prescribed" beforehand. (not sure, but i'm guessing from your post that you were gluten free and then had to go back on gluten . . .? I'm in a similar situation. I've been trying to get a sense of the whole range of the recommended "dose of gluten" since different doctors seem to have different recommendations.)

    My doc said ~4 slices of bread (or equivalent) a day for 3 months for a chance of damage showing. He got his info from Dr. Green at Columbia.

  8. Roxanne, interested in the Diet Coke.... my wife has a wheat allergy (not intollerance) and her allergist said the carmel color in Coke was off limits for her allergy. I haven't tried Diet Coke since I went gluten-free... no reaction with you? This could be good news!

    For me, it is "I'm Gluten-free, But I'm So Glad I Don't Have To Give Up Chocolate and Ice Cream!" :)

    Last I checked, all Coke products are gluten-free. Diet coke definitely is :)

  9. Personally, I would do it (and I did!). Your doctor sounds remarkably like mine. There's more than celiac to stomach distress, gluten isn't the only culprit of symptoms. It helped me, for my peace of mind, to know that I don't have ulcers, stomach cancer, chron's, etc.

    As far as glutening the hell out of yourself until Friday, I don't see much of a point, that's not a lot of time. I was on gluten for 3 months before my biopsy Monday and all he saw was a little irritation on my small intestine. Like your doctor, he put me straight onto a gluten-free diet, because of my dietary response. I was still confused, because I was still drugged, but my chart says immediate gluten-free diet and I got handed a pamphlet on celiac (although he said he has no reason to suspect it?). I don't know, make sure whoever goes with you is paying attention when the doctor is speaking, DH didn't pay close enough attention for me.

    Good luck with it all! Peace of mind is worth an IV and a camera down your throat (IMO).
