  1. Holy crap, looking at the University of Texas requirements for a nutrition/dietetics certification, I have to take FIVE SEMESTERS of chemistry! :o:blink::o:blink::o:blink:

    That's not even degree seeking!

    That immediately gave me a panic attack and an impulse to jump out my office window.

    OK, granted the organic chem and biochem are a little different for health type majors, but still. Not to mention the U of Texas is a really good school. Really good. Their chem department is ranked, I think. I'm in trouble.

    My original career goal was chiropractic. Half a semester of chem 1 fixed that, and I switched to poli sci.

    I'M BAD AT MATH! I'M BAD AT CHEM! CAN'T SOMEBODY JUST FRIGGIN TEACH ME HOW TO FRIGGIN COOK?!?!?!?!

    I think I'm going to dig a hole under my desk now.

  2. Yeah, doctors don't like giving IUD's to women who haven't had children yet. FWIW, my sister had a horrible time with an IUD, constant heavy periods.

    I take the pill, which might be a risk, but so far so good (knock on wood!) ;)

    Just lends more to my theory that I've spent all this money and time trying NOT to get pregnant, when I probably couldn't anyway.

    There is also the basal temperature rhythm method, you just have to abstain or use condoms during fertile days.

    Are we down to the last month now? I don't know how you do it. I'm sorry to heare that the culinary school won't work out.....there must be something out there that you can get into, don't give up your dream.

    We are down to the last month! 26 more days! Of course, even though I feel like hammered s*it, I'm compelled to eat everything in sight! Not only for the gluteny things I'll never be able to have again, but also for fattening stuff! I'm starting both the gluten-free diet again and weight watchers the day of my biopsy :rolleyes:

    As far as culinary school, I'll figure something out. I ultimately want to teach cooking, mainly to kids and teens going to college. It's my mission, eating is the one thing you have to do everyday, but NOBODY KNOWS HOW TO COOK!!! No wonder we're all fat and unhealthy in America :rolleyes:

    I think I'll get some sort of nutrition certification and go from there... I wonder if any of the instructors at either culinary school give private lessons? I wrote him back an email about how the gluten-free market is set to boom and the increase in diagnosis, etc. It's a learning opportunity...

    I'm still having problems with these "biting" ants. No more being nice and swatting them away....I wanna squash these suckers right into the ground. :angry:

    What the heck is going on?? How can regular black ants bite or sting me like this?? I'm finding the whole thing to be rather disturbing. These are some very mean ants. <_<

    Fire ants are all kinds of fun :rolleyes: I saw on the news this morning that the U of Texas has found a certain type of fly that kills fire ants and they're going to introduce the flies to the population. Great. Isn't that how lots of frogs and killer bees happened :rolleyes:

    I just talked to Ms. Debbie (Jarod's mom), and she had just gotten to see Megan. She said she looks really good; nothing like the last time. Thanks to everyone that has said prayers for her today.

  5. My son just turned one and his snacks include:

    -Gluten-free toasted bread with a little peanut butter or cream cheese or jam, cut up into squares

    -Bananas (he LOVES bananas - will cram a whole one into his mouth in one bite!)

    -Stonyfield Farm YoBaby drinks (organic yogurt drinks)

    -Stonyfield Farm portable organic yogurt pouch thingies that have been frozen - I give them to him like popsicles

    -something called Baby Mum-Mum that I found at the supermarket - it's like a sweetened rice cracker that would be perfect for younger babies (melts in the mouth - you can actually mix it with formula or milk and make 'mush' out of it). They come in individually wrapped packages of two, perfect for lunch bags.

    -Steamed broccoli 'trees'

    -Steamed golden beets, sliced and cut in half, with a little gluten-free balsamic vinegar

    -Scrambled egg, plain or with a little ketchup

    -Van's WF/gluten-free blueberry or apple-cinnamon waffles, with syrup or jam, cut into pieces

    -Pirate's Booty - he actually LOVES the Veggie Booty

    -Fig Newmans (WF/gluten-free)

    -WF/gluten-free animal crackers

    -WF/gluten-free ginger snaps

    -Applesauce

    -Cottage cheese w/cinnamon sugar or fruit/jam mixed in

    -Veggie Chips (like potato chips, but made from veggies & healthier)

    -I also make banana bread from rice flour & give him pieces throughout the week

    Someone mentioned mandarin oranges & peaches - I find I have to really watch it with this stuff cause it give him diarrhea - the oranges especially. Pineapple too.

  6. I actually sent them an email because I saw that too. The problem is the whole Malt issue.....is it made from barley or corn. Supposedly if its made in USA then it should be corn. ( ? ) I don't know. <_< If it's not one thing it's always another.

    Unless the malt specifically says corn or rice malt in the label, malt is always barley.

    That includes, um, all but two mainstream cereals :rolleyes: Stupid companies...

  7. OK, I'm almost over being depressed about it. If the small-shop culinary school couldn't accomodate me, I'm 99% sure Le Cordon Bleu wouldn't be able to help me either.

    I can always become a nutritionist or registered dietician, and learn about food that way. Otherwise, my culinary training will go the way of Paula Deen, only without the benefit of nothing else to do. It's so frustrating. It's like really being able to throw a ball without being able to join the football team.

    Grr. Two things you can't do as a celiac: Go to culinary school or join the military :rolleyes:

    You've definitely been gluten-free too long for testing to be accurate. Given your immunodeficiency, I don't know that enterolab would work either. It would show genes and malabsorption, anyway. For you, your best indicator would be dietary results, I would think.

  9. Iron saturation is your ferritin level or your iron stores. Whey they are depleted, you become anemic. I would ask what the lab range is for that because 52 may still not be enough for you. My labs ranges are like from 20 to 150 I think. My doctor put me on an iron supplement and I am now up to 44. I have read that the optipmal level is 70-90.

    Ferritin is different from iron saturation. Iron saturation is also called Transferrin Saturation and it's a calculation of your total serum iron and your total iron binding capacity. The result is a percentage. Here's the formula: Open Original Shared Link

    TFS = 100 x Serum Iron (ug/dl) / TIBC (ug/dl)

    Ferritin is the protein found mostly in the liver that stores iron. Ferritin levels give the doctor an indication of how much iron is stored in the body.

    I disagree with Cissie, here. We've got to have bats! They'll be hair-hating bats and will help pollenate our crops. Um, let's make them purple and glittery, just for a little flair!! They will also never go within 100 feet of Susan. Somebody's got to help the overtaxed geese and dingos :rolleyes:

  11. Spiders are out, out OUT!!!!! :ph34r::ph34r::ph34r: Harmless little garden snakes are all right, if anyone should ask, but NO SPIDERS!!!!! I was bitten by one in 1992, and almost lost my left foot. That was bad enough, but I fell into the clutches of two insane doctors who didn't believe me about the spider (I saw the damn thing!); came up with an off-the-wall diagnosis, and treated me with massive doses of steroids for 2 months. By the time I fired them, I had steroid-psychosis, two collapsed vertabrae, and my shoulder joints and left hip joint were dissolving. I'm fine now, no pain anywhere; all three joints have been replaced; but I'm a bit shorter than I used to be! :lol::lol::lol:

    Yeah, absolutely NO SPIDERS or I'm leaving! We should have bats to control the bad bug population. Bat's love to eat spiders :)

    I got bitten by a spider on the face when I was little. Looked like I had been punched in the eye. My mom was afraid to take me to the dr. thinking they'd call her in, but luckily, there were fang marks. :)

    All I remember is not being able to open my eye and getting a very painful shot in the butt. :rolleyes:
