  1. Well, if you're gluten-free and don't buy a lot of the gluten-free substitutes (breads, cookies, donuts, etc), you de facto cut out a lot of crap. Almost the entire fast food industry, for example. In my household, we eat healthier just because we can't eat out as much and what we eat when we're out is healthier anyway. My husband doesn't have to be gluten-free, but he mostly is at home (cheerios and crackers excluded) and he eats a lot healthier because the stuff to binge on isn't around. Except, of course, when he's out to lunch with his buddies <_<

    But if you eat a lot of substitutes and ice cream and corn chips, you'll be even more unhealthy, just because the replacement stuff is super unhealthy. A slice of gluten-free bread usually has 3-4 times the calories and fat than that of wheat bread, and usually no fiber.

    State fair food is evil.

    Also there's somebody at the Texas State Fair that makes "Fried Coke"...

    I think I saw those things on unwrapped and said "EWW"

    And then I saw them in my sister's freezer. What on Earth is wrong with people? :huh:

    Oh, and when I got to college (I moved from NY to AR), I ate at the dining halls. I joked to everyone nothern that they fry everything but the coke!

    Before being diagnosed, we had all that deep-fried garbage at our State Fair. Deep fried snickers bars, twinkies, etc. Never tried them, because it just sounded WRONG!!!!! Also thought that it had to be a Kentucky redneck thing . . . . !!!!! :lol: Didn't know that it would be anywhere else . . . We have a restaurant that sells deep-fried pickle chips . . . called "frickled pickles"

    Apparently fried twinkies are quite the thing at A&M. Gross.

    And I loooooove fried pickles, sadly. It was the only thing I'd eat at AQ Chicken House!

    Hmm...I should try frying some one day. :)

  3. So I ate some sour starbursts on Thursday I think, and my mouth broke out in all kinds of irritation, those famous celiac mouth sores. I have clusters of mouth ulcers between my lip and gum, under my tongue, on my soft palate, and I think even on my throat. Even my tongue hurts. That was mistake number one, though I've never had that kind of reaction to sour starburst before.

    I also have an oral allergy to tree nuts. I'm eating some pistachio pudding, and my mouth hurts worse. That was mistake number two. It's weird though, because pistachios aren't tree nuts, they're in the cashew family with mangoes. The cashew family doesn't count as tree nuts...what gives? I don't think I've had any problems with pistachios before, though it's been ages since I've had them so who knows.

    Ideas?

    P.F.Chang's Lettuce Wraps Recipe (copycat)

    Ingredients:

    8 dried shiitake mushrooms

    1 teaspoon cornstarch

    2 teaspoons dry sherry

    2 teaspoons water

    salt and pepper

    1-1/2 pounds boneless, skinless chicken, minced

    5 tablespoons oil

    1 teaspoon fresh minced ginger

    2 cloves garlic, minced

    2 green onions, minced

    2 small dried chilis (optional)

    1 8 oz. can bamboo shoots, minced

    1 8 oz. can water chestnuts, minced

    1 package cellophane Chinese rice noodles, fried in oil for a minute or two, until they puff nicely.

    Cooking Sauce:

    1 tablespoon Hoisin sauce

    1 tablespoon soy sauce

    1 tablespoon dry sherry

    2 tablespoons oyster sauce

    2 tablespoons water

    1 teaspoon sesame oil

    1 teaspoon sugar

    2 teaspoons cornstarch

    Lettuce of your choice to make lettuce "cups" (Butter or Bibb lettuce is my choice.)

    Directions:

    Cover mushrooms with boiling water, let stand 30 minutes then drain.

    Cut and discard woody stems. Mince mushrooms. Set aside.

    Mix all ingredients for cooking sauce in bowl, and set aside.

    In medium bowl, combine cornstarch, sherry, water, soy sauce, salt, pepper, and chicken.

    Stir to coat chicken thoroughly.

    Stir in 1 teaspoon oil and let sit 15 minutes to marinate.

    Heat wok or large skillet over medium high heat.

    When the pan smokes a bit, add 3 tablespoons oil, then add chicken and stir fry for about 3-4 minuts. Set aside.

    Add 2 tablespoons oil to pan.

    Add ginger, garlic, chilis (if desired), and onion.

    Stir- fry about a minute or so.

    Add mushrooms, bamboo shoots and water chestnuts; stir fry an additional 2 minutes.

    Return chicken to pan.

    Add mixed cooking sauce to pan.

    Cook until thickened and hot.

    Break the cooked cellophane noodles into small pieces, and cover bottom of serving dish with them.

    Then pour chicken mixture on top of noodles.

    Spoon into lettuce leaf "cups" and roll

  5. It's very easy to make your own powdered ranch mix, and you won't have the MSG and preservatives to deal with:

    All it is is garlic powder, onion powder, dill, parsley, a tiny bit of paprika, and a sqeeze of lemon or a dusting of lemon zest. For ranch dressing, just mix with mayo and milk (or buttermilk). Easy! If you need a thinckening agent, add cornstarch.

    You can make Lipton's onion soup mix substitute by substituting dried minced onion for the onion powder.

    I also add powdered buttermilk to my ranch mix. I usually use it dry to season chicken and whatnot.

    I would tell the director personally, it's something that needs to be taken seriously. Making you purposefully sick is definitely harrassment if not assault. Definitely unacceptable. Especially since your health is already comprimised because of celiac. It's truly unthinkable that someone, especially an adult, especially a friend, would do that. And what kind of counselors are they anyway, helping the kid do it?!
