I've been glutened by stuff that is labeled gluten free by both Amy's and Bob's Red Mill. I don't really pay attention to the gluten-free labels, because there are no laws governing some kind of thing. Anyone can say their stuff is gluten free.
I seem to be fine with most mainstream gluten-free products.

Where do you get Lundberg Rice Cakes and are they as good as the
quaker oats cakes. I use to get the plain.
Healthfood stores generally have them, and I get the plain. I actually like them better than Quaker rice cakes, they're heartier and have a good texture. I get them either at Whole Foods or Wild Oats/Sun Harvest

I'm sorry about the diagnosis, but I'm trilled for you that you know how to fix it! Adjustment is hard at first, but I would suggest making the whole house gluten-free. It would definitely help jealousy issues in your kids and then you don't have to worry about cross contamination in your house. In my kitchen, I don't make anything I can't eat and DH has one shelf that he can keep his cheerios, saltines, etc. I don't allow any non-prepackaged gluten into the house. There's lots of kid friendly stuff out there that is gluten-free, like a hotdog and cheese in a corn torilla with ketchup. The EnviroKids cereals are excellent.
Here's a quick cookie recipe to get you by (not mine, someone else on here gave it first
)
1 c Jif Peanut Butter (it's gluten-free)
1 c sugar
1 egg
Heat oven to 375, mix ingredients together. Make into balls (I use a 1 tbsp disher), and flatten with a fork like normal pb cookies. Make for 12-15 minutes and let cool.
You can also use some splenda for sugar and I usually add some vanilla and even flax meal! I make this at least twice a week because DH gobbles them up faster than I can make any for me to eat!
Xanthan gum can be found at most health food stores.
Companies like Kraft and Unilever will always clearly list gluten containing ingredients. Cocoa and fruity pebbles are gluten-free. There's lots of great recipes on this board in the cooking section.
It's an adjustment, but it'll make everything a lot easier. Good luck and welcome to the board! There's lots of great people on here!

I would like to commend you for your concern about taking communion even though it be only three times a year. The option I recommend, the one I use is to receive only from the cup - the precious blood - this has been working for me for the past two years. Our Archbishop told me that he has a friend, who is a bishop who also has celiac so they are aware of the problem and he and the other bishops and priests understand. I would most certainly talk to your pastor about your concerns and I am sure that he will understand and encourage you, as I do, to attend Mass regularly.
I do go to church more than what I say, but I'm not the regular attendee I should be. Trying to go regularly opens up a whole other can of worms that I just can't deal with right now. I'm glad the Church will understand about the wafers. Thanks for your help

What kind of Rice Cakes do you use that are Gluten Free. Quaker Oats
Rice Cakes have Gluten.
I use lundberg rice cakes (definitely gluten-free), jif peanut butter, and Bama jam (only available in the south)

I'm having one of those days where I have an insatiable urge to snack.
Like, serious snacking. Like, go to the grocery store on the way to work to get *A* snack for the work day. I packed my lunch, too, with ample snacks.
My trek through HEB went like this (pretend you're reading my thoughts as I'm shopping)...
Walk in the door, ooooh, those blackberries look good! And they're on sale pick up the natural, healthy blackberries

walk down the cereal aisle, check the cocoa puffs box. It looks gluten-free, cool, I'll have to remember that. But some people are getting sick, so maybe not
On to the candy aisle, dammit, all the Lindt chocolate has malt in it, bastards. Oooh! When did HEB start selling endangered species chocolate? (Pick up a dark chocolate raspberry bar.) Wait a minute, I hate dark chocolate. Oh well, I'll get it anyway.
On to the refridgerated aisle I really want some kozy shack tapioca pudding. I didn't know they came in 6 packs! (pick up the 6 pack of pudding) (keep in mind, I'm on my way to work)
OK, I'm going to be late. On to the checkout, hold the phone! They added an organic section! AND THEY HAVE TONS OF ENER-G BREAD! Why isn't this in my HEB near home? I'll remember that, oooh, they have those sesame cruch thingys I like, and they're gluten-free! Awesome! (pick up the package of JoYva sesame crunch)
OK, really need to check out. The line is long, why do they only have two registers open, A kosher section and deli, are you kidding me? The Dell's must shop here, rich bastards. Wow, look at all this stuff! I don't have any more room in my hands.
I finally check out, the guy forgets to give me change, and I arrive to work 10 minutes late.

Pretty well all of aveda products contain some form of wheat. All of their hair products do.
I get my hair cut/colored at Aveda!!
This is veeerrrry bad news for me
I guessed as much though, since all of thier stuff is all natural.
That explains why my scalp always goes through a molting period after coloring...

Well I like the Kroger ones (and the price 5/$1 is great!!!) but the yogurt experts here tell me that 2 cultures is fiarly wimpy and I should have one with at least 4 or 6 or better yet 500000000000000000000001 !
Actually, my yogurt has 500000000000000000000003 cultures, but who's counting?
For now, yoplait is probably your best choice, though I did find this article about Breyer's yogurt:

We haven't gone gluten free yet, but at the rate we are going, we will have a whole house of GOOD gluten-free recipes by the time were ready!
Put some flax meal into your cookies, it kind of mocks wheat/oats in texture. Also, it's a great source of omega-3's and fiber!

I wrote Six Flags Over Texas about what the heck I could eat at their park, and at least they got back to me fast. Here's the response I was sent:
Dear Chelsea,
Thank you for your letter. I wanted to let you know that
we have several options for you. First, I would like to say I am sorry
you were diagnosed with Celiac disease, I know how very hard that must
be for you...my doctors tested me for the disease as well, but found
that I had Diabetes. To accommodate your needs, there are several
options. As a park rule, we do not allow food or drink into the park
(you can bring bottled water). We do have a lot of guests pack a
cooler, leave it in their car, get their hand stamped for re-entry, and
have lunch at our picnic area in the parking lot. This is a very
popular thing, and our picnic area is nice! It isn't far from the front
gate, and our trams can take you to and from your car.
If you have medical information with you, we will allow you to bring in
a sack lunch (no cooler) for the day. But, honestly...it is a bit of
hassle. Our park is offering a heathier variety of food this season,
and you may find something you like here. I hope this helps...please
write back and let me know if you have any questions. We hope your
visit to Six Flags Over Texas is a memorable one! Good luck to you, and
have fun!

Thanks, Captain McVague! I guess I'll email back and ask him for specifics? And I'd have to pack the cooler with dry ice, it's like 112 in the summer in Arlington! My wimpy ice packs can't take that!
Any suggestions on what to ask him further? I'll post responses here to share the "wealth" of information!

I have similar problems. My only regularity is that I always cramp first thing in the morning. I think my body's in a routine, because half the time, not a whole lot happens.
Then I'll approach a normal bm and then have D the rest of the day. I think my body's trying
My guess is that you'll straighten out once your body knows what to do with a functional digestive tract
I think it's confused

Last night I decided I wanted to make a quiche, and I found a recipe without a crust on allrecipes.com, but I won't list that here, because the finished product barely resembled the recipe!
CRUSTLESS QUICHE
8 slices bacon
4 ounces shredded Cheddar cheese
2 tablespoons butter, melted
4 eggs, beaten
1/2 a chopped onion
1/2 white wine
2 cloves garlic, minced
3/4 c sliced mushrooms
1/2 c frozen spinach, thawed
1 teaspoon garlic salt
1/2 tsp lemon pepper
1/2 cup instant potato flakes
1 cup milk

DIRECTIONS:
*Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
* In 2 tbsp bacon grease, saute the garlic and onion until onion is carmelized. Deglaze the pan with 1/2 c white wine. Add sliced mushrooms, when they are almost done, add spinach and heat through. Most of the liquid should have been cooked away.
*Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
*Line bottom of pie plate with cheese and crumbled bacon, then layer the onion mixture on top of the cheese and bacon. Combine eggs, butter, lemon pepper, salt, potato flakes and milk; whisk together until smooth; pour into pie pan.
*Bake in preheated oven for 35 minutes, until set. Serve hot or cold.
This is not a low fat recipe
But it sure is tasty! It's a good mother-in-law recipe, looks like it took hours, but it's really easy
DH ate almost half of it by himself! I served with tomato slices. I also sprinkled the top of the quiche with paprika and dried parsley before putting into the oven for color.

My mom was supportive for the most part. We were in the same part of the country and she went shopping at Wild Oats with me. When I was being tested, she said, "but I read that you can get cancer and all of these other horrible things, you can't have that. Besides, it's genetic blah blah." And then she remembered my dad was adopted and we don't have a clue about his family
My mom knew about the pain and anemia, but she didn't know until I was being tested that I had D every day. Now she asks me about my poop a lot, which is the exact reason I didn't tell her when it started.
Recently she told me I was diagnosing myself, even though I just had an official dx
She kind of goes back and forth from "are you sure about this" to "well, maybe that's what's making you sick." I don't think she can wrap her brain around the fact that my dietary restrictions are permanant.
It's hard on the family too, since it impacts them as well. Holidays, birthdays, family dinners, etc. I think in time my family will come around, right now it just seems like this nutjob thing. Hopefully your family comes around, especially if you get glutened around them.
I know I get sicker from gluten than I did just a month ago.

I was just talking to a co-worker this morning and I said I had celiac and she said that her sister just put her autistic son on a gluten-free CF diet!
I sent her the huge survival kit (thanks nini) to pass on to her sister, who is a bit overwhelmed, esp since her other child has downs

Because it took so long to find out that I had Celiac, I ruined many relationships with my fly off the handle temper! I could not understand it but couldn't stop it either. My reactions to things seemed almost manic: Very very high or very very low. I could not stand to be around myself, At one point I thought I started menopause because me emotions were so irregular. Glad to say that part has subsided. When I get glutened, it starts all over again and a few days later it stops as quick as it came. Strange disease!

That's one of the first things I noticed (well, that DH noticed
) I never had a temper until college, and then I would fly off the handle for no reason at all. I felt really out of control. Now I feel a lot more emotionally stable and normal. It's great!

After getting sick from their frozen stuff (it's a shame because the mac & cheese is really good!), I don't trust them.
I make my own pasta sauce with 1 can sauce, 1 can crushed tomatoes, 1 tbsp italian seasoning, 1 tsp garlic salt, 1/2 a chopped onion, 3 cloves garlic, and 1 tsp brown sugar. Saute the onion & garlic in olive oil until soft, add everything else, and simmer about 45 mins. Sometimes I throw a little balsamic in there, also. It freezes well.

I am in a wierd muchie mood today and in my earlier shopping spree, I bought nothing salty! Gah!
Now, I must have salt! And I can't really leave the office, but I have this trail's end microwave popcorn hanging around, does anyone know if this is gluten-free?
It's the stuff Boy Scouts sell and the nutritional information is on the carton, which I don't have.
You know what the irony in all of this is? I work for the friggin' Boy Scouts
