Tommy, Can you drink tap water? For some reason, my stomach only tolerates fresh bottled water. When I say fresh, I mean less than a month in the bottle. I have no idea why that is, but sometimes I have to go on water searches because its hard to find fresh water. I was wondering if I was the only one who can only drink certain water. -Brian

I have noticed that every time that I eat something that is cross-contaminated with gluten, it does not taste as it should. For me, steak has a pasty taste if it has gluten on it, and hamburger has a spicy taste if it has gluten on it. I'm always too ignorant to pay attention to it, but afterwards I always get glutened. Wow I guess I was way off on this one. I didn't realize that it was such a common practice among celiacs to keep a gluten free home with non-celiacs. I don't know whether to think it was the meat or the recent remodeling. I have felt better after ceasing to eat it. I don't think I'm developing an intolerance to meat. Thanks for the help everyone. To answer some of your questions, I get my meat at a butcher shop, not a supermarket. The meat is sealed in plastic, so the butcher never touches it. I just buy it and cut it. I am very safe about cross contamination. I cook on my own gas grill which no one esle uses. I agree that it seems improbable that I would get glutened...

Mary, The only thing doctors seem to care about is giving meds. I used Enterolab and was very satisfied. My doctor was fixated on IBS and would have never figured out that I had celiac or was casein intolerant. Enterolab showed me exactly what was going on. Now that I know that I need to be gluten/casein-free, it seems much easier to get myself feeling... -
I would say the casein test and a strict diet are your best bet. Convenience isn't worth being sick. Plus you can have really good meals while sticking to a strict diet.

I've only been gluten free for less than a month, so I'm sure it will be a while before I notice a difference in getting sick. I thought I was getting glutened for the past few days, but it turns out I've just been sick. I hope the gluten/casein-free diet will kickstart my immune system again.
