Pineapple Upside Down Cake

I made this basic yellow cake recipe this morning and then added to it to make a peach and pineapple upside down cake!!

Gluten-Free Yellow Cake

Basic and easy, and very versatile. Layer with white or

chocolate frosting, strawberries and whipped cream, etc. Make

sure your baking powder is gluten-free. Makes 2 -8 or 9

inch layers (24 servings).

1 1/2 cups white rice flour

3/4 cup tapioca flour

1 teaspoon salt

1 teaspoon baking soda

3 teaspoons baking powder

1 teaspoon xanthan gum 4 eggs

1 1/4 cups white sugar

2/3 cup mayonnaise

1 cup milk

2 teaspoons gluten-free

vanilla extract

Directions

1 Preheat oven to 350 degrees F (175 degrees C). Grease

and rice flour two 8 or 9 inch round cake pans.

2 Mix the white rice flour, tapioca flour, salt, baking

soda, baking powder and xanthan gum together and set aside.

3 Mix the eggs, sugar, and mayonnaise until fluffy. Add

the flour mixture, milk and vanilla and mix well. Spread

batter into the prepared pans.

4 Bake at 350 degrees F (175 degrees C) for 25 minutes.

Cakes are done when they spring back when lightly touched or

when a toothpick inserted near the center comes out clean.

Let cool completely then frost, if desired

To make it pineapple or peach upside down cake:

I made mine into two 9 inch round pans and put this mixture into EACH pan.

2T Butter/margarine melted in the baking pan

1/2 C Brown Sugar

3 T Juice from the canned fruit

Line bottom of pan with pineapple rings or peach slices. Mix the juice and brown sugar together. Pour this over the fruit and butter. Pour the cake mix over the fruit /brown sugar/ butter. Bake as stated in the above recipe.

This was YUMMY!! Great while warm.

HI Jessica, Thanks so much for the recipe-I'd wondered if I'd EVER get to eat a Pineapple Upside Down Cake again!! I'm making one tomorrow! This said it was printed from Allrecipes: is this a site, book, or what? I'm very new at this and just enjoyed a Brownie (from the recipe section here) and it is so wonderful to have a baked item after Thanksgiving and Christmas with none. My family wasn't impressed with the Brownie but they'd all enjoyed their treats during the holidays.

hi here is a fantastic white chocolate cheese cake recipe

i made it for christmas day and it was so yummy i think i ate the whole thing myself

185gm crushed rice biscuits(make sure they are gluten free)

90gms butter, melted

500gms cream cheese, softened

400gms can sweetened condensed milk

200gms white chocolate(melts)

300ml carton cream

1 tbles gelatine

1/4C boiling water

100gms dark chocolate, melted

Method

1, Combine biscuit crumbs and butter, press into abase of 23 cm springform pan, refridgerate until firm.

2, Beat cream cheese and condensed milk until smooth, beat in white melts then beat in cream.

3, Combine gelatine and water, stir until disolved, beat geatine into cheesecake mixture spoon over crumb crust.

4, Swirl dark chocolate through cheesecake mixture, refridgerate until firm.

hope you enjoy this as much as i did :D

Thanks for posting your recipe. I love Cheesecake but thought that sweet condensed milk contained gluten. I DO HOPE I'm wrong! What brand do you use??

Do you have a recipe for a plain cheesecake? I wish they would make a Recipe section on this board like the one on the old board. It was so helpful!

Oh, the rice biscuits that you listed, is this like the RICE CHECKS Cereal?

hi there granny hope you enjoyed the cheese cake no sweetened condensed milk doesnt contain gluten i use carnation brand make sure you use coconut cookies though and they are gluten free nearly made that mistake myself

:o i am sitting here eating chocolate chip icecream i made myself not too good for the waist line but once in a while wont hurt

i have an ice cream machine for this

250ml light cream

300ml light milk

some vannilla essence

1/4 c sugar

mix all together and put in the machine and let it go melt some chocolate chips in the microwave and pore in at the last minute enjoy and yes you can have chocolate just make sure it plain

      When my wife attempted to open the online card in the store with a cashier, it would not work. We then showed the owner the link to the card, the online receipt that I got upon purchase, and even my bank statement confirming the purchase. That did not satisfy her, since she said she needed the link to open to reveal the gift ID num. They even admitted they had a systems problem around that time.

      Was the card itself lost or just the record or both?

      We were flabergasted that the owner would not acknowledge a $50 e-gift card I purchased for my celiac wife. My wife tried to open it in the store and was informed there had been a system change and they could not find the record. No worries, she was told, just talk to management. Six months later, and numerous absurd back and forths, and the owner literally informs me there have been "bad actors", so she can't make good on this lost gift card. In other words, she accused me of lying and committing fraud... over $50! Please be careful with your orders and purchases here.

      Yes, some people do get withdrawal from gluten but gluten withdrawal doesn't usually cause gut pain. Maybe more like general body aches and discomfort. We have articles on gluten withdrawal on this forum. You might do a search for them. Applesauce is very acidic and some brands have added vitamin C (ascorbic acid) which makes them more acidic. This can damage the stomach lining if you eat it too often. Especially if your stomach lining is already compromised. Ibuprofen inhibits the body's ability to rebuild the stomach's protective mucosal lining. That's why it can cause peptic ulcers. As strange as it may sound, low level irritation/inflammation stimulates the body to rebuild the stomach lining. There are two steps in this rebuilding process known as COX 1 and COX 2. Ibuprofen represses both COX 1 and COX 2. Celecoxcib, a prescription anti inflammatory, inhibits only COX 2, making it less likely to cause damage to the gut lining.

      Do you or anyone know alot about ibuprofen  I wasn't sure if I was eating too much apple sauce.   Something is making my pain so much worse  I'm referring to the intense pins and needles in my feet and lower legs.  Jaw actually has tardive dystonia and muscle spasms throughout my back Almost like an opposite effect that a pain reliever would do. I'm fairly new to this. Whatever is going on seems to be worsening  Do people get a withdrawal effect from gluten?  It's extremely painful 😖  I'll post that question or research on the site  Thank you everyone for responding
