Last night I had a bunch of friends over for dinner and needed a really easy and quick pasta dish. I didn't want to make separate meals for me, so I just made everything gluten-free. NOBODY COULD TELL! When I told them it was gluten-free, they were shocked! Made me feel so good! I really have to give it to Tinkyada for making such a great pasta though.

It's a really simple recipe - not really home made. Just quick and easy.

1 1/2 Bags of Tinkyada gluten-free Brown rice penne

Jar of gluten-free Marinara or other gluten-free red pasta sauce

1 can tomato sauce

1 can diced tomatoes

Additional Italian spice to your liking (BTO - basil, thyme, oregano)

1 lb. Browned Jimmy Dean HOT Breakfast Sausage

1 lb. Browned Ground Sirloin

3 cups mozzarella cheese

Boil pasta according to instructions and then drain. (I usually undercook it since this dish also goes in the oven.) In a large pot, separately, mix browned and drained meats (draining is very important or you will have a greasy mess) in a pot with gluten-free pasta sauce and 2 cups Mozzarella cheese. Mix into a 13 x 9 x 2 casserole dish. Top with remaining Mozzarella cheese. Bake at 350 degrees for 15 minutes with foil covering the dish. Remove foil and bake 10 - 15 more minutes or until cheese is melted and bubbly.

      Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

      Eating out in general is full of risks, but this article may help:

      This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

      I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
