Gluten free yeast

Bakers yeast is different then brewers yeast. I had to give up yeast around the time I gave up gluten, it made me bloat. Fletchmans yeast is Gluten free and you can find it in most stores. Open Original Shared Link

NOT all breads need yeast, I have run a bakery for years and we do not use yeast. Yeast is used as a leavening agent, and takes time and heat to ferment and produce air bubbles in the bread for rise. Alternatively you can use baking soda and a vinegar for the rise or baking powder. My bakery as always double downed on our breads, we use Ener-g baking soda sub to avoid the high sodium, and use 2 tsp of it, 2 tsp of baking powder (Heinz Feather Light) and 4 tsp of Apple Cider vinegar in a medium loaf or 8" cake and use lightly whipped egg whites, coconut flour for a base with psyllium husk for a binding agent instead of gums. This is our base blend and we double it for bread loafs often adding in herbs to off set the coconut and egg taste. In cakes we add in  butter flavored coconut oil for richness. And often use extracts for flavoring to avoid carbs (we do low carb breads). Heck we can even use caraway seeds in it to give it that "Rye Bread" like flavor and keep it gluten free. I will admit I did a funny thing throwing in a bit of cocoa powder once to give it that "Pumpernickel" bread look...but the flavor was not quite right. Was amusing test... and mishaps.

The above method of leavening is called Quick Breads as you do not have to proof them and let the yeast rise.

      Thank you for the advice. I’ve actually never checked for nutritional deficiencies, but for as long as I can remember, I’ve always taken vitamin and mineral supplements — otherwise my symptoms get worse. This week I stopped eating gluten to confirm whether my symptoms are really caused by it. Starting next week, I’ll reintroduce gluten — it’s sad to go back to how I was before — but at least I’ll be able to take the necessary tests properly. I think the diagnostic process will be long, but at least I’m happy that I finally decided to address this doubt I’ve had for years.
