Tomato paste or powder, usually contains wheat which is probably in the tomato sauce.
The brand that I use (Hunts-Wesson) is made by Conagra foods and they will clearly list gluten in their ingredient lists if present. I have never seen gluten listed in their tomato sauce.

Velvet Brownies

2/3 cup gluten-free flour mix

1/3 cup cocoa powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 egg whites

1 egg

3/4 cup sugar

6 tablepoons baby food pear or pea puree or unsweetened applesauce (I tried the recipe with pear puree).

2 tablespoons vegetable oil

1 1/2 teaspoons vanilla

Optional: 1 tablespoon chopped peacans, walnuts, or macadamia nutes.

Preheat oven to 350. Spray an 8"x8" pan with vegetable oil spray (I just used wax paper and olive oil). In a measuring cup, combine the flour mix, cocoa, cinnamon, and salt. In a mixing bowl, whisk the egg whites and egg slightly. Add the sugar, puree, oil, and vanilla and wisk until blended, but don't overbeat. Pour into the prepared pan and sprinkle on the nuts (if used). Bake until set and a tester comes out clean, about 25 minutes (I'd go a few minutues longer, like 27). Cool before cutting into 2" squares. Makes 16 brownies.

Just wanted to say that I made these to take to a church function for my gluten-free husband and son. The teenagers finished them off when they came in the room. (None of the teens at church are even familiar with a gluten-free diet) I always take it as a compliment when people who can eat gluten pig out on something gluten-free. I used unsweetened applesause for the recipe. The little 4oz snack cups you can buy for lunches are just the right amount. :) kendra

Thanks, I am still very shaken up from the whole thing. I am very nervous about eating now. I feel like food is poison right now.

I cut the beets raw to save a step in cooking. A food processor would work nicely :)

Chicken and Peach Salsa

1-2 cups of water

1 package of chicken cut up for a stir fry

5 peaches, diced

1 yellow pepper, diced

1 red onion, diced

2-3 cloves of garlic

cilantro leaves to taste

optional (1 Tablespoon fresh lime juice)

pepper to taste

Cook chicken, garlic, and 1/2 of the red onion in the water until the chicken is done. I like to let the meat sit in the juices for a while. Place all other ingredients including the other 1/2 of the red onion in a bowl. Mix cooked ingredients with uncooked ingredients. Serve.

This is actually quite good! I got this idea from the Paleo Diet book.

Here is a tasty and healthy cookie recipe to add to the list.

Peanut Butter Flax Cookies

Mix ahead: 1 tbsp flax and 3 tbsp hot water

½ c brown sugar

½ tsp vanilla

½ c peanut butter

1 c flax flour

¼ c rice flour

½ tsp baking soda

Set oven 350

Beat together flax mixture, sugar and vanilla. Add peanut butter and blend in.

Combine dry ingredients and then mix with wet.

Scoop 1 tbsp of mixture and roll into ball and place on nonstick baking sheet. Continue with remaining dough. Flatten with fork.

Bake ten minutes. Cool and remove to rack.

Makes 2 dozen cookies.

Those cookies look good! I have a few recipes that I made up:

Quick and Easy Stove Top Meatloaf

Extra lean hamburger

1/2 - 1 cup Heniz ketchup

1 onion, diced

2-3 cloves of garlic, minced

pepper

1 egg

Mix everything together in a wok, deep frying pan, or a large pot except ketchup. Add ketchup later on to allow moisture. Cook until done.

Yummy Steak

3-4 cups of water

3-4 1/2 inch steaks

1 onion, diced

2-3 cloves of garlic, minced

1/2 - 1 cup Heniz Chicken and Rib BBQ sauce or your favorite BBQ sauce

Cook steak, water, onion, and garlic in a wok or a large pot on high heat until the water is almost gone. Add BBQ sauce and cook for several minutes.

Here is a recipe that I made up last night:

Chicken Casserole

3 cups of water

3/4 - 1 cup of basmati rice

2-3 chicken breasts

1 onion

Mrs. Dash Original to taste

1/2 cup Heniz Chicken and Rib BBQ sauce or your favorite BBQ sauce

Cook chicken, onion, and spices in water in a wok or large pot on high for at least 10 minutes. Add rice and bbq sauce and cook until rice is done. If you have a wok, you may want to add some more BBQ sauce after the rice is done and sort of fry the rice and chicken. Enjoy.

Sweet Potato Casserole....YUMMO!!

You peel and boil 4-6 large sweet potatoes until tender. Drain water and add two teaspoons of cinnamon, 1/2 stick butter (or soy butter, vegan butter, etc..), and 1/4 cup brown suger. Blend all ingredients together, place in a baking dish, and bake at 350 degrees for 20 minutes. Sprinkle mini marshmallows over the top and bake for five minutes or watch for the tops of marshmallows to become golden brown.

Jambalaya

1 pakage cut up boneless chicken (bite size)

3 tablespooms olive oil

1 green pepper, diced

1 red pepper, diced

3 cloves of garlic, minced

1 can stewed tomatoes

3 cups chicken broth (or 3 cups of water and 2 McCormick brouillion cubes)

1.5 cups basmati rice

2-3 tablespoons of brown sugar

1/4 cup of white vinegar

2 teaspoons thyme

2 teaspoons oregano

1 teaspoon crushed red peppers (I used Mc Cormick)

1-2 teaspoons cayenne pepper

1-2 teaspoons crushed red chilis (I used Mc Cormick)

pepper and salt to taste

2 teaspoons parsely (optional)

2 teaspoons basil (optional)

1/2 teaspoon paprika (optional)

Cook chicken, oil, garlic, onion, green pepper, celery, and paprika in large wok or skillet until chicken is done. Add all other ingredients and cook until rice is cooked.

Another Jambalaya Recipe

2-3 boneless chicken breasts cut into bite size pieces

1.5-2 cups of uncooked basmatti rice

1 green pepper

1 red pepper

2 teaspoons oregano (or more)

2 teaspoons thyme (or more)

1/2 -1 teaspoon cayeene pepper

1/2 teaspoon dried red peppers (or more)

1 1/2 teapoons red chili (I use McCormick, but fresh red chili would be ok too)

1 McCormick brouillion cube (your choice in flavour)

1/2-3/4 cup of Heinz ketchup

1-2 cups of water

Optional: Parsley and basil

Cook chicken, water, broullion, peppers, and all spices in a wok or large pot. Cook rice separatley, sometimes I add a bit of cumin to the rice. Once everthing is done, mix together and add ketchup. Cook for a few minutes and then serve.

*You can add more or less spice according to your taste.

2-3 tablespoons of Earth Balance soy butter

I'm going to to try and remember what I did. I made this today and it was very yummy.

Rock Soup

Extra lean hambuger (1 smallish package)

about 7-8 cups of water

1/4 cup white vinegar

1/2 cup of rice

vegetables whatever you can find... This is what I found:

2 garlic cloves, minced

1 onion, diced

2-3 cups of baby carrots, bite size (or 2-3 large carrots)

3-4 celery sticks, diced

2 potatoes, bite size

5 green onions, diced

1 cup, frozen baby corn, bite size

spices hmmmm, I just sort of threw stuff in, so I will put down what I think will taste good:

1 teaspoon cayeene pepper

1-2 teaspoons tumeric

1/4-1/2 teaspoon cumin

1/4-1/2 teaspoon oregano

1 teaspoon crushed red peppers (or just add more cayeene pepper if you don't have this)

2 Mc Cormick Beef brouillion cubes (or substitute water with broth)

2 tablespoons brown sugar

salt and pepper to taste

1-2 teaspoons crushed red chilis (optional)

1/4 teaspoon garlic powder (optional)

Put hamburger, garlic, and onion in a large pot or wok and cook until hamburger is browned. Throw everything else in execpt rice and cook for a while. Add in rice, and cook until rice is done and vegetables are soft.

Chop chicken breast into bite size pieces or strips. Then chop up celerey, capsicum and poatato. Cook in a pan. At the pour some tomato paste or sauce over and stir through. If you use tomato paste I reccomend thining it down with a little a water it enhances the flavour.

You can also add garlic and onion if you want.

      I have osteopenia and have cracked three vertebrae.  Niacin is connected to osteoporosis!       Thank you so much for the clarification! Yes to these questions: Have you consulted dietician?  Have you been checked for nutritional deficiencies?  Osteoporosis? Thyroid? Anemia?  Do you take any supplements, or vitamins? I’m within healthy range for nutritional tests, thyroid and am not anemic. I do have osteopenia. I don’t take any medications, and the dietician was actually a nutritionist (not sure if that is the same thing) recommended by my physician at the time to better understand gluten free eating.    I almost wish the gluten exposure had triggered something, so at least I’d know what’s going on. So confusing!    Many thanks!

      @JudyLou,  I have dermatitis herpetiformis, too!  And...big drum roll... Niacin improves dermatitis herpetiformis!   Niacin is very important to skin health and intestinal health.   You're correct.  dermatitis herpetiformis usually occurs on extensor muscles, but dermatitis herpetiformis is also pressure sensitive, so blisters can form where clothing puts pressure on the skin. Elastic waist bands, bulky seams on clothing, watch bands, hats.  Rolled up sleeves or my purse hanging on my arm would make me break out on the insides of my elbows.  I have had a blister on my finger where my pen rested as I write.  Foods high in Iodine can cause an outbreak and exacerbate dermatitis herpetiformis. You've been on the gluten free diet for a long time.  Our gluten free diet can be low in vitamins and minerals, especially if processed gluten free foods are consumed.  Those aren't fortified with vitamins like gluten containing products are.  Have you consulted dietician?  Have you been checked for nutritional deficiencies?  Osteoporosis? Thyroid? Anemia?  Do you take any supplements, medicine, or vitamins? Niacin deficiency is connected to anemia.  Anemia can cause false negatives on tTg IgA tests.  A person can be on that borderline where symptoms wax and wane for years, surviving, but not thriving.  We have a higher metabolic need for more nutrients when we're sick or emotionally stressed which can deplete the small amount of vitamins we can store in our bodies and symptoms reappear.   Exposure to gluten (and casein in those sensitive to it) can cause an increased immune response and inflammation for months afterwards. The immune cells that make tTg IgA antibodies which are triggered today are going to live for about two years. During that time, inflammation is heightened.  Those immune cells only replicate when triggered.  If those immune cells don't get triggered again for about two years, they die without leaving any descendents programmed to trigger on gluten and casein.  The immune system forgets gluten and casein need to be attacked.  The Celiac genes turn off.  This is remission.    Some people in remission report being able to consume gluten again without consequence.   However, another triggering event can turn the Celiac genes on again.   Celiac genes are turned on by a triggering event (physical or emotional stress).  There's some evidence that thiamine insufficiency contributes to the turning on of autoimmune genes.  There is an increased biological need for thiamine when we are physically or emotionally stressed.  Thiamine cannot be stored for more than twenty-one days and may be depleted in as little as three during physical and emotional stresses. Mitochondria without sufficient thiamine become damaged and don't function properly.  This gets relayed to the genes and autoimmune disease genes turn on.  Thiamine and other B vitamins, minerals, and other nutrients are needed to replace the dysfunctional mitochondria and repair the damage to the body.   I recommend getting checked for vitamin and mineral deficiencies.  More than just Vitamin D and B12.  A gluten challenge would definitely be a stressor capable of precipitating further vitamin deficiencies and health consequences.   Best wishes!
