Enchilada (sp?) Recipe? Got One?

I need a good enchilada recipe....anyone know one? I am thinking cheese, corn, black beans, chopped onion, rice, all rolled up in a corn tortilla, and then some salsa on the outside....but I don't know if you need to let it sit for a while so the corn tortilla gets soft (soaks up the juice) or what kinda salsa is good to use. Any advice? Thanks!

I don't have any answers to your questions but would love to know as I want to use up some of mine too.

when using these i usually put between 2 damp paper towels and microwave 10 sec and then they are soft and pliable...

judy in philly PS I think some have been put up here mybe you can do a search if your and could 'spell' the word :lol: I suck at spelling.

Thanks Judy (me too :ph34r: ).

I will try the papertowel thingy, sounds good. I have some general ideas about ingredients, but just don't know about the details. I am SO not a cook. But my mom is flying in tomorrow for a week (to help me get ready for hubby coming home. I have soooooo much cleaning to do, and shopping, we are going to vegas, my husband, and I, for a week for our 4th anna!!)and I wanted to make my mom something yummy, but safe for me to eat. I await the good cooks' on here...... :unsure:

(about being up...yeah...went to be around 12:30 for maybe 2 hours...bad nightmare....been up since)

Here is 2 different ways that I make enchiladas:

First one is like a caserole:

Layer bottom of pan (sprayed with pam) with tortillas, rip some apart to cover whole bottom of 9x13

Next put layer of sauce

layer of meat

layer of cheese (I prefer velveeta)

top with another layer of tortillas

repeat layers until you are either out of room in pan or out of ingredients top with more cheese!! mmmm

then bake for maybe an hour or so at about 350 or 375 to melt all the cheese

2nd recipe:

pour a small amount of enchilada sauce into a 9x13 pan cover bottom of pan, but do not have tons of excess

get out a large plate pour some enchilada sauce onto the plate

dip tortilla into sauce coat both sides of tortilla, fill with meat and cheese roll and put into a 9x13 baking pan

continue this process until you have a full pan

pour remaining sauce over enchiladas and top with more cheese

bake at 350-375 until cheese is melted (maybe 30min or so)

I usually make my own enchilada sauce:

2 sm. cans tomato sauce (I use contadina)

Tablespoon oil

2 T. chili powder

1c water or chicken broth

1tsp garlic powder

2T corn starch

1C water

In a saucepan I put in the oil and chili powder. Keep stirring it because it will burn if you don't. This gets out the oils and flavors in the seasoning. THEN add in your water or broth. and bring to a boil. Disolve your cornstarch into the 2nd cup of water add this and also the garlic salt. Keep stirring and it will thicken.

Easy as can be to make!!

Enchiladas

3 (8 ounce) cans tomato sauce

1 Tbsp chili powder

2 tsp onion powder

1/4 tsp oregano

1/2 tsp salt

16 ounce mild cheddar cheese, grated

12 corn tortillas

1/4 cup oil

Mix tomato sauce with seasonings. Pour 1 cup of sauce over the bottom of a 9x13-inch baking dish.

Pour the rest of the sauce into a shallow bowl.

In a frying pan with hot oil, heat both sides of each tortilla to soften.

Take one tortilla. Dip both sides into the bowl of tomato sauce. Then set the tortilla on a plate. Fill the tortilla with 1/4 cup grated cheese, roll and place seam side down in the baking dish. Repeat procedure with the other tortillas.

Pour remaining sauce over rolled tortillas. Top with remaining 1 cup of grated cheese. Bake at 350 F for 15 to 20 minutes until cheese bubbles.

Makes 12 enchiladas.

Beef or Bean Enchiladas:

Replace cheese filling with cooked shredded beef and/or refried beans.

Well, well, well, truth be told.....DO YOU THINK THIS MIGHT BE ADDING TO YOUR STRESS AND ANXIETY :lol::blink::o:unsure:;):lol:

I'd be stressed to gills and boy when i get stressed and gt'n 'you all better watch out' even may cat avoids me... :lol:

have a wonderful time with mom so happy about hubby coming home... :)

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
