Baking A Cake - 123 Gluten Free ?

Dietcokehead Rookie

Hi all! I am baking a cake for my son's 5th b-day tomorrow. I found a cake mix that is 123 Gluten Free Chocolate Pound Cake Mix. Looks pretty simple but the directions call for it to be baked in a bundt cake pan. I know my son will reject the bundt idea, he wants a "regular" rectangular cake. Any ideas if I can just make it in a 9 x 13 pan instead??

THANKS!

Annie

I don't know if you have enough time to find the product, but I use a chocolate cake mix from Cherry Brook Kitchen. Open Original Shared Link

NOTE Make sure you check out the Gluten/Wheat free kind!!!!!

I buy them at Giant Eagle, a grocery chain in the midwest.

Other then that I've yet to find a good chocolate cake. I had a great one that didn't need eggs, milk, nuts BUT when I had to eliminate wheat, out went that recipe!!!

They sell Cherry Brook stuff at Whole Foods! It's great. So is there frosting. I didn't think they had gluten-free cakes, though.

In general, a cake that will bake in a bundt pan will do just fine in a 13 by 9 rectangular pan. I would start checking on it after 25 minutes or so.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
