Are These Foods Okay To Eat?

My Mother was diagnosed with this disease a few weeks ago, and I'm trying

to help her determine what she can and can't eat. She love's to eat popcorn

but is not sure if it is allowed on the diet. Is microwavable popcorn okay?

Also, is shrimp okay, the ready-to-eat store bought variety?

Some of the books that I've looked at concerning the diet are rather

confusing and seem to contradict one another. Can you recommend

a really good book that covers the subject completely?

Thanks in advance, and forgive my ignorance --- I'm kind of caught

in the middle of this thing and still have a lot to learn.

There is another post here (maybe someone can help me find it?) that has a list of gluten free mainstream foods in a pdf file. I downloaded it to my palm and take it with me when I go shopping. It has helped alot.

To answer your specific questions, yes most pop corn is ok (Pop Secret), fresh or frozen shrimp is ok, just check the seasonings you may add to it and the cocktail sauce.

As for the shrimp seasonings -- I checked and Old Bay is okay (made by McCormicks) and of course you can easily make homemade cocktail sauce with Heinz ketchup, Lea & Perrins worchestershire, lemon juice (fresh preferably - or ReaLemon is gluten-free) and tons of horseradish if you're game for that! In my opinion, the more the better! :) We never buy sauce.

All Act II popcorn is also gluten-free. don't know if you have it in your area though.

The Celiac Sprue Association's gluten free product listing is another good reference for the names of manufacturers of gluten-free products. It lists the popcorns and all sorts of things from A-Z.

      Many people with celiac disease, especially those who are in the 0-2 year range of their recovery, have additional food intolerance issues which could be temporary. To figure this out you may need to keep a food diary and do an elimination diet over a few months. Some common food intolerance issues are dairy/casein, eggs, corn, oats, and soy. The good news is that after your gut heals (for most people who are 100% gluten-free this will take several months to two years) you may be able to slowly add some these items back into your diet after the damaged villi heal. This article may be helpful:

      It's strange to see two very different results in what appears to be a single blood test--one is positive and one is negative for a celiac disease test. Are these results separated by time? This article might be helpful. It breaks down each type of test, and what a positive results means in terms of the probability that you might have celiac disease. One test that always needs to be done is the IgA Levels/Deficiency Test (often called "Total IGA") because some people are naturally IGA deficient, and if this is the case, then certain blood tests for celiac disease might be false-negative, and other types of tests need to be done to make an accurate diagnosis. The article includes the "Mayo Clinic Protocol," which is the best overall protocol for results to be ~98% accurate.

      You can search this site for prescriptions medications, but will need to know the manufacturer/maker if there is more than one, especially if you use a generic version of the medication: To see the ingredients you will need to click on the correct version of the medication and maker in the results, then scroll down to "Ingredients and Appearance" and click it, and then look at "Inactive Ingredients," as any gluten ingredients would likely appear there, rather than in the Active Ingredients area. https://dailymed.nlm.nih.gov/dailymed/
