Substitute For Cream Of Chicken Soup?

As the holidays approach I feel a craving for some of the dishes we used to make that also contain cream of chicken soup. Does anyone know a good way to substitute, where to buy gluten-free Cream of chicken, OR how to make your own? I am open to any option.

Thanks!

Here is a link to the site where I got my cream of anything recipe. It is fairly easy and has the same consisitency as the can.

I eat Health Valley cream of chicken soup regularly and haven't had any problems. It's organic and all ingredients are clearly listed. I usually get it at Wild Oats or Whole Foods.

I use the Lipton Cup -a-Soup Cream of Chicken packets. I use 2 packets to about 1 cup of water for every one can of condensed cream of chicken soup in a recipe. Works great!

There is also a recipe in one of the Bettye Hagman books. Its in The Gluten-Free Gourmet Cooks Comfort Foods. You can also use it to make mushroom soup, tomato soup and cream sauce and cheese sauce for veggies.

Yes, @trents is right, ascorbic acid can be irritating.  Do you take it with food? Do you take other supplements or vitamins? Do you eat processed meats?   Is your diet high in carbohydrates?

Be careful with C supplementation. It's ascorbic "acid". Too much can cause stomach and gut irritation.
